Slowly crumble the blue cheese with your hand and add it to the cream. Cheese dissolves quite well in cream, and makes them thicker. When the cheese is completely dissolved, salt the sauce, add a pinch nutmeg and just a little bit of freshly ground black pepper. Let the sauce simmer on the lowest heat for 5-7 minutes. Be sure to stir so it doesn't burn.

Retreat. The amount of cream and cheese for the sauce is very conditional. If you want a thick sauce, then the amount of cream must be reduced or the amount of cheese increased. But do not use a thickener - such as starch or flour. They are completely redundant. By combining the ratio of cream and cheese, you can always get any density. Pour the finished sauce into a gravy boat or just a bowl. Cover with a napkin and let it stand. In the meantime, fry the chicken.

Heat up in a frying pan olive oil. Allow the oil to heat up until a light white smoke appears and the oil begins to crackle. Immediately put the pieces of prepared fillet into the oil, first rolling them in flour.

Fry chicken pieces in oil until golden brown. Reduce the heat and cover the skillet with a lid. Let the chicken pieces simmer for about 10 minutes. During this time, the chicken will be fully cooked.

Lay out the pieces fried fillet on a plate. Drizzle with warm sauce and garnish with herbs, if desired.

Serve hot chicken with sauce. I don't think a reheated dish will taste good. However, we did not try. I think that such a sauce would be quite appropriate for fried fish. For example, try sautéing pollock or cod fillets and drizzling with blue cheese cream sauce.

Pour milk or cream into the pan in which the chicken was fried. I often cook with milk, so that the sauce is lighter. Immediately add the Italian herb mixture, salt and pepper. I had a couple of teaspoons of truffle paste left, I also put them in the sauce. If you don't have an Italian herb mix, you can simply add dried basil and oregano.

Bring the mixture to a boil and add the grated Parmesan. I usually buy already grated cheese to save time. It remains to wait until the cheese is melted and the sauce is ready. Yes, yes, it's that simple!

Put the fried chicken in the sauce, mix and simmer under the lid for 10 minutes. Don't overcook the chicken breast in the pan, as it can become tough.
