  • When the infusion time has expired, the mass must be filtered. This is done as efficiently as possible, carefully squeezing the flowers. Otherwise, the volume of jam will simply decrease.
  • Then re-boiling is carried out. As soon as the liquid boils, sugar is immediately added to it and boiled for another 20 minutes.
  • Before the end, the juice of half a lemon is poured into it. After that, the color of the jam becomes amber, saturated. If there is no lemon on hand, you can replace it with citric acid.

Lemon should be cut into quarters, and then each quarter also into thin slices. After boiling, the lemon will become transparent and will look very beautiful in amber-colored jam. We put the contents of the jar in enamel pan and pour a liter of boiling water. There we also add lemon, grated or chopped in a blender. We insist one day. Then strain the contents of the pan, squeeze the petals and discard (they have already given all the useful substances to the future jam). Place over low heat and simmer for about 10 minutes, stirring constantly. jam can be considered ready as soon as the sugar dissolves.

For those who are afraid of losing even a small part of the vitamins during the heat treatment of dandelions, there is a way not to boil them. Prepare the inflorescences, wash, put in a saucepan and sprinkle with sugar. In this case, more sugar will be needed.

For 400 flowers, you need to put about two kilograms of granulated sugar. Mix well and leave to brew for a day. Squeeze out the flowers and discard. The resulting syrup is the healing potion that we wanted to get. It should be poured into sterilized jars and rolled up. Keep refrigerated.

Summer... This is the time when all the most interesting and beautiful things happen in our lives. It is with this season that many holidays, vacations, vacations, and active recreation are associated.

We love summer since childhood, when the trees were still big, the street on which we lived seemed endless, and our friends were the most faithful and for life.

Perhaps each of us remembers those moments with special warmth and awe, those long days of cycling, delicious berries, dandelion fields. How you want to collect all this warmth in a small jar, close and open on cold winter evenings, filled with the warmth of childhood and the sweetness of summer.

Ray Bradbury breathed life into the memories of every reader with his work "Dandelion Wine", allowing you to drink that kindness and naivety sip by sip. We will also try to do this. No, no, we will not write a novel, we will make it easier, we will make jam from this sunny flower!

I think everyone has heard of such an unusual dessert, but had little idea what it was. So, I declare with confidence that it is not at all difficult to prepare such a treat and medicine at the same time. But you will get not just an ordinary delicacy, but a radiant dessert filled with sunlight, fragrant in summer.

By the way, it tastes very similar to honey, which is why it is often called dandelion honey. There are a lot of recipes for such a delicacy, and we will share with you the most popular of them.

The first thing to know is that not all flowers are suitable for making this sweet. Of course, after reading the article, it will be difficult to resist and not run out into the yard, tearing off all of them, next to the entrance and at the sidewalk.

But these flowers will not suit us. They absorb all substances and toxins from the earth, so these yellow little “suns” can be both useful and harmful if they are not properly collected.

Dandelions need to be collected from forest or field, away from roads and highways, where there are no factories and processing centers. Even a city park is not suitable for this, because the land in it is still gassed. Go to the nearest forest, find a yellow clearing and, enjoying the process, collect the ingredients for your delicacy!

It is advisable to go for flowers early in the morning. It is at this time that they are the sweetest, filled with dew and the taste of nectar. By the way, for the same reason, it is better not to go into the forest after the rain - all the nectar, and with it the taste will be washed away ...

It is necessary to pluck the inflorescences themselves, we will not need the legs. You also need to consider that it is better to collect adult plants.

The photo clearly shows the difference: adult flowers have a thick stem and a dense, dense inflorescence. Young ones are distinguished by a thin stem and small flowers. They do not have much "juice" and nutrients, so we will leave them to grow until better times.

Amber jam from 400 dandelions

Why exactly 400, you ask? To be honest, I never found an answer to this question, although I also asked myself. But, studying the information, I came to the conclusion that it is precisely this number of amber flowers that is enough to enjoy a treat, and that it is still left for later.

If you are still in doubt whether to cook it or not, you can take a smaller amount.

So, we need:

  • 400 dandelions
  • sugar 1 kg
  • water 4 cups
  • lemon 1 piece

Cooking:

1. First of all, after collecting the flowers, they should be washed well with cool water to remove dust and small insects.

It is better to do this not under the tap, but in a basin so that the petals are completely buried in the water. Then the insects themselves will begin to crawl out of the core. And the dust and earth will be freely washed away from each of them.

3. The next step is to separate the flower bed from the petals themselves. We put the raw materials prepared in this way into a saucepan prepared in advance.

4. When all of them are in the container, fill them with water and put on a slow fire for about an hour and a half.

5. After the allotted time, we throw the flowers into a colander or sieve, let all the liquid drain, and squeeze them properly to squeeze it all out. However, you can not be especially zealous, if you overdo it, then the broth will turn out with excessive bitterness, which not everyone likes.

The petals are no longer useful to us, they can be thrown away. We will work with the decoction itself.

6. Lemon can be cut into cubes, or grated. Add it to the flower hot liquid. If you wish, you can do without it. But adding flavor and light sourness in this case will not be superfluous.

7. Pour sugar there, mix and put the future delicacy on fire. Next is a matter of taste. Who loves thick jam, can keep it on fire for an hour and a half, who likes it thinner - half an hour is enough.

The less it cooks, the more useful substances will remain in it.

The meal is ready! You can enjoy its taste and eat with pleasure!

How to cook jam according to a simple recipe with lemon

This cooking option is insanely delicious, because in addition to the floral taste, lemon sourness is added here, which makes our “honey” even more fragrant and tastier.

Although we added lemon in the first version, this delicacy turns out to be completely different in taste.

Ingredients:

  • 150 dandelions
  • sugar 500 gr
  • half a lemon
  • water 500 ml

Cooking:

1. First of all, we separate the inflorescences from the greens and wash the petals properly. Then we lay them out on a towel so that the water is glass.

2. Pour half a liter of water into the pan and pour our workpiece into it. I would like to note that in almost any cooking option, the proportions of sugar and the main ingredient should be one to one.

But in our case, gaining a pound of petals is almost impossible, and it is not necessary! Therefore, we take as a basis water in which small "suns" will be boiled. So it turns out, 500 ml per 500 gr.

3. Bring the broth to a boil and boil for about 20 minutes.

4. When the water acquires a golden hue, we decant it, and squeeze the flowers and throw them away, they will no longer be useful to us.

5. Add sugar and chopped lemon, previously peeled, to the water. Who doesn't love large pieces, you can grind citrus in a blender or meat grinder, or grate.

6. Boil the finished mixture for about one and a half to two hours, until the state of viscosity.

7. Cool the treat and pour it into jars. When cold, this is real flower honey! The same viscous, thick and tasty.

Be sure to cook it, you will definitely like it!

We cook dandelion flower honey without lemon and other additives

As we have said, there are a lot of recipes for preparing a solar treat. And, although the ingredients for all options are about the same, the result is always different.

And the whole secret is how many of them we add, how much we cook and in what state we have the main component. The next recipe is the preparation of sweets without lemon and without any other aromatic additives.

Ingredients:

  • 400 dandelions without legs
  • sugar 1 kg
  • water 1 l

Cooking:

1. Separate the legs from the flowers, if you collected them with them.

2. We wash the flowers with cold water, place them in a deep bowl and fill them with fresh water. Leave for about an hour so that all the bitterness comes out.

3. After this time, drain all the liquid, add sugar and fresh water, and mix thoroughly.

4. Leave the mass for about half an hour so that the inflorescences are saturated with sugar.

During this time, almost all of the sugar will melt.

You can cook longer, in which case the delicacy will turn out to be thicker and more viscous. But in this case, more vitamins will be lost. Therefore, we choose the benefit, and do not cook for more than the proposed time.

6. After that, the liquid must be cooled and filtered. It will be quite dark, don't worry. We boiled the plant along with herbs, so this color is quite normal. It is also very useful and tasty.

7. After we have strained the juice, we put it on the fire again, and, stirring, cook for about an hour and a half, until it thickens.

8. Before pouring the jam, it must be cooled, and the jars should be washed properly.

Let it brew for a day, and you can try it with tea.

Delicious recipe with citric acid

Sometimes it happens that you want to cook something specific, but there are no suitable ingredients at home. And, let's say, in the store too. Well, or, as in our case, you may simply not like the taste of lemon.

Then citric acid is a perfect replacement. And next recipe- with her.

Ingredients:

  • 400 dandelions
  • water 0.5 liters
  • sugar 1 kg
  • citric acid 1 tsp

Cooking:

1. We collect inflorescences. We get rid of the legs, or we immediately collect some flowers. We wash them and fill them with cold water.

2. Leave for a day so that all the bitterness comes out. So that the raw materials do not deteriorate and begin to ferment, it is better not to leave the dishes warm, but to choose a cool, preferably ventilated place.

2. We wash the infused flowers, add water, citric acid and put on fire for about 15 minutes.

4. Pour sugar into the finished broth, mix.

Cook over low heat until thickened, stirring occasionally to prevent burning.

When hot, this is quite difficult to understand, so you can use the following trick - put one drop of jam from the saucepan on a plate, let it cool for a couple of minutes and let this drop drain. What is the density - it will be perfectly visible!

How to make jam with orange juice and zest

Another interesting option cooking is a delicacy of dandelions with orange. It turns out about the same as with lemon, but, as you can probably already guess, the taste comes out not so sour, but more multifaceted and interesting.

To avoid jam with oranges, be sure to follow the proportions!

Ingredients:

  • dandelions - three-liter jar
  • oranges - 3 pcs
  • sugar - 3 kg

Cooking:

1. Without washing the flowers, cut off the petals from the flower bed with scissors. That is, simply put, we cut off only the yellow part of the flower. And the green part, with the fluff preserved in it, from which the seeds will subsequently appear, we leave, but do not throw it away.

We do not wash them because all the nectar, pollen, which remains on the fingers during collection, is washed off. The most delicious and useful ingredient.

We put everything in different bowls. We use as a measure liter jar. This is necessary in order to subsequently know how much water to add. After these manipulations, approximately 1 liter of petals and two liters of greenery are obtained. That is, we will need 3 liters of liquid, and 3 kg of sugar.

2. Pour two liters of water into the pan and pour those same green flower bases into it. You can, of course, do without them, but why throw away such a storehouse of vitamins? We put the pan on the fire and wait until the water boils. After that, reduce the heat and leave for about 30 minutes.

The broth should languish, not boil. This procedure will preserve the maximum of vitamins.

3. While the broth ripens, we cook orange peel. You can rub it on a grater, or with a special knife for zest. It should be noted that a lot of it is not needed. Zest from one and a half oranges is enough, it has a very bright taste and can overpower the taste of dandelion.

Use only the orange part of the fruit. The white part is bitter, and we already have enough bitterness here.

4. Next, squeeze the juice from these oranges, and one more. The proportions of the ingredients are such that for each liter jar of the main raw materials we need a liter of liquid, and one orange. You can squeeze the juice with a juicer, you can use your hands. Most importantly, make sure that the bones do not fall. They will be very inappropriate in dessert if they happen to be there.

5. In the meantime, a decoction is prepared from the green part of the flower. It will turn out to be a rather dark green color. But don't let that scare you, we still have yellow petals that will make the color more beautiful and more noble.

We filter it through a sieve and add the petals prepared in advance.

Pour in the squeezed orange juice and zest.

Then add water. The number of milliliters depends on how much you got orange juice. The total volume of the poured liquid together with it should be one liter.

So, if the juice turned out to be 300 ml, then 700 ml of water must be added.

6. We put the pan on the most minimal fire, not allowing the contents to boil. In this state, he should languish for about half an hour. The result should be almost dissolved, soft dandelion petals in a slightly viscous and sweet liquid.

The jam will turn out with this performance rather watery, but full of vitamins. If desired, it can be boiled down to the desired consistency. Someone cooks an hour, and someone longer.

One more nuance: if you want to get it without petals, you need to strain it. And if you want, you can leave them.

In an opaque cup it seems completely dark, on a flat saucer it is together with the petals, and in a transparent vase it is strained.

Fragrant delicacy, smelling of flowers and orange, will not leave anyone indifferent!

Video on how to cook a delicacy with flowers and honey without heat treatment

While I was preparing the article, I was also looking at new ways of preparing our today's delicacy. And I found this one interesting recipe, where the author offers 100% healthy recipe where absolutely all vitamins and useful microelements are stored.

And all because the treat is not boiled, it is harvested together with natural honey, which makes it even more tasty and healthy.

So, if you like this recipe, take it into service. By the way, jam prepared in this way is not only delicious treat but also a useful remedy for many ailments.

And if you take it three times a day for a teaspoon, you can heal from flu and colds, as well as improve well-being and increase immunity.

The benefits and harms of jam

Like any other product, this dandelion jam can be both beneficial and harmful. More about this.

First, let's talk about how useful it is. The gifts of the forest are most often useful, we have long known this. Many flowers and root crops, berries and herbs are used by people in the form of decoctions. But it is precisely the dandelion that is usually bypassed. It seems that he is just a flower, beautiful, but very bitter in taste. And here it is not.

In a word, you will not find a more universal and magical remedy. But every medal has a downside.

  • First of all, do not forget that any sweets are sugar. And therefore, it is highly discouraged to consume it in large quantities, especially if there are any diseases. A spoonful in the morning and evening - and then the therapeutic effect will become noticeable over time.
  • If you are sensitive to iodine, you should refrain from using this product because of the high content of this element in it.

Otherwise, this jam is very useful! The main thing is that there should be a measure in everything, then any tea party will be a joy!

And in conclusion, I would like to say that this is one of the very first spring sweet delicacies. Although it is slightly bitter in taste, it turns out fragrant, refined and somehow mysterious. Like the wine that the famous American writer Ray Bradbury wrote about.

Wishing you all the best and happy drinking!
