Cooking steps

    We wash the liver under cold water and cut into small pieces for easy grinding in a blender. Peel and cut into quarters one onion.

    Put all the ingredients at once or in portions into a blender bowl and grind.

    Pour the prepared mixture into a deep bowl and mix until smooth.

    Break 3 eggs into a bowl with chopped liver and onions, mix the ingredients.

    Pour the flour into a bowl in portions, add water and milk, then mix the ingredients so that there are no lumps left.

    Salt and pepper the liver to taste.

    As the basis of the cake, we will use liver pancakes. Therefore, we heat the pan and bake pancakes from the whole mass. Tip: pouring part of the mixture into the pan, level the pancake with a wooden spatula over the entire area of ​​\u200b\u200bthe pan.

    Set aside the finished pancakes for now.

    The remaining onion is peeled and finely chopped, 1-2 carrots are peeled and rubbed on a coarse grater. Fry ingredients for vegetable oil until golden brown.

    Let's prepare all the ingredients for creating a liver cake. Mix part of all available mayonnaise with garlic crushed or squeezed through a press: we will grease pancakes with this sauce.

    We cover the first pancake with mayonnaise sauce as shown in the photo.

    We cover the sauce with the second pancake from the liver, and put the fried onions and carrots on top of it.

    We repeat this sequence with all the pancakes we have.

    Boil the remaining eggs and separate the yolk from the protein. Grate the yolk separately.

    Protein can be grated or chopped with a knife.

    We cover the sides of the cake with protein, and cover the top with chopped yolk.

    We wash the cucumber and cut it very thinly with a special knife.

    Boil large carrots and cut into thin rings.

    We form neat roses from circles.

    You can fasten roses with toothpicks.

    We make leaves from cucumber slices.

    We connect decorative roses and leaves with each other with toothpicks.

    The remaining mayonnaise is used to decorate the cake.

    We complete the decoration of the liver cake with parsley leaves.

The New Year and Christmas holidays are not over yet, and for those who love liver dishes, I offer a recipe for an excellent snack cake. Liver cake made from beef liver turns out to be tasty, satisfying and looks beautiful on the festive table.

for pancakes:

  • 600 g beef liver
  • 3 raw eggs(in the photo 2, but you need 3)
  • 2 tbsp. l. flour
  • 150 ml milk
  • salt, pepper to taste
  • vegetable oil for frying

for the layer:

  • 1 large onion
  • 1 large carrot
  • 2 garlic cloves
  • 150 g mayonnaise or 75 g mayonnaise + 75 g thick natural yoghurt
  • vegetable oil

for decoration:

  • handful of walnuts
  • greens

Cooking method:

First, let's prepare the dough for liver pancakes, from which we will collect the cake.

My beef liver, cut into small pieces and scroll twice in a meat grinder.

Beat 3 eggs well with a whisk.

Mix with a mixer (preferably) or a large whisk the liver, eggs, 2 tbsp. l. flour, 150 ml of milk, salt and pepper to taste. Dough for liver pancakes is ready.

Now, in a small frying pan in vegetable oil, we will bake thin (if possible) pancakes, turning them over with a wide spatula, the widest one you can find.

I got 5 pancakes with a small appendage, which I also fried and ate with pleasure. By the way, I checked the pancakes for salt, a little undersalted, which means I’ll salt the filling. If I had salted it, I would not have salted the filling at all.

Let's prepare a layer for a liver cake. We clean and finely chop the onion, and three carrots on a fine grater. Then sauté the onion in vegetable oil until translucent.

Add carrots and continue to fry over low heat until the carrots are soft.

Add the garlic passed through the press to the mayonnaise. Mayonnaise, by the way, you can quickly cook yourself, much tastier and healthier than store-bought. See the recipe here. Half of the mayonnaise can be replaced with natural yogurt, it will turn out no less tasty and not so greasy.

Mix onions with carrots and mayonnaise with garlic. I add a little salt, because I didn’t salt the pancakes.

Each pancake, except for the top one, is generously greased with the filling. The top one is just mayonnaise.

Here we have such a cute beef liver cake.

For decoration we will use walnuts. First, lightly fry them in a dry frying pan, stirring constantly.

Grind the cooled nuts with a knife, approximately as in the picture.

Sprinkle the top and sides of the cake smeared with mayonnaise with nuts, decorate a little with herbs.

This time I made not a sweet cake, but a beef liver snack cake with carrots and onions. AT holidays you always want to eat something unusual, tasty, and surprise your guests. I got the recipe from my mother from Soviet times, recorded in a culinary notebook.

For liver pancakes - cakes:

  • Beef liver (pork) - 600 g
  • Vegetable oil - 1 tbsp. lies.
  • Eggs - 4 pcs.
  • Milk - 500 ml
  • Flour - 200 g (1.5 cups)
  • Butter (spread, margarine) - 100 g
  • Salt, ground pepper- taste

For filling:

  • Onion - 2 pcs.
  • Carrots - 2 pcs.
  • Mayonnaise - 300 ml or make your own at home
  • Garlic - 2 cloves
  • Vegetable oil - 50 ml

How to make liver cake

If you think what to cook snack cake long, you are wrong. If you do not take pictures of each stage and do not run to wash your hands, then the whole process will take about 40 minutes. It is advisable to prepare all products in advance. I, as always, will tell you in detail how to cook a liver cake.

Which liver to choose?

It is better to choose beef liver, or rather, veal. Calf's liver is lighter in color and will taste much more tender. You can use any other (pork, chicken, goose), but now I will focus on beef.

So we take required amount according to the recipe, wash, clean from veins and films. First, it is better to get rid of the film. The film is easily peeled off by dropping a piece of liver into hot water(but not boiling water!), after two minutes, get it, pry off the edge with a knife and pull it off. If you do not remove the veins and the film, then the cake will be bitter, and grains will come across.

Cut into cubes and chop. Choose the method of grinding yourself, in the old fashioned way I scrolled through a meat grinder twice. But you can also use a blender, the main thing is to get a homogeneous puree without lumps.


Melt butter and cool to room temperature.

Beat eggs with milk, pour in butter,

then mix with pureed liver.


Salt and pepper to taste and add a tablespoon of vegetable oil.

Now you can add flour. Add flour in portions, first one glass, and then look at the consistency, add one tablespoon so that it is not very thick and you can cook pancakes. I got 1.5 cups, so this amount was indicated in the recipe.


Fry liver pancakes in a hot pan, you can use pancake. Lubricate with vegetable oil before the first cake. Pour with a ladle and spread over the surface of the pan, as well as regular pancakes, but don't make them very thin.

Fry on both sides over medium heat, so in the middle the cakes are well baked. From this amount of ingredients, 8 cakes should be obtained.


Set the cakes aside, they should cool. If you grease the cakes with hot, then all the mayonnaise will float, and the cake may warp.

During this time, you can prepare the filling and, if necessary, your own homemade mayonnaise. More better stuffing prepare in advance.

To prepare the filling, cut the onion into small cubes.
and sauté in vegetable oil until transparent.

Put the carrots grated on a coarse grater to the onion and stir constantly. You can add a little water, close the lid and simmer for ten minutes.


Now it's time to collect our beef liver cake in layers: grease the first liver cake with mayonnaise,

put a layer of onion and carrot filling on it and continue like this until the components run out.


Top the whole cake and around the edges with mayonnaise and decorate the top as you like.


For decoration, you can boil one hard-boiled egg - grind the protein separately from the yolk, sprinkle the edges with the protein, and the yolk on top. You can also make razochki from tomatoes, flowers from boiled carrots, or just sprinkle with finely chopped greens.

What do we need to prepare a meal?

  • 4 medium sized carrots;
  • Vegetable oil;
  • 3-4 cloves of garlic;
  • A small pack of mayonnaise (grams 200-250);
  • Salt and pepper also to taste.

Cooking liver cakes


Put the finished pancake on a plate.

Filling preparation

  1. We cut onions;
  2. Three carrots on a coarse grater;
  3. Heat up a frying pan, add the onion, fry a little, then add carrots to it. Fry until fully cooked.
  4. In a separate bowl, mix mayonnaise with pre-squeezed garlic. You can add the amount of garlic as you wish. If you like spicier dishes, give yourself a couple more cloves. If not, then reduce the amount.

Let's start assembling the cake and decorating it


The liver goes well with any vegetable, so if you do not like carrots, you can use champignon mushrooms instead. For the same amount of test you will need somewhere 200-250 grams of mushrooms. You need to pre-fry them until half cooked, and only then add the onions. The rest of the cooking scheme remains unchanged.

Beef liver cake is made from ground meat. Therefore, we pass all the liver that we have through a meat grinder:

The big advantage of this recipe is that you do not need to remove the film and veins from the liver - everything will twist in a meat grinder and will not cause any discomfort when eaten. Add eggs, salt, pepper and flour to the ground liver and knead homogeneous minced meat.

Now, with a tablespoon, lay out the minced liver in a heated frying pan of small diameter (in a small frying pan it will be more convenient to turn our liver pancake). We fry it on one side until it changes its color and carefully, using a large spatula, turn the pancake over to the second side and also fry until the color changes.

It is not necessary to fry the liver for a long time - just so that it changes its color. And we do this procedure with all minced meat. As a rule, 3-4 full-fledged liver pancakes come out of such a quantity of products.

When all the pancakes are overcooked, put them aside, let them cool down. In the meantime, we are making carrot-onion frying, with which we will lay layers of beef liver cake. To do this, fry together grated carrots and onions cut into quarters.

When the frying is ready, take the first liver pancake, put it on a plate and coat the pancake with mayonnaise. On top of the smeared pancake, put the frying of onions and carrots:

We close everything with the second pancake and with the second pancake we perform the same operation - mayonnaise - frying. And so on, until all the pancakes run out.

Well, decorate the top pancake at your own discretion, as far as your own imagination is enough. You can just sprinkle with chopped herbs, or you can build a whole garden from the appropriate products.
