Cooking steps

    As the basis of the cake, we will use liver pancakes. Therefore, we heat the pan and bake pancakes from the whole mass. Tip: pouring part of the mixture into the pan, level the pancake with a wooden spatula over the entire area of ​​\u200b\u200bthe pan.

    Set aside the finished pancakes for now.

    The remaining onion is peeled and finely chopped, 1-2 carrots are peeled and rubbed on a coarse grater. Fry the ingredients in vegetable oil until golden brown.

    Let's prepare all the ingredients for creating a liver cake. Mix part of all available mayonnaise with garlic crushed or squeezed through a press: we will grease pancakes with this sauce.

    We cover the first pancake with mayonnaise sauce as shown in the photo.

    We cover the sauce with the second pancake from the liver, and put the fried onions and carrots on top of it.

How to make Beef Liver Cake


  1. Soak dried mushrooms for 15 minutes and then boil them until tender.

  2. Wash and clean the liver from the film (see introduction). Carefully cut out the bile with the bile ducts - if left or damaged, the cake will be ruined. This is the most difficult moment in the preparation of beef liver liver cake.

  3. Scroll the liver through a meat grinder into a separate bowl. And repeat this step, while adding vegetable oil (1 tbsp. L) so that no lumps form in the minced meat.

  4. Now you need to make the dough for the cakes. Add chicken eggs and milk to the liver mass, mix with a whisk. Heat the vegetable-butter mixture and pour into the dough. Add salt ground pepper, nutmeg and spices to taste.

  5. In order not to clog the cakes and get a rich liver taste, you should not add a lot of wheat flour to the dough. But if you add a little flour, the dough will turn out to be liquid and the cakes will fall apart after frying. To prevent this from happening, I recommend frying the flour. When frying, the proteins in the flour coagulate, as a result, the flour will not form a sticky mass and will become more crumbly. From such flour there will be no lumps in minced meat, it will turn out homogeneous and thick. Therefore, fried flour can be taken less than usual, by 20-30%. So, fry it in a dry frying pan to a shade baked milk and pour into the dough.

  6. Bake the liver cakes in a pancake pan until golden brown.

  7. Grate the carrots, cut the onion into half rings, cut the celery root into strips.

  8. Pass the vegetables over low heat until soft, add chopped boiled mushrooms.

  9. Fry the vegetables for the filling for a few more minutes, add salt and spices to taste.

  10. For the sauce, mix fat sour cream with grated cheese, spicy herbs.

  11. Stir the sauce, if desired, you can add garlic and hot peppers.

  12. Spread the sauce on the liver cake.

  13. Then lay out some vegetable stuffing.

  15. Grate the yolk, finely chop the dill and parsley.
