Whisk the whites into a stiff foam, add 40 g of sugar, mix with a spoon and add the yolks mixed with the rest of the sugar and flour. Put the dough in a pastry bag and, through a large smooth tube, release round cakes onto a greased sheet. Bake in a well heated oven.

Cool the finished cakes, remove the whole crumb from the underside with a knife, leaving the top crusts entirely to make like boxes.

Prepare cream. Grind butter with sugar, gradually adding eggs; when the sugar is crushed, add vanillin, cocoa and 2 tablespoons of cognac.
