Cooking sequence:

4. Wrap it in cling film and refrigerate for half an hour.

2. Add sugar to the protein and beat the mass until a dense, stable foam.

4. Now add vanillin and sour cream to the curd mass.

First of all, take care of the dough, and when the dough is ready, you can immediately start preparing the curd filling for pies. To do this, put the cottage cheese in a separate container and carefully knead all the lumps with a fork until crumbly. If you do not have cottage cheese, but curd, then it will fit too.

Salt the cottage cheese according to your taste so that you like it. Instead of salt, you can add sugar, pre-soaked raisins or dried apricots. In general, the filling should be tasty and be combined with the dough afterwards. Break the eggs into the cottage cheese - the number of eggs added depends on the consistency of the cottage cheese. If you have it dry, as in my case, then you need two eggs for half a kilogram of cottage cheese, and if the cottage cheese is wet or it is a paste-like curd mass, then one egg will be enough.

Thoroughly mix the eggs with cottage cheese and everything else that you have added there.

The next stage is the preparation of the pies themselves, that is, working with the dough. We separate a piece from the dough and roll it into a thick sausage.

Cut the sausage into equal parts.

Form each piece into a ball and place on a floured surface.

We take a ball, roll it in flour and roll it with a rolling pin into a plump pancake (flat cake).

The cake should be thick enough (at least 0.5 cm) and approximately 10 cm in diameter. You can also make big cakes if you like giant pies :).

  • Sugar - 7 tbsp. l.;

Cooking:
1. So, let's start naturally with the preparation of the dough, since it still needs to be given time to rise. It is advisable to take yeast with the mark "immediately into flour." Such yeast dissolves quickly and is added directly to the flour. Sift half of the flour immediately into a large deep bowl. Add yeast and mix everything with your hands.

2. Now, just add salt directly to the flour, as indicated in the ingredients, so that the dough is not fresh. Sugar and eggs, in the same step will go into a bowl. Vanilla sugar can be combined with regular sugar, and also added to the dough in this step.
Mix the whole mass, you will get something like a semi-dry mixture. The dough is not ready yet.

3. Now it's milk time. This product should be warm at the time of adding it to the dough, but not warmer than 40 degrees. If you overheat the milk, you can "scald" the yeast. And then the dough will be hard. As the people say - "like a brick."
After adding milk, knead the dough. It will turn out a little watery, but don't worry. It's only half the pain. Since margarine is very heavy for baking, you need to be careful with it and add it already when the yeast has fermented. And this means that first the kneaded dough must be removed in heat for 20 minutes.

4. Melt the margarine in an iron enamelware on the stove and cool to the same temperature as the milk. Add it to the dough, kneading the mass with your hand. Also in this step, add the rest of the flour through a sieve.

5. Knead the dough. This is how it will look like at the end. It will stick to your hands and be too soft, but that's okay. Put the bowl in heat for 1.5 hours, while trying to knead it three times during this time, on a surface sprinkled with flour. It turns out that you will knead it every 30 minutes.
Note: the more and better you knead the yeast dough, the better and more airy it will be.

6. The filling is very easy to prepare! First, add the eggs to the curd.

7. Then add granulated sugar and vanilla. Grind the cheese until smooth.

Note: if you add raisins to the filling, then it will need to be soaked for a short time in hot water. Just like with raisins. And only then, discard the raisins on a sieve and add to the already ready stuffing, grated with sugar and eggs. All! Curd filling for fried pies step by step recipe ready.
8. After 90 minutes, you will get this perfectly soft and air dough! Break it into pieces the size of an egg.
