Recently I was ordered to cook a simple homemade cookies with colored sugar icing. I had to search in my records good recipe, which would be inexpensive, but at the same time, so that the pastries turn out tasty and beautiful. I opted for the option that was once my favorite.

There are a lot of ingredients for the dough, but they are all available. In addition, a lot of cookies are obtained from one serving. One of the most important components is potato starch, which makes it possible to make pastries more crumbly and tender. Everything is getting ready quickly hastily, and can be stored for a long time if not eaten immediately.

Recipe Information

Ingredients:

  • flour - 3 tbsp.
  • butter - 150 g
  • potato starch - 125 g
  • salt - a pinch.
  • soda - ½ tsp
  • baking powder - ½ tsp
  • sugar - 1 cup
  • milk - 2/3 cup
  • egg - 1 pc.
  • vanilla sugar - 1 sachet

for glaze:

  • powdered sugar - about 200 g
  • lemon juice
  • food coloring.

How to cook:


  1. Butter must be room temperature. Then it is easy to beat. Put it in a bowl and beat with a mixer. But you can just grind with a fork. Pour sugar, vanilla sugar (preparations at home) and grind (or beat) everything together until homogeneous mass.
  2. Add one egg.

  3. Mix thoroughly.

  4. Sift the entire portion of flour into a separate bowl, send baking powder, soda, salt, starch (sifted) there.

  5. Pour half of the dry mixture into the oil mass. We mix.

  6. We add milk.

  7. And add the rest of the dry mixture.

  8. Knead the dough and form a ball. Wrap it up in cling film. We send it to the refrigerator for 1-2 hours or to the freezer for 30-40 minutes.

  9. We take out the chilled dough and roll it into a layer 0.3-0.5 cm thick. Please note that cookies will grow well in the oven. So we make it thinner. Squeeze out the hearts with molds.

  10. Lay out on a baking sheet lined with parchment. We put in a preheated oven. We bake cookies at home at a temperature of 180 degrees for about 15 minutes.

  11. We take out ruddy hearts from the oven. Let them cool down. And we send the next batch to bake. I got almost four batches from one serving of dough.

  12. Prepare the icing for the cookies. Sift the icing sugar into a deep bowl. Pour 3-4 tablespoons into a separate cup. lemon juice or diluted in water citric acid. Same way food coloring. And gradually mix.

  13. You need to add liquid until you get the consistency of liquid sour cream. It is important to catch the moment here so that the icing is not thick, but not very liquid either.

  14. We cover our homemade heart cookies with the resulting fudge and let dry on parchment or on a wire rack. Excess frosting may run off. If you wish, you can decorate the cookies with sprinkles, sprinkling on the icing that has not yet hardened.

  • This icing can be used to decorate gingerbread, Easter cakes, cookies or shortbread. It does not dry quickly, but then it does not lose its shape. There is enough a large number of recipes for this type of dough. But the classic remains the same. This is my favorite option, it is perfect, because the gingerbread cookies are quite tasty, smooth and beautiful, and most importantly, fragrant.

This dough is ideal in taste and shape, cracks do not work, which is very important.

We will need:

  • sugar - 500 g
  • boiling water - 200 ml
  • butter - 200 g
  • soda - 0.5 tsp
  • salt - 1 tsp
  • ginger - 1 tsp
  • cinnamon - 2 tsp
  • cloves, cardamom, nutmeg, allspice, anise - 1/4 tsp each
  • egg - 1 pc.
  • flour - 800-900 g
  • honey - 1 tbsp. l optional

Cooking method:

1. Take a saucepan with a thick bottom. Send it to the stove, make medium heat and start melting granulated sugar.

It is important to note that you do not need to stir at first, wait until the bottom layer begins to melt.


2. Then start stirring with a spatula to evenly help the sugar dissolve.


3. After you should see such a consistency, be careful not to bring this mixture to the point of burning, otherwise your cookies will have a bitter taste.

Important! Before the next step, do not forget to check if there are grains of sugar left, it should completely dissolve.

Boil the caramel until a dark amber color, then remove the pan from the heat and pour in the boiling water in a thin stream. Be prepared for the mass to start bubbling and hissing, because the temperature is high.

Important! Do not forget to stir constantly when pouring boiling water.


4. The syrup will be dark in color, after the mass is homogeneous after pouring water, send the butter at room temperature. And slowly stirring, put the pan on the fire so that the butter melts.


5. After dissolving the oil, add 1 tsp of soda, salt and spices. Take spices to your taste, but without them, keep in mind that the aroma of finished products will not be so pleasant. Stir.


The baking soda will cause the mixture to sizzle and expand slightly. At this stage, you can add a spoonful of honey, but remember that honey is a strong allergen and not everyone absorbs it, especially children. And if you are preparing gingerbread to order, then it is better not to add honey so that there are no problems.

6. Cool the mass, and the foam cap should fall off. When the mass becomes room temperature, add egg. Stir.

Important! If such proportions are large for you, then you want to make half as much, then it will be enough to add only the yolk.


In parts, add the sifted flour, slowly knead. Stir the dough first in the pan with a whisk or spatula, then, as it becomes impossible to do, transfer it to a table sprinkled with flour.

7. The dough should be soft and slightly sticky. After it lies in the refrigerator, it will become denser and easier to work with.


Put the dough in the refrigerator overnight, wrap it in a food bag.

8. Cut off the desired piece from the dough and roll it into a thin cake. The dough can be stored both in the refrigerator itself for about 1 month, and in the freezer for 3 months.


Roll out the mass on a Teflon mat so that the surface of the gingerbread cookies is even and smooth. For rolling out the dough, it is very convenient to use wooden rulers or planks so that the cake has the same thickness everywhere.


Then with the help special molds or as they are also called clearings, make the necessary figures.

You can use a special rolling pin, of course it is much more convenient with it, who often makes such goodies, also to order, I recommend purchasing it.


9. Bake cookies in a preheated oven to 180 degrees for 6-7 minutes on a Teflon mat. The advice is that the product does not turn out tough, you do not need to hammer the dough with flour, and secondly, you do not need to overexpose it in the oven.


If the dough after baking is too deformed, then this means you put a little flour, but if it bubbles, then a lot. If the surface is uneven, place a cutting board on the hot gingerbread.

10. Gingerbread cookies keep their shape well, but inside they should still be soft and porous. Smooth and very beautiful on the outside, but also tasty and fragrant. Good luck in the kitchen!

Moving on, and for starters, I want to suggest that you do the most simple version of the test. You can decorate the most in the usual way, sprinkle with powdered sugar, or make the icing, which you will find later in this article.

Usually, according to this recipe, New Year's or New Year's are baked, in the West this tradition has long been carried out and everyone is treated to such creations, in Russia it has only now become popular to cook these sweets.

  • flour - 2 tbsp.

Mix everything with a tablespoon so that there are no lumps. The color of the dough will change slightly, and will have a slightly brown tint. Add flour and knead well on the table.

3. After all this, wrap the dough in a bag and put it in the refrigerator for at least 1 hour.


4. Next, roll out the dough into a large cake, the thickness should be about 4-5 mm, use a special rolling pin, as in the previous version, I showed you the photo. And then with the help of molds, make any funny figures in the form of little men, hearts, balls and anything. After all, you can use different forms to create a festive atmosphere, for example, for Valentine's Day or Easter.

We will need:

  • flour - 300 g
  • chicken egg - 1 pc.
  • baking powder - 1 tsp

  • sugar - 150 g

Cooking method:

1. Beat softened butter with sugar with a mixer. Then add one egg.

In a separate bowl, sift the flour and stir in the baking powder. Gradually add to butter and sugar.


2. After the dough is ready, add cinnamon and ground ginger directly to it. Knead on the table.

Place the gingerbread dough in the refrigerator, wrap it in a bag for 1 hour. The dough is soft, after it lies down it will become more elastic and denser.

Glaze

  • 200 g of powdered sugar;
  • 1 egg white;
  • 4 - 5 drops of food coloring.

Important! If you wish, you can add a little lemon juice to the glaze so that your cookies have citrus notes, and no one will forbid you to use plain vegetable juice instead of store-bought food coloring - it will be safer and healthier!

  1. We remove the yolks from the refrigerator, put them closer to the sun, in a warm place.
  2. Protein, on the contrary, is kept in the cold until it is needed.
  3. Butter cut into small pieces.
  4. We put it to melt in a warm place, but do not melt it into a liquid.

    Did you know? If you come across too hard (and therefore high-quality) butter that does not want to melt quickly, put it in the microwave for exactly 5 seconds at the highest power, and then transfer it back to a warm place. After a few minutes, the melting process should start successfully.

  5. Sift the flour with a sieve at least three times.

Dough

  1. Sprinkle melted butter with powdered sugar.

  2. Then rub them together with a spoon.

  3. After that, set to whip at the slowest speed.

  4. Pour in the yolks, brought to room temperature, beat for about 30 seconds.

  5. As soon as you get a light mass without lumps, remove the mixer.
  6. Pour half the flour, manually mix it into the prepared egg mass.

  7. Then add the second half of the sifted flour, mix.

  8. The resulting fragile, crumbling dough is rolled into a ball.
  9. Wrap it in plastic wrap and put it in the fridge.

  10. We stand the dough there for at least half an hour, and preferably the whole hour.

    Important! I usually make more dough so that I can divide it into several "balls" and put it in the refrigerator, and then, when necessary, quickly start making a new batch of cookies. Keep so tender shortbread dough it can be for quite a long time, once my portion of the dough lay in the freezer for about a month, but this did not affect the quality of baking.

  1. Pour about a third of the glaze into a pastry bag.
  2. We cover the remaining glaze with polyethylene so that it does not freeze, do not put it in the refrigerator.
  3. We circle the edges of each cookie so that we get beautiful sides.

  4. Then let the icing on the cookies harden well, it will only take a couple of minutes.
  5. After that, add the main dye chosen in advance to the pastry bag.
  6. Stir it inside, trying to thoroughly color the whole mixture.
  7. We divide the glaze that we set aside in advance into as many parts as we have flowers.

  8. Add your own dye to each part, mix with a whisk.

  9. We distribute each color in plastic bags, cut off small corners.

  10. We begin to fantasize, filling the contours of cookies with bright colors to our liking.

  11. Let the finished masterpieces harden and transfer to a spacious dish.

7. The dough should be moderately soft. To make it easier to work with, put it in the refrigerator for 20 minutes.

8. After 20 minutes, roll out the cooled dough with a thickness of 5-8 mm.

9. Cut out cookies using different Christmas molds. The remaining pieces of dough will need to be rolled out again to cut out the cookies.

10. We spread the orange cookies on the opponent covered with baking paper.

11. Let's send cookies to bake in preheated to 180 gr. oven for 10-15 minutes.

Sugar icing for cookies:

1. Our orange cookies are ready, it's time for decoration. Let's prepare necessary ingredients for glaze: Powdered sugar, lemon, dyes and multi-colored sprinkles.

2. Add a little lemon juice to a glass of water (8 tablespoons). And put fine powdered sugar in a separate bowl.

3. Add the resulting lemon syrup to powdered sugar and mix well until smooth.

4. Icing should be fairly liquid. Such that it was easy to paint cookies with a brush, and the paint did not flow down. If you see that you overdid it with water, add more powder. Or vice versa, if the cookies cannot be colored because the icing hardens on the go, add more syrup.

4. Divide the glaze into several parts to add a different dye to each of them. I used green and red dyes, and also added cocoa to one of the parts and left the other part just white.

5. Now you need to quickly color the orange cookies in different colors. I painted with a regular brush. You can dip the cookies completely into the icing and carefully lay them on flat surface for drying.

6. While the icing is not dry, you can immediately sprinkle the cookies with multi-colored sprinkles or coconut flakes immediately after coloring.

The icing on the cookies dries very quickly, so the cookies can soon be put together in a basket. The cover will not deteriorate.

Often prepared for holidays such as New Year, Christmas or Easter. But, despite this, it can become a frequent guest on your table. After all, a holiday can be arranged on any day, and please the family with something beautiful and unusual. The main thing is time and desire! :)

Ingredients sugar cookie and glaze

Sugar cookie:

3 cups (390 grams) wheat flour

1/2 teaspoon salt

1 teaspoon soda

1 cup (227 grams) butter room temperature

1 cup (200 grams) sugar

2 large eggs

2 teaspoons pure vanilla extract (liquid vanilla)

Glaze:

2 large (60 grams) egg whites

2 teaspoons fresh lemon juice

3 cups (330 grams) powdered sugar

Preparing sugar cookies and frosting

Sugar cookie:

In a separate bowl, mix flour, salt and soda.

Beat butter and sugar with a mixer until light and fluffy (about 3 minutes). Continuing to beat, add the eggs and vanilla. Whisk until all ingredients are well mixed.

Add the flour mixture to the resulting mass and knead a smooth elastic dough.

Divide the dough in half and wrap each half in plastic wrap. Chill the dough in the refrigerator for about one hour so that it rolls out well enough and takes the desired shape.

Preheat the oven to (180 degrees C) and place a baking sheet lined with parchment paper in the center of the oven.

Remove one half of the chilled dough from the refrigerator and, on a lightly floured surface, roll out the dough to a thickness of about 1 cm. Check that the dough does not stick to the table by turning it slightly.

Using a lightly floured cookie cutter, cut out cookie dough of the desired shape, and then carefully transfer the cookies to the baking sheet.

There are many forms of such cookies. Personally, we made a family of deer, Christmas trees, circles, a skate, a bear, stars, bells, squares.


Place the baking sheet with the raw cookies in the refrigerator for about 15 minutes to chill the dough. This is necessary so that the cookies do not lose their shape during baking.

Bake the cookies for 8-10 minutes (depending on size) or until the edges just start to brown.

Then take the cookies out of the oven and let them cool.

Makes about 36 cookies per serving. We got this much from 2 servings of dough.

Egg White Frosting:

Whisk with a mixer egg whites With lemon juice. Then add sugar and beat at low speed until smooth. Add more sugar or water until desired consistency is reached. Add food coloring if needed. Glaze should be used immediately or stored in an airtight container as it hardens quickly when exposed to air.

After the cookies have cooled, we proceed to dye them with icing.. There are many options here too. Here's what we got:


Cookies can be frozen with frosting if needed. Make sure the frosting is completely dry before storing or packing (this may take several hours or overnight).

Store cookies between layers of parchment or wax paper.

After the icing dried, we packed it in transparent bags, tied it with ribbons and attached small postcards with the signature of the author. It turned out a box of wonderful sugar cookies with icing for a gift to relatives and friends.
