Cooked for the family meat dishes should always be varied. If your freezer is filled to the top with only minced meat (which is very good), and you fry every day regular cutlets, households will refuse them in a week. They will simply get tired of such food. Be smarter and more inventive: offer your gourmets baked minced meat nests with cheese and egg filling. In fact, these are the same cutlets, only with a slightly changed composition of the products and the method of preparation. If the former are fried in a pan, then the meat nests are baked in the oven.

How to cook minced meat nests in the oven

Proposed step by step photo the recipe calls for baking them minced chicken. However, meat can be anything.

Ingredients:

for cutlet mass:

  • minced chicken - 300 g,
  • onion - 1 head,
  • egg - 1 pc.,
  • raw potatoes - 1 pc.,
  • garlic - 1 large clove,
  • White bread 2-3 pieces + 0.5 cups of milk to soak it,
  • salt - to taste,

For filling:

  • boiled eggs - 2 pcs.,
  • hard cheese - 50 g,
  • sour cream - 2 tablespoons,
  • salt - optional
  • sunflower oil for greasing the mold.

Cooking process:

We clean and wash vegetables. Cut off the crust from white bread, fill the crumb with milk. For cutlets, it is not at all necessary to take a fresh loaf, a 3-day one will also work (unless, of course, there is mold on it).

Place the eggs in a bowl, pour cold water, add salt, send to cook. 7 minutes after boiling, put under cold water to cool.

We turn on the oven at 200 degrees.

When all the components are prepared in advance, it is easier and faster to knead the mass. To do this, three potatoes on the smallest grater for minced meat, an onion on the middle grater, garlic is passed through a press.


We also shift the softened and squeezed white bread there, drive in the egg, salt. Mix thoroughly. It does not work well with a spoon, do it with your hands.


In a separate bowl, combine boiled, chilled and finely chopped eggs, sour cream and grated cheese.


We mix the stuffing. If your cheese is salty enough, you don't need to add salt. Although if it still seemed fresh to you, add a pinch of salt.

Cover the baking dish with baking paper, grease with oil. We twist the cakes from the cutlet mass, put them in a mold, make small indentations in the middle.


Put the stuffing on top. Calculate so that each "nest" receives an equal portion of cheese and egg mass.


We put the minced meat nests in the oven for 35-40 minutes, bake at a temperature of 190-200 degrees.

Such a dish can be an ordinary everyday dish, or it can decorate a festive table.

There are times when you don’t want to spend a lot of time in the kitchen. It is at such moments that frozen minced meat comes to my aid.

There are always a few bags of fresh minced meat in the freezer. It can be minced meat from any kind of meat or poultry. It remains to defrost and cook. Minced meat can be cooked from complex to a simple dish. Now I will tell you several variations of its use.

Cooking time: 30 minutes

You will need for 4-6 servings of meat nests:

  • Minced meat 0.5 kg
  • Mushrooms 0.5 tbsp.
  • Chicken egg 1 pc.
  • Fresh tomato 1 pc.
  • Cheese durum varieties 200
  • Onion 1 pc.
  • Spices 0.5 tsp
  • Greens 1 tbsp
  • Olive oil 1 tsp

Preparing meat nests:

We will make a kind of “nests” from minced meat, and you can always think of what to stuff. I have a couple of favorite options, and I will share them with you.

The first step is the same for any performance.

We take a baking dish in the oven and sculpt nests from minced meat. It can be just a tray, a frying pan, a cupcake baking dish ...

It is very convenient to do it in cupcake molds. Lubricate the forms. First make a big ball. Put it on the mold and use your fingers to make a recess in the ball. The shape should resemble a bird's nest.

About mushrooms:

Carefully process the mushrooms and cut into thin slices. Saute in a frying pan until cooked with onions in half rings. We put in "nests" of minced meat.

About redheads:

Ryzhiki - the most lazy option. I take salted mushrooms. I wash them with running water and put them in a nest with fresh herbs, if desired, you can add browned onions. You can also sauté saffron mushrooms according to the variant of champignons. As your soul desires.

What follows is a lot of improvisation.
Champignon option.
Cut the tomato into rounds. We put on a stuffed "nest".
Hard cheese three in a large grater. You can add a little cheese instead of salt. Mix sour cream with mustard. Or use homemade mayonnaise. If you use store-bought mayonnaise, then it will do. Or a little olive oil With provencal herbs. You can add chopped garlic, if you like. Here everyone has their own choice. We make the desired cheese mixture. Mix with cheese what you have in mind. It turns out something like a paste. With which we cover the tomato over the minced meat with the filling.

The redhead option...
We take egg, cheese - into a fine grater (if it is parmesan, then great). Whisk the egg-cheese mixture. Salt and pepper to taste. Spices are welcome.

To prepare this dish, you will need special pasta with Italian roots - nests (tagliatelle). This pasta can be bought in almost any store, in fact it is a kind of noodles, which is folded in the form of a circle. Dish, despite its original submission very easy to prepare and does not require any special skills from you. This is not the first time I have been preparing such nests of pasta with minced meat in the oven, and I would like to note that it is really very tasty! Pasta must first be boiled, and then filled with stuffing, in this case it will be minced meat. The highlight of this recipe is tomato cream sauce in which to bake. Thanks to him, the dish is not only hearty and tasty, but also very tender and juicy! We will add all this at the end with a cheese “hat” to give the nests a more appetizing and elegant look. Ingredients:

  • 12 nests of pasta.
  • 500 grams minced meat.
  • 2 bulbs.
  • 1 medium sized carrot.
  • 2 tbsp. spoons of tomato paste or sauce.
  • 2 tbsp. spoons of sour cream of any fat content.
  • 150 grams of hard cheese.
  • mayonnaise to taste.
  • salt and spices to taste.
  • vegetable oil.
  • Servings Per Container: 12.

For the filling, combine minced meat (I have beef + pork), one chopped onion and add salt and spices of your choice.

Then boil the pasta. To do this, bring salted water to a boil, and then put our pasta nests on the bottom of the pan. We boil the nests in parts so that they lie in one layer. As soon as the pasta is put into the water, it is necessary to move it a little with a spatula so that the pasta does not stick to the bottom, and after boiling, cook them for no more than 3-5 minutes, depending on the manufacturer, until al dente. Water must be poured in such an amount that it covers the pasta by 1-2 cm.

We take out the finished nests and put them in a baking dish, which must be greased with oil.

For the sauce, fry the grated carrots and onions, cut into cubes. It is not necessary to fry strongly, it is enough that the vegetables become soft. Then we add tomato paste, sour cream and cook everything together for another 2-3 minutes.

Then pour 1.5 cups of water, I use the one left after cooking the pasta. Add salt to taste, you can add spices, bring everything to a boil and turn it off. The sauce is ready!

Now we prepare our dish for baking. We fill the pasta nests with minced meat, slightly pushing the middle, crush the minced meat with a fork. Nests can be deposited both separately from each other, and in an even layer, at your discretion.

Top everything with the prepared sauce, trying to bypass the minced meat.

Then we put a “cap” of mayonnaise on the minced meat. You can also replace it with sour cream, but our family loves this option more.

Spread grated cheese evenly over mayonnaise.

We bake the nests in the oven at 180-200 * C for about an hour. I'm guided by ruddy cheese crust above.

It remains to cut the dish into portions and can be served at the table. Pasta nests prepared according to this recipe are a self-sufficient dish and a side dish is definitely useless here. If you wish, you can add fresh herbs or any vegetables when serving.

This is how you can cook at the same time a simple, but at the same time, delicious dinner! It turns out excellent treat from which no one can truly resist!

I made this dish for a family reunion. They ate it all clean. It seems nothing special, but I was pleased to hear compliments from the closest people about my culinary abilities.
Very juicy, tender cutlets, and mushrooms give a spicy touch. And yes, it looks very nice on the plate.


. minced meat - 1 kg. But in the end, I still had minced meat, so 700 gr is enough.
. egg - 1 pc.
. white loaf or bun - a couple of pieces
. milk - 1 glass
. mushrooms (champignons or oyster mushrooms) - 300 gr.
. onion
. mayonnaise
. cheese (I have mozzarella)
. salt
. ground black pepper.

First of all, let's fill the minced meat. Soak a loaf or bun in milk. It's good to crush it. Bread will give our cutlets "fluffiness"
Finely chop the onion. Part of the bow will go for mushroom stuffing. And for the ground beef, I skipped the onion in the blender.
Now we mix everything in one bowl. Add an egg. Salt, pepper and mix well.

Finely chop the onion and fry in vegetable oil (odorless).

The onion should become translucent.

Mushrooms cut.
Add mushrooms to onions.
We fry until ready. Salt and pepper.
Roll up a bun from the prepared minced meat.
Then make a hole
And fill it with minced mushrooms.
Top with mayonnaise or sour cream. This is how you like it. I used mayonnaise.
Grate the cheese on a coarse grater.

Sprinkle grated cheese on top of the stuffed nest.

Lay the prepared nests on a baking sheet, after greasing it vegetable oil and in hot oven for 40 minutes at a temperature of 180 degrees!
