We put the squeezed peel into a saucepan, pour two liters of water and boil for 10 minutes. Then strain through the same colander. Cool to room temperature and combine the broth with the squeezed pulp. Add honey or sugar to taste. Delicious! I love cranberry juice!

It is indispensable as a drink for colds, because it contains bactericidal organic benzoic acid. In winter, it should be done more often, because it is useful for strengthening the immune system and protects against influenza infection.

How to cook cranberry jelly?

Kissel is prepared in a very similar way. We also take two glasses of cranberries, squeeze out the juice, also pour the peels with 2 liters of water and bring to a boil. Add ¾ cup granulated sugar, stir. And now let's move on to the jelly itself. Let's get the potato starch ready! To do this, dilute 3 tablespoons cold water. Then, in a thin stream, pour it into boiling water. We stir constantly. Let it simmer for a couple more minutes and turn off the heat. Pour our squeezed juice into a warm broth and stir well.

Cranberry jelly is especially good for children, as well as for those adults who have inflammatory bowel disease. It gently envelops the mucous membranes and protects them from coarser food.

How to make homemade cranberry tincture?

Now we can buy whatever we want in the store, including delicious Finnish cranberry liqueur. But your own, homemade is always a little nicer. And I want to show off to the guests “This is ours, homemade! We did it ourselves." Take half a kilogram of granulated sugar and add 200 ml of water. Put on the stove, stirring, let the sugar dissolve completely. Boil the syrup for a few minutes. Then leave to cool to room temperature. Grind 500 g of cranberries with a blender and mix all this gruel with syrup. Let's add half a liter of vodka. Pour the mixture into glass jar, tightly close the lid and put to infuse in a dark place for three weeks. Shake periodically. Now it remains to strain the tincture, remove the cake and pour into a beautiful decanter. Our festive "Klyukovka" is ready!

How to make a tea drink with cranberries?

Mash a handful of cranberries with sugar, pour hot freshly brewed black tea. To taste, add a slice of lemon, a piece of ginger root, one grain of cloves, a little sugar. We wrap the container with tea, let it brew for 15 minutes. Now you can have tea.

Place sweet cranberry water in a saucepan, bring to a boil and slowly pour in 100 g of semolina. Stir constantly so that no lumps form. After 5-7 minutes, the porridge is ready. Let it cool completely and combine with the juice that we squeezed out at the beginning. It remains to beat it all with a blender until homogeneous mass. You will get a delicious mousse of a pleasant pink color, thick and voluminous. Semolina grains are almost not felt. We put it in beautiful bowls and put it in the refrigerator. Serve after a few hours and enjoy dessert.

How to cook cranberry jam with apples?

Cranberry - recipes for making jam from it - a favorite delicacy of so many people! Let's take a kilogram of cranberries and 300 g of finely chopped Antonov apples. But first, let's prepare the syrup. To do this, pour water into a bowl for cooking jam, two glasses are enough, and 1 kg 300 g of sand. Bring to a boil while stirring and let simmer for 5 minutes. After that, pour the berries and pieces of apples into the syrup. Stirring, bring to a boil, removing the resulting foam. Remove the bowl from the heat and let stand for about 8 - 10 hours. Let's put it on fire again. Bring to a boil, stirring constantly, skimming off the foam. Then reduce the heat and cook the jam over low heat until cooked. We remove the bowl from the fire several times and gently shake it from side to side, we will collect all the foam towards the center. Let's delete it. Let's drink frothy tea! Each time, the foam will be less and less, and the berries and pieces of apples should not boil soft. The readiness of jam is checked as follows: we apply a little jam on the dry surface of the plate. It should not spread, it will be in the form of a button.

How to make cranberry sauce?

In our house, it never translates. At one time, my husband often bought ready-made lecho, ketchups in the store. Weaned him off of that by serving up delicious cranberry sauce. Finely chop one onion and fry in a frying pan in a small amount olive oil. Now here we put 100 berries, grated zest from half a lemon, a pinch of salt and a little ground red pepper, about a tablespoon butter without top. Stir, cover with a lid and sweat on the stove for 10 - 15 minutes. The shells of the berries will burst, the sauce will thicken, add a tablespoon of honey and let stand on the stove for 5 minutes, turning off the heat.

Finely chop 3 kg of white cabbage, grate 100 g of fresh carrots, mix it all up, adding 100 g of cranberries, 1 tsp. granulated sugar, half a glass coarse salt, some dill or cumin seeds. Let's fill three liter jar, lightly pressing each new serving of cabbage. After that, put the jar in a deep plate, and loosely cover the top with a lid. Within three days, the cabbage will sour. And we will periodically pierce it with a long wooden stick to release air bubbles and the resulting leaven. After three days, the fermentation process will stop. The cabbage is ready. Put the jar in the fridge and eat healthy. I sometimes add cranberries during cooking sauerkraut when there are firm, freshly picked berries in the house.

How to bake cranberry pie?

I make cranberry pie for a very simple recipe. We eat it with pleasure. Try it and you will not regret it.

Prepare a mixture of one glass of flour, one glass of granulated sugar, a quarter teaspoon of salt, half a glass of chopped walnuts and washed but dried cranberries on a paper towel. Separately, you need to beat two eggs with a blender. Melt half a stick of butter. It remains to mix all this properly by adding a tablespoon of Amaretto liqueur or 1 tsp. almond essence.

We heat the oven to 180 degrees. Lubricate the form for pies with oil, transfer our workpiece into it and bake for 40 minutes until golden brown. When the cake has cooled, transfer it to a dish and, if desired, you can decorate with whipped cream. Delicious - lick your fingers!

Dried cranberries are very tasty and healthy!

She doesn't lose any useful properties compared to fresh berries. It can be eaten just like that, in the form of snacks between meals, used in weight loss programs, added to various salads, put in baking.

Cranberries in powdered sugar.

Rinse cranberries with running water through a colander, dry on a paper towel. Better to use fresh berries, but if not, you can also frozen. Defrost them first, rinse and dry. Then we take chicken eggs and separate egg white from the yolk. We need protein. We place it in a flat plate and lightly beat with a whisk or fork. Now put the berries in the protein and mix. Moreover, not all at once, but in portions, two tablespoons each.

In another bowl, deeper, pour powdered sugar. Now you need to very carefully, literally by the berry, put them into the powder so that they do not touch each other and so that the excess protein does not get into the powder. Then shake the bowl, powdered sugar evenly sticks to the berries from all sides in a thick layer. We take it out, put it on a separate plate. We do this with all the prepared cranberries. Let the blanks dry and you can serve.

Traditional Christmas wreaths made of pine needles are no longer relevant! Today, craftsmen use completely unexpected materials to make this decor item. In fact, everything will come in handy: buttons, Christmas decorations, beads ... Today we will try to make a wreath of fresh cranberries or dry rose hips. Recipe 1. Festive salad with cranberries and chicken

You will need: 400 g of boiled chicken fillet, 100 g of cranberries and walnuts, 1 bell pepper, 1 stalk of celery, a pinch of sweet paprika, 100 g of mayonnaise, 2 stalks of green onions, spices to taste.

Cut the meat into cubes, celery into strips, bell pepper into small slices. nuts and green onion finely chop. Combine all the ingredients in a salad bowl, add mayonnaise and spices, mix gently so as not to damage the berries, and refrigerate for an hour. This salad can be stuffed with tomatoes or served on plates garnished with lettuce.

Recipe 2. Cranberry Sauce to the roasted bird

You will need: 500 g of fresh cranberries, cinnamon stick, 2 apples, 140 g of powdered sugar, 100 ml of water.

Sort the cranberries and wash. Peel the apples, remove the cores and cut into thin slices. In a saucepan, combine cranberries, apples, powdered sugar with water, add a cinnamon stick and simmer until the apples are soft, the berries burst, and the sauce thickens. Recipe 3. Cranberry vitamin drink

You will need: 1 liter of cold water, honey to taste (about 1-2 tablespoons), 1 cup of cranberries.

Cranberry juice prepared with honey, without boiling, is an excellent tonic drink, especially useful for people weakened after illnesses. Sort the berries, rinse, dry on a sieve and mash with a wooden spoon, squeeze the juice, and pour the skins with water and boil. Combine the cooled broth with cranberry juice, add honey and let it brew for 3-4 hours. The berries can be boiled without squeezing the juice, then strain the broth, and add sugar instead of honey, but in this case, the fruit drink will turn out not as vitaminic as in the proposed recipe.

Recipe 4. Cranberry jam with honey

You will need: 1 kg of cranberries, 2 cloves, 1.5 kg of honey, 500 ml of water, a pinch of cinnamon and nutmeg.

Prepare a syrup from honey and water: mix the ingredients and cook over medium heat for about 10 minutes. Sort the berries, rinse, pour into honey syrup, add spices, bring to a boil and keep on low heat until thickened. Remove the cloves from the finished jam, arrange in jars and cork iron lids. Jam prepared according to this recipe, useful not only as a dessert. It can be served hot, as a sauce for roasted poultry - chicken, turkey, duck, goose.

Recipe 5. Cranberry mousse

You will need: 200 g of cranberries, 4 tablespoons of semolina (without a slide), 0.7 liters of water, sugar to taste (about one glass), mint leaves for decoration.

Squeeze the juice from the berries and refrigerate for an hour. Put the cranberry cake in a saucepan, pour in water and boil for a few minutes. Strain the resulting liquid through a fine sieve, return to the saucepan, let it boil again and gradually pour semolina in a thin stream. Cook over low heat until thickened. Add sugar at the very end and stir until it dissolves. Remove the saucepan from the heat, and when the semolina has cooled, pour in the cranberry juice and beat until the mixture has doubled in volume. A saucepan with semolina can be immersed in a slightly larger dish filled with ice water, then the mousse turned out to be more airy. Place the finished dessert in the freezer for half an hour, then put it in bowls and refrigerate for another 40 minutes.

Recipe 6. Cranberry Walnut Pie

You will need: 2 cups of cranberries, 100 g of butter, 1 cup of sugar and flour, half a cup of walnuts, a pinch of salt, 2 eggs, a glass of whipped cream for serving, 1 teaspoon of almond essence.

Preheat oven to 180 degrees. Grease a pie mold with oil. Finely chop the nuts. Whisk the eggs lightly. Melt butter. Combine flour with salt and sugar, add nuts, cranberries and mix so that they are evenly distributed in flour. In the resulting mixture, add almond essence, beaten eggs and melted butter. Pour the batter into the prepared pan and bake for approximately 40 minutes. Pierce the center of the cake with a toothpick: if it is dry, then you can get it out of the oven. Recipe 7. Brownie with cranberries and cashews

You will need: 200 g of sugar, 100 g of dried cranberries, cashew nuts, flour, cocoa powder and butter, 2 eggs, a pinch of vanilla sugar or 1 dessert spoon of vanilla extract, a pinch of salt.

Melt the butter, mix well with sugar and cocoa, add beaten eggs, vanilla extract, salt, flour, cranberries and nuts. Put the chocolate mass in a square baking dish and send it to the oven preheated to 180 degrees for about 30 minutes. The dough should not rise during baking, so it must be gently mixed with a spatula, and not whipped with a mixer. The combination of cashew nuts, cranberries and chocolate is a win-win. It turns out a delicious chocolate-nut cake with a unique sourness, which the berries give to the sweet dough.

Recipe 8. Vitamin sweets with cranberries

You will need: 100 g dried cranberries, 150 g dried apricots, piece fresh ginger the size of a cherry, 70 g almonds, 150 g of your favorite chocolate, a pinch of cinnamon and vanilla sugar, corn (nut) crumbs.

Wash and dry dried fruits. If the dessert is not prepared for children, you can fill them with homemade liquor for 15 minutes. almond nuts grind in a coffee grinder. Peel the ginger root and, together with dried apricots and cranberries, mash with a blender, add vanilla sugar, almond crumbs, cinnamon and mix everything thoroughly.
