This recipe is based on a 0.5 liter yield. Such a jar can be eaten immediately, which is convenient. How many jars of blanks you need is up to you. To cook vegetables in jelly for the winter, you will need:

  • 2 teaspoons of gelatin;
  • 1 tea spoon granulated sugar;
  • 0.5 teaspoon fine salt;
  • 2 teaspoons of vinegar;

  • 3-5 cucumbers (depending on the size of the fruit);
  • 2-3 tomatoes;
  • 2 onions;
  • 1 Bulgarian large pepper

Cooking process

First you need to prepare jars of 0.5 liters - they should be thoroughly washed and rinsed. In this case, you can do without steam sterilization of cans. We fall asleep in the bank the right amount gelatin powder, granulated sugar and salt. During cooking, all the components of the marinade will dissolve, so the jelly will be homogeneous. This is another plus this recipe- no need to additionally prepare the marinade, which takes time.

Next, cut the onion into half rings and put it in a jar. Cut the tomatoes into large pieces. It is better to soak the cucumbers in cold water for a couple of hours before preparing the salad, and then cut them into circles or cubes and send them to the jar after the onions and tomatoes. Peel the Bulgarian pepper from seeds and stalk, cut into strips or cubes (optional), put the pepper in a jar with the top layer.

Remember to thoroughly wash the vegetables before slicing, and the sequence of vegetables can be changed - taste qualities workpieces will not change from this. According to taste preferences, garlic cloves, sprigs of herbs, dill or peppercorns can be added to vegetables. Finally, add vinegar to the vegetables (it is better to take 9% vinegar), pour water. Cover but do not seal vegetable jars with clean, steam-cleaned preservation lids.

Then all that remains is to sterilize the jars with blanks: in a large saucepan, lay out the bottom with a soft cloth, put the jars there, pour enough water to cover the jars to the middle and boil over low heat for 10-12 minutes from the moment the water boils. The fabric will protect the jars from overheating and from splitting. After the jars are sterilized, they should be rolled up, put upside down and wrapped in a warm blanket or blanket. In this form, the jars should be completely cool.

How to cook tomatoes for the winter in gelatin

  1. We warm the water a little, it should be a little warmer than room temperature.
  2. Gelatin is bred in warm water. Mix and leave for 30-40 minutes. Such time and temperature are usually indicated in the instructions. Make sure your gelatin needs to be soaked before cooking. And you don't have to cook at all.
  3. Tomatoes for harvesting are selected small, dense and fully ripe. We wash the tomatoes and cut them in half, removing the tail and middle with a sharp knife (stalk). Cut into halves.
  4. Peel and wash a small head of onion. Cut into wide rings of 0.5 mm. thick.
  5. Cut the garlic into slices. Very small cloves can simply be cut in half lengthwise.
  6. We prepare the jars - we wash them without detergent, but only with soda, pour over boiling water from the kettle and dry completely.
  7. We put parsley or celery, onion rings and slices of garlic, spices in jars. We put all the seasonings, we will not put anything else on top.
  8. Fill jar with chopped tomatoes cut side down. We do not crush tomatoes, you can only shake the jar slightly. We fill it up to the shoulders or a little higher.
  9. Marinade preparation. Boil water and dissolve sugar and salt.
  10. Turn off the gas, pour in water with gelatin and vinegar, mix well. The gelatin should completely dissolve. If undissolved lumps remain, strain the marinade through a fine sieve.
  11. Pour in the marinade, slightly cover with lids, but do not roll them up yet.
  12. Pour hot water into a large saucepan and set the jars. Water should be shoulder-deep. As soon as the water boils, we sterilize for 15 minutes.
  13. We take out the jars and roll up the lids. In order for the workpiece to be completely ready - turn the jars upside down and cover with a blanket. Don't worry, the marinade will be liquid right away, but as it cools it solidifies.

For storage, turn over and rearrange the jars in the cellar.

2. Cooking gelatin: Dissolve dry gelatin in 1.5 cups of cold water. While our gelatin is dissolving, let's do the marinade.

3. Marinade: pour water into the pan, put salt, sugar, cloves, bay leaf, pepper and boil for 5-7 minutes.

4. Cooking, washing vegetables thoroughly. Cut tomatoes into slices, cucumbers into rings 2-3 cm thick, peppers and onion rings.

5. Layers are laid in sterile jars: cucumbers, tomatoes, peppers, onions (we do not regret onions, we put more - it turns out to be especially tasty). We put vegetables in jars tightly.

6. Put gelatin on top of jars, based on: 3 each tablespoons gelatin per 1 liter.

7. Fill the salad with hot brine.

8. We cover the jars with lids. Pour water into a deep saucepan, heat it to the temperature of the jars, put a wooden circle or a small piece of cloth on the bottom. We put jars with blanks in the pan, the water in the pan should reach the shoulders of the jars. We sterilize half-liter jars for 7-10 minutes, 10-15 minutes for liter jars, 20-25 two-liter jars. I prefer to roll salad with gelatin in small 0.8-1 liter jars.

8. Having removed from the stove, we roll up the cans. I do this without taking jars of blanks out of the water. Then I take out the blanks, turn them over, wrap them with something warm and leave them to cool completely.
