These meatballs got their name for rice, which imitates thorns. It is added to minced meat raw or boiled until half cooked. Long rice looks especially impressive. During the cooking process, the rice grains are completely steamed out, but at the same time, the “hedgehogs” do not lose their shape.

You can cook the dish in a slow cooker, frying pan, oven or saucepan. In the latter case, they are cooked with gravy, which makes the meatballs especially juicy and tasty.

Minced meat for meatballs can be any: pork, beef, chicken or mixed. If you are preparing this dish for a child, it is better to cook the minced meat yourself. So you will be sure of its quality.

Spices, salt, finely chopped onion and rice are added to the minced meat. Then everything is well kneaded. Small balls are formed from the resulting mass with wet hands. They are placed in a saucepan and poured with gravy, which is prepared on the basis of tomato paste, cream, sour cream or fresh vegetables.

Then the saucepan is sent to a low fire and boiled until tender.

Recipe 2. Minced hedgehogs with rice in a saucepan with vegetable sauce

510 g minced meat;

a pinch of black pepper;

three large tomatoes;

half a glass of rice cereal;

two pinches of fine salt;

800 ml of drinking water;

a bunch of fresh herbs.

1. We wash rice groats to clear water. Put it in a saucepan, pour boiled water and boil over low heat until half cooked. We recline on a sieve and cool.

2. We wash the meat and cut it into small pieces. We clean the onion. Pass the meat and one onion through a meat grinder. Add chilled rice to minced meat, salt, lightly pepper and knead well.

3. We form small balls from minced meat and put them in a wide pan with a thick bottom.

4. Peel the carrots and chop them coarsely. Rinse the tomatoes, wipe with a towel and cut into small pieces. Heat up the oil in a frying pan. We spread the finely chopped onion in it and fry until transparent. Then add grated carrots and tomatoes. Stir and simmer until the carrots are soft. Now add flour, mix and cook for about a minute more.

5. Pour boiling water into the pan, stirring constantly so that the flour is completely dispersed. We wait until the gravy boils, and remove from the stove. Salt, add chopped herbs, lightly pepper.

6. Fill the hedgehogs with gravy and put on the smallest fire. Stew, covered, for 20 minutes. Serve with a vegetable side dish or boiled pasta.

Recipe 3. Minced hedgehogs with rice in a saucepan in cream

chopped meat- 900 g;

rice - 100 g;

garlic - two cloves;

1. Remove the husk from the bulb. Cut it into quarters and place in a blender. Smash the onion to a puree state and add to the minced meat.

2. Rinse the rice grits. Then boil it until half cooked, put it in a colander and rinse. Add the rice to the minced meat and knead well until you get a homogeneous dense mass.

3. Form small koloboks from minced meat, five centimeters in diameter.

9. Pour meatballs with sour cream sauce, season with spices and simmer for another half an hour over low heat. Serve drizzled with sauce and sprinkled with chopped herbs.

Recipe 5. Minced hedgehogs with rice in a saucepan in cheese sauce

half a kilogram of pork pulp;

tomato paste - 30 g;

drinking water - 200 ml;

garlic - two cloves;

wild or golden rice - 100 g.

1. Rinse the pork, dry it with napkins and cut large pieces. Break the garlic into cloves. Free the onion from the husk, and cut it into pieces.

2. Pass meat, onions and garlic through a meat grinder. Pepper and salt.

3. Rinse the rice. Then boil the cereal until half cooked. Drain the rice in a colander and rinse. Add rice to mince. Crack in the egg here and mix well.

The recipe for minced meat and rice hedgehogs differs from similar meatballs in only one thing - for their preparation, rice is not pre-boiled, and therefore, after stewing, the rice sticks out funny from meatballs, resembling hedgehog thorns.

Minced meat for this dish I took mixed - pork with chicken 2: 1. Ideal if you cook minced meat yourself. So you will be sure of the quality of the meat, especially if the dish is prepared for children.

Peel the onion and cut into small cubes. Pour 1/2 the recipe for vegetable oil into the pan (I use refined oil for frying). sunflower oil, odorless), put the onion in it and fry it until translucent. And then put the peeled, coarsely grated carrots and fry together until the carrots are soft.

In a wide and deep bowl, place the prepared minced meat, dry raw rice, frying of onions and carrots. Salt and pepper to taste - it is better to use fresh, only ground salt and pepper, they brighten the taste of the dish.

Mix thoroughly all the ingredients of our hedgehogs. It is most convenient to do this with your hands, so you will feel very well how well the minced meat is brought to uniformity. Some people add an egg to the minced meat to hold the ingredients together, but I do not use it, as the protein makes the hedgehogs tougher. Minced meat is perfectly molded without the addition of an egg.

Reheat the remaining vegetable oil in a frying pan. With wet hands, form small balls 4-5 cm in diameter and place them in the hot oil. Fry on one side over medium heat for 3-5 minutes.

Flip future hedgehogs to the other side and fry for another 3 minutes. We do this so that after stewing, the hedgehogs keep their shape and do not fall apart.

Place the fried hedgehog balls in a heavy bottomed saucepan. If your frying pan is wide, you can stew hedgehogs in it.

Pour the balls with tomato juice, salt to taste.

Simmer the dish after boiling over a very low heat for 40 minutes, the balls will increase in volume due to the fact that the rice absorbs the liquid.

Serve minced hedgehogs with rice in portions, hot with a side dish of fresh or baked vegetables. Drizzle with sour cream or your favorite sauce.

Hedgehogs with rice in the oven in tomato sauce

Here, instead of tomato juice, we will fill the hedgehogs with a specially prepared sauce and stew them in the oven. Our hedgehogs will be more "adult", since children cannot have a lot of spices. But they taste amazing and they are very soft.

Ingredients for hedgehogs, we will take the same amount of products as in the main recipe.

But let's prepare the fill in a different way, for it you need:

  • Tomatoes (canned, mild) - 1 can (0.4 kg);
  • Pepper (sweet, preferably red) - 0.15 kg;
  • Garlic - 2 cloves;
  • Bulb - 1 pc. (large);
  • Greens (basil, dill, parsley, cilantro) - 1 bunch if not, you need to take - 1/4 tsp. each dry seasoning.
  • Oil (olive, not refined) - 40 g;
  • Broth (vegetable, which one do you prefer) - 0.4 l .;
  • Coriander - 1/4 tsp
  • Salt, (at least 0.5 tsp), and black pepper - at your discretion.

Cooking method:

  1. We cook the hedgehogs ourselves as in the main recipe, and then we prepare the sauce separately.
  2. And we do it this way: first, fry the garlic in well-heated oil, but not for 1 minute. Then we add tomatoes and spices to it (if they are dry), coriander, salt, pepper, simmer for 5-7 minutes, then rub through a sieve and put it again on hot pan, add finely chopped pepper to the mixture and simmer for another 7 minutes. After that, pour in 2 cups vegetable broth and if our greens are fresh, then we put it, having previously chopped it.
  3. Now pour the hedgehogs with our sauce so that they are only covered. We put in the oven and simmer on low heat for no more than 40 minutes.

Serve hedgehogs hot, pouring over the remaining gravy or sauce. It will be very tasty and spicy.

Hedgehogs with minced chicken rice with sour cream sauce

Not all kids love tomato paste, many refuse it. I suggest for such fussy people to cook tender hedgehogs with minced chicken and sour cream sauce. Minced chicken hedgehogs with sour cream sauce will turn out tender, juicy and incredibly tasty.

Hedgehog Ingredients:


For sour cream white dressing you will need:

  • Sour cream (not thick) - 150 ml;
  • Broth (vegetable, thick) - 0.4 l;
  • Flour - 20 g;
  • Onion - half a large one;
  • Salt, spices at your discretion;
  • Butter (butter) - 40 g.

Cooking method:

  1. Chicken fillet needs to be ground into minced meat, if you have minced meat already prepared, then you can take it. Add to the minced meat, pepper and a couple of tablespoons of sour cream, and the same amount of softened butter (preferably butter) and leave it to stand.

  6. After the hedgehogs are fried on both sides, put them in a saucepan or pour them with sour cream sauce, and then simmer for 20–25 minutes over very low heat.
  7. Serve hot meat hedgehogs with rice, pour over the remaining sauce. If it is not, just pour sour cream. It will be very tasty.

Hedgehogs with rice and gravy in a pan

If you don't feel like making the gravy too much, you can make this option, it will make cooking shorter, require less time and effort.

Ingredients:


For homemade red gravy you need:

  • Tomato juice - 0.4 l;
  • Onion - half, if large or 1 medium;
  • Carrot - 1 pc. (small);
  • Bulgarian pepper - 150 g (1 large);
  • Salt - 0.5 tsp;
  • Pepper (ground) - 0.5 tsp

Cooking method:

For this recipe, we need a deep frying pan with a thick bottom. It is important that our rice hedgehogs do not burn. And we can cook only as many hedgehogs as it fits in it.

Cooking hedgehogs:

  1. First, fry the onion until transparent, then add finely grated carrots to it and also simmer in oil.
  2. Mix further in a large bowl. minced chicken, dry rice, frying and 2 tbsp. l softened butter. Salt the mixture and pepper. We let our stuffing stand.
  3. At this time, prepare the dressing in the pan. To do this, fry the onion again and add already coarsely grated carrots to it. Fry until golden.
  4. Then add the finely chopped bell pepper and spices, salt the mixture. When the mixture begins to boil, lower the heat slightly to medium.
  5. Then we roll hedgehogs from the meat mass and put them in our gravy in the pan. Now fry everything in a pan. Be careful not to burn the seasoning.
  6. When the hedgehogs are fried on both sides, pour the tomato juice into the pan and put the spices, salt again to taste. You can put 1-2 tbsp. l. butter or olive oil.
  7. Now close everything with a lid and simmer over low heat for another 30-40 minutes.
  8. Serve hedgehog balls with gravy and hot.

Hedgehogs with bechamel sauce

If you decide to cook beef hedgehogs, then serve them with bechamel sauce.

This original sauce very tasty in itself, and our hedgehogs with minced beef rice will get refined taste. They can also be served at the festive table.

Kids will also like these hedgehogs with sauce if you serve the sauce with meat broth. For adults, I recommend preparing a sauce with mustard.

Ingredients:

  • Minced meat (beef) - 0.5 kg;
  • Rice - 0.15 kg;
  • Oil (vegetable) - 70–80;
  • Sour cream (thick and fatty) - 60 g;
  • Onion (bulb) - no more than half a large onion .;
  • Carrots - 1 piece (medium size);
  • Fill:
  • Broth (we have meat, thick) - 0.5 l
  • Spices of your choice.

For the bechamel sauce we need:

  • Milk - 0.4 l (necessarily boiled);
  • Flour - 80 gr.;
  • Butter (butter) - 50 g.
  • Pepper (black, grated) - 0.5 tsp;
  • Nut (nutmeg) - 1/4 tsp.

In the finished sauce, add as desired:


Cooking method:

  1. We prepare ground beef and add sour cream and salt to it, let it stand a little (10 minutes) and put the rest of the ingredients: dry rice, fried onions and carrots. Then we form balls and fry them in refined vegetable oil.
  2. After that, we put it in a saucepan with a thick bottom and fill it with meat broth with spices (I put bay leaves, celery and a mixture of peppers to your taste). Or we prepare a dressing from 0.5 liters of boiled water, butter and olive oil and pork fat(we take 3 tbsp in total) and 1 tsp. salt. We also add spices to the water.
  3. Then, put our hedgehogs in the oven and simmer for 30-40 minutes at 160-180 C. You can cook on fire, but you need a saucepan with a thick bottom or non-stick coating. The fire is weak here.
  4. When the hedgehogs are ready, remove them from the fire.

bechamel sauce

  1. Melt butter in a deep frying pan and remove from heat. Now add flour to it and mix well. Put milk on fire again and cook until our sauce starts to thicken, now add the remaining milk and put pepper (ground), salt, nutmeg(grated). Let it boil again and take it off the fire. During cooking, the sauce must be stirred all the time, and it is cooked only on low heat.
  2. And you need to take the milk already boiled, so it will not run away.
  3. After the sauce has been removed from the heat, transfer it to a dry bowl and let it cool. And only then add a choice of table mustard, tomato paste or meat broth. It is not necessary to bring the sauce to a homogeneous consistency. Let it be with beautiful red or mustard stripes.

When serving hedgehogs, pour our sauce over them. It will be beautiful and delicious.

Cooking Tips:

  • Always simmer hedgehogs until all the water has evaporated. They will be tight and will not fall apart.
  • Make sure that the moisture evaporates, but the balls or the mixture do not burn.
  • If the hedgehogs burn, then you have too much fire or a thin bottom in the pan. Put a layer of grated carrots on the bottom of the pan, and lay the balls on it, so they do not burn.
  • Cooked balls with tomato paste or sauce can be served without gravy or sauce, but those with sour cream dressing are always served with herbs or green onions.
  • Pour the dressing so that it covers the hedgehogs by 1 cm. When the rice has absorbed the liquid by half, place a piece of butter on top of each hedgehog. It will be very tasty.   • onion - 200 g;
  • rice - 100 g;
  • garlic - 5-6 cloves;
  • vegetable oil - 1 tbsp. l.;
  • salt, pepper, spices, aromatic herbs - to taste.

For sauce:

  • meat broth - 250 ml;
  • sour cream - 200 g;
  • tomato paste- 50-70 g.

For the broth:

  • meat bones;
  • carrots - 1 pc;.
  • onion - 1 pc;
  • bay leaf - 1 pc;
  • peppercorns - 3-4 pcs.

The traditional combination of meat for a recipe for hedgehogs with gravy is beef and pork. Moreover, beef should be about twice as much as pork. The tenderest parts of beef are the rump, thin or thick sirloin. The stuffing from them is especially tender and juicy. The neck part of beef is less suitable for minced meat. She's too wiry and tough. The brisket doesn't fit at all. A lot of veins that are difficult to grind, bones, cartilage. Take pork for minced meat with fat. The neck part is ideal for this dish. A ham or shoulder blade is also good, but when cooking minced meat, then you need to add a little lard. Otherwise, the stuffing will turn out dry. Please note that chilled meat contains a lot of liquid, which can make the minced meat watery. It will be difficult to form hedgehogs from it, they may lose their shape. Therefore, it is recommended to take frozen meat of a fresh cut on the bone. The bones will also come in handy for us - they will go into the broth for stewing hedgehogs.

Rice for hedgehogs is better to choose golden, basmati or similar varieties. Such rice keeps its shape perfectly, it will not turn into porridge when stewing. Krasnodar rice may become too soft during cooking. This will spoil the look and taste of the dish. Opt for firm, non-starchy rice varieties.

Sour cream is suitable for any fat content. Preference, of course, give thick, and also not very oily. Tomato paste should be thick and bright. The color of the sauce will then be very beautiful. Then cut into small pieces.

Pass the meat through a meat grinder with a fine grate. The finer the structure of minced meat, the softer the hedgehogs will turn out.

Peel the onion and garlic, rinse with running water.

Chop the onion coarsely and pass through a meat grinder directly into a bowl of minced meat. Garlic should also be ground together with onions.

Rice preparation

You don't have to take a lot of rice. For a pound of meat, take about 70 grams of rice. This is maximum. Pour the rice into a saucepan, rinse well with cold running water. Change the water until it becomes completely clear. Pour rice with clean water and cook until half done. Stir the rice during the cooking process. Do not cover with a lid. When the grits soften a little, but the rice is still firm, turn off the gas. Throw the rice in a colander, rinse it with cold running water.

Pour rice into a bowl with minced meat, break an egg into it.

The egg is necessary for a good coupling of minced meat with rice. Hedgehogs cooked this way will be easier to shape. Add salt, freshly ground black pepper and mix well. Form them with a tablespoon. The amount of minced meat that fits in a heaping tablespoon is just the right size hedgehog. Form the minced meat into a round shape with wet hands. Wet your hands better warm water, so the hedgehogs will be easier to form and less sticky to the fingers. Lay the meatballs out on the board.
