Apricots are washed, inspected, paying special attention to the area adjacent to the stalk. If this area is dark, then the fruit is wormy.

During the "compote harvest" in the house, sterilized three-liter jars. Apricots are poured into a prepared dry jar.

Steep boiling water is poured into the jar. First, so much water is poured so that the bottom of the jar is only covered and warmed up, after 10 seconds half of the jar is filled with boiling water.
