Homemade ice cream is different from store bought ice cream. And always for the better. Even if you do not take into account that it is much healthier and more natural than the latter, it is also much tastier. It has the taste of natural products, fresh berries and fruits. The good news is that the berries and fruits from which this frozen delicacy is prepared lose very few vitamins, so this dish also turns out to be incredibly healthy. This option for serving seasonal fruits and berries will surely appeal to those who do not like to eat them raw. In the freezer, the delicacy can be stored for a long time, just like store-bought.

We offer two recipes, both very simple, you don’t need an ice cream maker, only molds and a blender. In the first recipe, we will prepare yogurt ice cream with condensed milk and strawberries, the second recipe includes a banana.

Light

Ingredients

  • 300 g fresh strawberries,
  • 2 glasses homemade yogurt(can be replaced with a store-bought one, always thick and without additives),
  • 1 glass of condensed milk
  • 2-3 tablespoons of sugar.

It is very easy to prepare yogurt ice cream at home, in order to make it tastier and more beautiful, we will add strawberries to it, condensed milk is also an important ingredient. Instead of strawberries, you can use other fruits and berries, this dessert will turn out great with raspberries or bananas. You can add chopped nuts to it, it will be especially tasty with pistachios and chopped almonds. Condensed milk can be used not only plain, but also with cocoa, then you get a light chocolate flavor. Once on vacation, I tried mango ice cream, oh, how bad that I didn’t have mango at home, so I would definitely make a sorbet with this fruit. With the pulp of a ripe peach or apricot, this dessert will also turn out great.

Wash the berries and sort. Place in blender or food processor.


Add yogurt and condensed milk. Put sugar. It is desirable that the yogurt is fatty and thick. The taste of ice cream depends on its quality.


Whisk everything well. Ice cream is more convenient to churn in a food processor, as it usually has a lot of splashes.


Pour the prepared mass into containers for freezing and send to the freezer. After a couple of hours, when the mass grabs, remove from the freezer and stir thoroughly with a spoon so that there are no ice crystals. And send it back again. It is better to repeat the procedure several times, about three to four times will be enough. Transfer the finished ice cream to bowls and enjoy the taste.

Recipe number 2. Yogurt, banana and honey ice cream

You can make homemade yogurt ice cream with just a few ingredients! And unlike the store-bought yogurt we know and love, you can make homemade yogurt that isn't loaded with sweeteners and artificial flavors. Very easy to cook.

My yogurt sorbet recipe includes 4 simple ingredient: bananas, yogurt, honey and peanuts, or other nuts. finished product contains only natural products. it delicious treat for those people who love sweets, but are limited in calories, since ice cream can be attributed to low calorie desserts. If you exclude bananas from dessert, then you can take any berry or fruit that you like best. So let's cook.

Ingredients:

  • Drinking yogurt 750 ml;
  • Banana 2 pcs.;
  • Honey 60 g;
  • Peanut 50 g.

Cooking

We buy bananas that are quite ripe, maybe even with a slightly blackened peel or dots. Such fruits have a greater aroma and a sweeter taste. Rinse well and dry with a towel before use. Now remove the peel and cut into slices. Transfer to either a deep bowl or blender bowl.

Pour honey. In my recipe, it's fresh and runny. The thickened product can be held a little in a water bath so that it only melts slightly.

To banana slices and honey, pour liquid yogurt, preferably homemade and unflavored. Now arm yourself with a chopper and punch the yogurt mixture until smooth. If lumps of fruit remain, it's okay. At this step, you can add a pinch of vanilla or cinnamon, lemon or orange zest, chocolate chips or melted warm chocolate.

Peanuts, if desired, can be pre-roasted and the skin removed, or use a system product. Cut into small pieces and add to the rest of the ingredients. Stir. The mass is ready for further freezing.

For freezing, it is most convenient and practical to take small forms for ice cream, dense disposable cups or silicone molds for cupcakes are also suitable. Pour the yogurt mixture into molds. Place on a shelf in the freezer. The freezing time is different for everyone, depending on the power of the equipment. In my case, it took about 5 hours for the yogurt mass to completely freeze.

Yogurt ice cream is ready. To easily get it out of the mold, hold it for 20-30 seconds in hot water.

  • 5 jars natural or vanilla yogurt

  • instant coffee
  • banana
  • chocolate spread "Nutella"

The basis of our ice cream will be natural or vanilla yogurt. By mixing it with various additives, we will get layers of future ice cream with different flavors - chocolate-nut, banana, coffee.

WE MAKE DIFFERENT FLAVORS OF YOGHURT ICE CREAM:

Chocolate hazelnut. Stir 2 tbsp. chocolate hazelnut paste(for example, Nutella) with a bowl of yogurt until smooth.

Banana. Post 1 ripe banana into the bowl of a blender, add 1 cup of natural yogurt and blend until smooth.

Coffee. 1 tsp good instant coffee pour 30 ml of boiling water, then mix with a glass of yogut and add 1 tsp. powdered sugar. Stir.

Cooking:

In order for the yogurt in the cups to solidify in layers, pour a 1 cm layer of yogurt of the same taste into the cups, put in the freezer for 30 minutes. Then pour in a new layer 1 cm high, freeze again for 30 minutes. Repeat the layers in the same way to the top edge of the cup. For decoration, sprinkle the top layer with ground nuts or chocolate chips.

Ingredients:

  • Yoghurt natural- 2 glasses
  • Sugar - 4 tablespoons
  • Fruits (peaches, apricots, plums, melon)- 1 glass
  • Lemon juice - to taste

Cooking method:

  1. Mix 2 cups natural yogurt with 4 tbsp. l. Sahara.
  2. In a separate bowl, put 1 cup of any chopped soft fruits (peaches, apricots, plums, melon), drizzle lemon juice and sprinkle with 2 tbsp. Sahara.
  3. Mash fruit with sugar

  • Milk - 1 glass
  • Cream - 1 cup
  • Sugar - 0.7 cups
  • Corn syrup- 0.3 cups
  • vanilla extract- 1.5 teaspoons

For the Mango Supplement:

  • Mango jam - 0.75 cups
  • fresh mango (cubes)- 0.75 cups

Cooking method:

  1. Whisk all the ingredients for the yogurt base in a container, leave for 5 minutes, then whisk again until the sugar is completely dissolved. Refrigerate for 2 hours until deep chilled.
  2. 3/4 st. mango jam and 3/4 tbsp. chop fresh mango in a blender. Mix with ice cream base by adding 1 tbsp. l. lemon zest.

4. Strawberry Rhubarb Yogurt Ice Cream

For the base - yogurt ice cream:

  • Yoghurt natural low fat- 3 glasses
  • Milk - 1 glass
  • Cream - 1 cup
  • Sugar - 0.7 cups
  • Corn syrup- 0.3 cups
  • vanilla extract- 1.5 teaspoons
  • Coarse salt - 0.25 teaspoons
  • Strawberries - 2 cups
  • Rhubarb - 1 cup

Cooking method:

  1. Whisk all ingredients in a container, leave for 5 minutes, then whisk again until the sugar is completely dissolved. Refrigerate for 2 hours until deep chilled.
  2. 2 tbsp. chopped strawberries and 1 tbsp. chopped rhubarb, add 1/4 tbsp. sugar and hold over medium heat until boiled, cool and mix with the ice cream base.
  3. Pour the mixture into an ice cream maker and cook according to instructions. If you do not have an ice cream maker, put the container in the freezer for 3-4 hours, take it out from time to time and mix the contents. In step 2, mix the filling with yogurt before freezing.

5. Blueberry Yogurt Ice Cream

For the base - yogurt ice cream:

  • Yoghurt natural low fat- 3 glasses
  • Milk - 1 glass
  • Cream - 1 cup
  • Sugar - 0.7 cups
  • Corn syrup- 0.3 cups
  • vanilla extract- 1.5 teaspoons
  • Coarse salt - 0.25 teaspoons

For blueberry supplement:

  • Basil (leaves) - 0.7 cups
  • Blueberries - 1.5 cups
  • blueberry jam- 0.5 cup
  • Fresh chopped basil- 3 tablespoons
  • Lemon peel - 1 tablespoon

Cooking method:

  1. The day before cooking, pour 3/4 tbsp. basil leaves with cream half and half with milk, put in the refrigerator, then remove the basil, use the milk mixture for cooking.

6. Gooseberry Yogurt Ice Cream

Ingredients:

  • Yoghurt natural- 2 cans
  • Cream 33% - 200 milliliters
  • Ripe gooseberries- 300 grams
  • Sugar - 50 grams

Cooking method:

  1. Sort the gooseberries, rinse and chop in a blender. Put the gooseberry puree in a saucepan, pour in a quarter cup of water and add sugar. Cook over low heat for 10 minutes. Strain and chill.
  2. Whip the cream into a strong foam, carefully combine with mashed potatoes, add yogurt, stir and put in the freezer for 2 hours.
  3. Whisk the ice cream with a fork or blender to break up the ice crystals. Return to freezer for another 2 hours and beat again.
  4. Shape ice cream into balls and serve garnished with mint.

7. Rainbow Yogurt Ice Cream

Ingredients:

  • strawberries - 200 grams
  • kiwi - 200 grams
  • bananas - 200 grams
  • nectarines - 200 grams
  • honey - 3 tablespoons
  • yogurt - 200-300 grams

Cooking:

  1. We put products for the first layer in a blender: strawberries, honey, yogurt. We break with a blender. Pour the layer into cups and put in the freezer for 15-60 minutes.

8. Yogurt ice cream with green tea and honey

For the base - yogurt ice cream:

  • Yoghurt natural low fat- 3 glasses
  • Milk - 1 glass
  • Cream - 1 cup
  • Sugar - 0.7 cups
  • Coarse salt - 0.25 teaspoons
  • vanilla extract- 1.5 teaspoons

To supplement with green tea:

  • Matcha green tea powder- 3 tablespoons
  • Honey - 0.3 cups

Masses. Pour over strawberry yogurt layer, freeze for 2 hours to make homemade yogurt ice cream.

    It is not always possible to find a fermented milk product without additives on the store shelf. But its sweetened and flavored variety is also a good option for a cold dessert. Given the concentration of sugar in it, the additional serving of sweetener should be reduced.

    Ingredients

    • Fruit-based yogurt (5 percent) - 500 ml.
    • Fresh pulp of berries - 300 g.
    • Powdered sugar - about 50 g.
    • Lemon fresh - 1 tbsp.

    How to make original yogurt ice cream

    Since we are using fresh fruits, they first need to be washed, and then remove the juicy skin from them. It’s not worth throwing it into the trash can - it’s better to grind the zest on a grater and combine it with powder, flavoring it with freshly made lemon fresh.     • Thick yogurt with high fat content - 400 ml.
    • Berry-raspberry - 300-400 g.
    • White sugar - 2/3 tbsp.
    • Fresh lemon juice - 1 tsp

    We put the washed berry in a bowl and with the help of a fork we turn it into gruel, add sugar, stir.
