2. Spanish Cinnamon Raisin Buns

Flour - 14 tablespoons;

3. Spanish buns with apples, nuts and honey

Milk - a little more than a glass;

10 ml olive oil;

Salt - half a teaspoon;

2 green apples;

A handful of walnuts without shells;

Butter - 350 g, including for lubrication of layers;

A pinch of powdered sugar and ground cinnamon.

1. Mix salt with flour.

2. Form thin rectangles from butter.

3. Divide the dough into two pieces, roll into a thin cake.

4. Put one rectangle of butter on the cake, wrap, pinch the edges and roll out.

5. Do this with the remaining rectangles of butter.

6. Wrap puff pastry in a plastic bag, cool in the refrigerator for 40 minutes.

Two more tablespoons of vegetable oil;

a teaspoon of dry yeast;

Two tea spoons of sugar;

120 ml of warm water;

Buns will be custard, so we need for it: milk - 350 ml, vanilla in a pod - 1 pc., butter, corn starch - 10 gr., chicken egg 2 pcs.

Ivan's advice: in order for the cooked buns to be delicious, do not forget to let them cool after baking and sprinkle with powdered sugar. It is the powder that gives taste and sweetness to your muffin.

I will tell you step by step, let's start cooking:

  1. First you need to heat the water, but at the same time it should not be hot, just a little warm. Pour in yeast and sugar. Dissolve everything so that there is no sugar left at the bottom;
  2. The finished mixture should stand for about 20 minutes and after this court, beat in the egg, sunflower oil and the last, add flour. It turned out a dough that needs to be well kneaded. Lubrication with an abundant amount of fat (lard - saim) also remains unchanged, which is reflected in the very name of these airy buns - there is some similarity with puff pastries, truth?

Sift flour into a large bowl. Add dry yeast, salt and sugar to it. To mix everything.
Now, making a small depression in the flour mixture, add the liquid ingredients - egg, warm water, vegetable oil. Knead the dough, it should be elastic, soft and not sticky at all.


Cover the bowl to keep the dough from winding and drafts. Leave to rise somewhere warm until the dough has doubled in size.


While the dough is rising, I melt the butter and leave it to cool. This, of course, is not entirely original recipe- it just uses very softened butter. But ... it's more convenient for me to work later, and specifically - in lubrication.

When the dough rises, take it out on a well-oiled work surface and divide into equal pieces. I divided it into 6 pieces.

Each piece of dough must be very thin, almost to transparency, rolled out (stretched) into a large rectangle. If you see that the dough is resisting, let it rest for a couple of minutes, and then start stretching again.


Then generously brush with melted butter.
Lay out a row of filling along a longer length, in my case it was apple marmalade. Although you can use any other fillings: grated apples with cinnamon and raisins, chocolate paste, custard, jam ...


And now just twist it into a "sausage", and then roll it into a spiral - a "snail". Try not to fold too tightly, let there be a small gap between each turn.


Carefully transfer the formed buns to a baking sheet lined with baking paper, and, after already, brush the surface of the buns again with melted butter.
Cover the baking sheet with the buns and leave them for half an hour so that they "fit" again.
