Even more difficult is to find a poppy that would be fresh, that is, had a good, not musty smell. Poppy contains a lot of oil, but does not have a shell, and therefore spoils quickly, especially when stored at room temperature. In just a year, it can become simply bitter! The most annoying thing is that the packaging date may be indicated on the bags, but the date of collection seems to be unknown to anyone.
Most manufacturers confectionery prefer not to mess with the poppy at all - it's easier to buy ready stuffing, it contains ground poppy, thickener, sugar, preservative - everything to get the finished product without much talk.

In connection with the foregoing, it is quite rare to taste truly delicious poppy seed pastries. Either poppy seeds are of average quality, then the bun in the store is stale, or even the filling is not too poppy ...
But then a miracle happened: at the Vienna Christmas market (by the way,) I bought big package excellent Austrian poppy. And then another package. And one more thing... And a package of white poppy seeds (I'll tell you about it later). And the poppy turned out to be just wonderful, fragrant, fresh, perfect for ... Of course, for a cake!
It was the cake - tender, brittle, crumbly and fragrant - that seemed to me ideal for the first test.
By the way, I always advise grinding poppy seeds when you want to add them to pastries. The easiest way to do this is in a coffee grinder, a blender is unlikely to cope. Can be ground in a mortar. But putting in whole grains takes away most of the flavor and aroma from baked goods. Even if you cook the filling (for buns or pies), it is best to grind it later - it will just taste better!

And a little about this cupcake. In principle, nothing new and complicated, but I want to say a few words about the coating. For cupcakes, both dusting with powder and finishing with icing or fondant is a necessary step, as it closes the pores and allows the cupcake to last longer. Here I covered the cupcake with powdered sugar and limoncello liqueur fudge, I think lemon fits perfectly here. Poppy-seed pastries with rum and even cream liqueurs are also good.

4 eggs
100g poppy
200g flour
170g sugar
1 tsp baking powder
1 tsp vanilla sugar

150g powdered sugar
1 tbsp limoncello
1 tbsp boiling water

oven 170C, form 20x10 cm, grease with oil and sprinkle with flour

To begin with, the poppy must be ground. Pour it into a coffee grinder in small portions, and grind so that it remains free-flowing.

For the test, all products must be warm, room temperature. Beat the butter with sugar (here is the beginning of whipping) until light.

Add three eggs one at a time, beating well into the cream each time.

The mass will eventually become quite liquid.

Pour the ground poppy seeds, vanilla sugar and pour in the last egg. Whisk everything together thoroughly for a couple of minutes.

Add flour with baking powder and mix.

Put the dough into a mold greased with oil and sprinkled with flour.

Send to the oven, bake at 170C for 45-50 minutes. Check readiness with a wooden stick, there should be no sticky dough on it. Cool in the mold for 10 minutes, then remove.

Once the cake has cooled, prepare the frosting. powdered sugar pour a spoonful of boiling water and a spoonful of limoncello, stir and heat well so that the glaze becomes smoother.

Pour over the cake.
