Prepare the ingredients according to the list.

Using a potato peeler or a special grater, cut the zucchini into thin strips.

Place the strips of zucchini in a deep container, sprinkle with a little salt, and leave at room temperature for 1 hour.

In the meantime, prepare the minced meat filling. Heat vegetable oil over medium heat. Add finely chopped onion and garlic, and stir-fry over medium heat for 6-7 minutes until the onion pieces release their juice and become soft and translucent.

Then add the minced meat, and, stirring, fry for another 10 minutes, until the minced meat turns white and becomes crumbly.

Add salt, ground black pepper, a mixture of dried Italian herbs and a pinch of sugar. Stir and fry the mixture for a few more minutes over medium heat until the liquid that the minced meat has almost completely evaporated.

Add canned own juice tomatoes, tomato paste and 1-2 bay leaves. Mix everything well and bring the mixture to a boil.

Then reduce the heat, cover the pan with a lid, and, stirring occasionally, cook the mixture for another 30 minutes.

Drain any juice from the zucchini.

Rinse the zucchini ribbons under running water, squeeze lightly and dry thoroughly.

In a separate container, combine thick sour cream, egg, finely chopped parsley and about half of the grated cheese. Add some salt and black pepper to taste and mix well.

Put a thin layer of minced meat on the bottom of a deep baking dish and add a layer of zucchini.

Lay out another layer of minced meat.

And layer sour cream sauce. And then repeat all the layers, gradually filling the baking dish.

Sprinkle the last layer of zucchini lasagna generously with the remaining cheese. Place the dish in an oven preheated to 180 degrees and bake for 40-50 minutes, until golden brown.

How to cook vegetable zucchini lasagna

  1. Wash the zucchini thoroughly, pat dry with paper towels and cut into thin slices. Put them in a separate bowl, salt them, let them stand (this will make them softer and easier to work with).
  2. Now let's prepare the bechamel sauce. Melt the butter in a saucepan, then gradually add the flour and mix well for 1-2 minutes.
  3. Pour in the milk in a thin stream, and quickly stir the mixture with a whisk. (Lumps may appear at first, but don't worry, they will dissolve quickly with vigorous stirring).
  4. Simmer until sauce thickens slightly, about 4-5 minutes, remove from heat, season with salt and pepper.
  5. Add a pinch nutmeg, mix, and gradually beat in the eggs one at a time, mix thoroughly.
  6. Grate hard cheese on a coarse grater, pour half into the sauce and mix. The sauce is ready, set aside to cool completely.
  7. Next, prepare the Bolognese sauce. Peel all vegetables and wash well.
  8. Cut the onion into small cubes, grate the carrots and send to the pan with vegetable oil.
  9. Grind tomatoes, peppers in a blender and add to the pan, mix and simmer for 5 minutes until cooked.
  10. Add minced meat to the sauce in the pan, salt and fry with the sauce until the liquid evaporates.
  11. All components are ready, now proceed to assemble the vegetable lasagna. Line a baking sheet with parchment paper and brush lightly with vegetable oil.
  12. The first layer is Bechamel sauce, the second is chopped zucchini (lay a little overlap so that there are no gaps).
  13. Next - "Bolognese", again "Bechamel", zucchini, and repeat everything again. Everything will turn out in three layers, sprinkle with the second half of the grated cheese on top.
