How to cook Turkish Delight? First, roast the nuts for 10 minutes. in an oven preheated to 200°C. Free the cooled hazelnuts from the husk.

Pour sugar into the pan, pour in water, add half the lemon juice or acid. After boiling, cook over low heat. When a drop of syrup solidifies in cold water, the caramel is ready.

Pour starch with water, add the rest of lemon juice or acid and cook over low heat until thickened. Then mix both mixtures thoroughly and boil over low heat for 20 minutes.

Cover the form in which Turkish delight will harden cling film or baking paper. Then pour in a hot viscous mass, smooth with a spatula and leave to cool completely for 6-8 hours.

  6. We boil our Turkish delight for about 40 minutes until it becomes even thicker and more viscous. Also, do not forget to periodically connect the mixer to the process and mix the contents of the pan so that nothing burns. If you are using potato starch, then I recommend boiling Turkish delight for about an hour so that it turns out to be more solid.
  7. About 5-10 minutes before the end of cooking, add literally a couple of grams of vanillin to the pan. In advance, we will prepare a container in which Turkish delight will solidify. It can be a deep plate or a small bowl. Its inner surface should be slightly greased with vegetable oil, and then covered with cling film.

  5. Add the almond halves and vanilla to the resulting mixture. Cook, stirring, over low heat until the mass thickens.
  6. To make the dessert more appetizing, you can tint it. This will help you food and natural dyes. The latter include the juice of cherries, beets, carrots, etc. If you are preparing a delicacy for yourself, then leave the color as it is - so Turkish delight will be tastier and less harmful.
  7. Place the hot vanilla-almond mass in a mold covered with cling film. Cool at room temperature, then place in the refrigerator for 5-6 hours.
  8. Remove the dessert from the mold and roll in a mixture of powdered sugar and starch. Cut the Turkish Delight into squares and place them in a strainer. Gently shake it several times so that the extra "breading" flies off the pieces of oriental sweetness.

Turkish delight with gelatin coconut flakes

There is another win-win option for preparing the famous oriental sweets. If you are afraid that your dessert will not harden for some reason, use the gelatin treat recipe. This product will speed up the curing process and allow you to enjoy Turkish Delight faster than usual. Another difference is that this method of preparation involves rolling the dessert not in a mixture of powdered sugar and starch, but in coconut flakes.

Ingredients:

  • large orange - 1 pc.;
  • small lemon - 1 pc.;
  • corn starch - 110 g;
  • purified water - 300 ml;
  • instant gelatin - 15 g;
  • powdered sugar - 3 tbsp.;
  • hazelnuts - 100 g;
  • food coloring;
  • coconut flakes - 100 g.

Cooking

  1. First of all, you need to wash the citrus fruits, and then remove the peel from them. This will leave you with the zest, which should be set aside for the time being. Try to remove the peel without a white layer - it will give the dessert unnecessary bitterness.
  2. Squeeze out all the juice from the pulp of the lemon and orange.
  3. Hazelnuts (other nuts can be used) fry in a pan, and then peel.
  4. Pour the resulting citrus juice into a saucepan with a thick bottom. Add 100 ml of water, powdered sugar and zest there. Send the saucepan to medium heat and, stirring occasionally, wait for the sweet crystals to dissolve completely. If the sugar caramelizes on the sides of the dish, brush it down with a damp pastry brush.
  5. Bring the mass to a boil. Reduce heat and continue cooking, without stirring, for another 5 minutes. Scoop a little of the mixture with a tablespoon, and then immediately lower the appliance into cold water. If the mass flows down in long thin threads, it can be removed from the stove.
  6. Dilute starch in 100 ml of water. Dissolve the gelatin completely in the remaining liquid. To do this, it is enough to draw water into a glass, add a gelling component to it, and then place the container in a bowl of boiling water.
  7. Add both mixtures to the sugar syrup, after removing the citrus peels from it. Mix well and place the saucepan over moderate heat. Add coloring (optional) and nuts. Cook until the mass becomes thick.
  8. Pour the mixture into a mold lined with cling film. Cool and then refrigerate for 5-6 hours.
  9. Remove the frozen dessert from the mold, roll in coconut flakes and cut into portions. Enjoy your meal!
