Turkish delight recipes. How and from what to cook homemade Turkish delight

Today I want to bring to your attention two wonderful recipes Turkish Delight. Turkish delight prepared according to these recipes not inferior in its palatability shop Plus, it'll be a lot cheaper. Many will not have to explain what kind of delicacy it is, but for those who have never heard of it, it is enough to know only the translation of the name this dish. "Rakhat" - comfort, pleasure, happiness. "Lukum" - pieces. So let's figure out how to cook these very real pieces of pleasure and happiness!

Kitchen appliances: stove, saucepan, metal bowl, thermometer, mixer, cling film.

Ingredients

Let's start cooking

  1. So, first of all, in a bowl where we will prepare the syrup, mix half a teaspoon of citric acid, as well as four cups of sugar. After that, fill the contents of the bowl with one glass of water.
  2. In a deeper vessel, such as a saucepan, pour one glass of starch and also fill it with water, about three glasses will be quite enough.

    It is also worth considering that for Turkish delight it is more preferable to choose corn starch, but if for some reason you only have potato starch, then feel free to use it. The only thing that this ingredient change will affect is that the finished sweetness may not be as hard as you would like.

  3. We put a pan with starch and a bowl of sugar on the stove. First, turn on the fire under the bowl of sugar. Gradually, the contents of the bowl will melt, first turning into a thick mixture, and then into a boiling liquid. At this stage, the temperature should be monitored very carefully. The syrup should be boiled at 130°C, so use a kitchen thermometer and adjust the heat as needed.
  4. When the temperature of the syrup reaches about 120-125 degrees, turn on the fire under the pan with starch. Cook it until it thickens, stirring occasionally with a tablespoon. Try to calculate the time so that the starch and syrup are cooked almost simultaneously.
  5. So, the syrup boiled for several minutes at 130 degrees, and the starch in the pan turned into a thick mixture. So it's time to move on to the most important stage of preparation! Pour the finished syrup into the pan and mix it thoroughly with starch. The procedure is far from easy, one tablespoon, and even more so with a whisk, cannot be handled. For this situation, the mixer is simply irreplaceable. Mix the contents of the saucepan until a homogeneous thick mass.
  6. We boil our Turkish delight for about 40 minutes until it becomes even thicker and more viscous. Also, do not forget to periodically connect the mixer to the process and mix the contents of the pan so that nothing burns. If you are using potato starch, then I recommend cooking Turkish delight for about an hour, so that it turns out to be more solid.
  7. About 5-10 minutes before the end of cooking, add literally a couple of grams of vanillin to the pan. In advance, we will prepare a container in which Turkish delight will solidify. It can be a deep plate or a small bowl. Its inner surface should be slightly lubricated vegetable oil then cover with cling film.
  8. We remove the pan with the almost ready Turkish delight from the heat and pour its contents into a previously prepared container.
  9. Leave the Turkish delight to harden for about 10 hours. It is most reasonable to cook it in the evening, and leave it to harden all night.
  10. We will use the most classic powder for freshly prepared sweets. To do this, we need two tablespoons of powdered sugar and exactly the same amount of starch. Roughly speaking, you need to mix these two ingredients to prepare the powder one to one.
  11. Well, the powder is ready, and the Turkish delight has stood long enough to harden. Sprinkle the table with a mixture of powdered sugar and starch, and spread the frozen delight on top of it. We remove the cling film from it, after which we cut it into cubes of the size you need, which we also do not forget to roll in the powder.

This video will also help you prepare this most popular oriental sweet all over the world. Check it out to once again make sure that there is nothing complicated in cooking Turkish delight. You just need to stock up on free time and patience.

Time needed to cook Turkish Delight: hour of cooking, 10-15 hours for solidification.
Servings: one or two large bowls.
Kitchen appliances: metal bowl, stove, thermometer, saucepan, mixer, cling film.

Ingredients

Let's start cooking

  1. First, I suggest preparing sugar syrup. In a metal bowl, mix sugar and water one by one. In our case, these are three glasses of sugar and exactly the same amount of water.
  2. We send the bowl to the stove and cook its contents to a boil. Also, do not forget to add literally half a teaspoon of citric acid to the liquid.
  3. After boiling, cook the syrup for another 10-12 minutes, until it begins to thicken a little. I recommend using a kitchen thermometer, it will help you control the temperature in the bowl and prevent the liquid from caramelizing. To do this, try to keep the temperature around 130 degrees.
  4. While the syrup is cooking, you can prepare the orange juice. We need 300 ml of freshly squeezed juice, for this we need 3-4 oranges. For convenience, we cut them in half and squeeze the juice out of them into a container convenient for you. If you have the opportunity and desire, then you can use a juicer. The resulting liquid can be strained to get rid of the pulp, but this is not necessary.
  5. Pour a glass of water and the same amount of cornstarch into the pan. Slightly mix the starch in water.
  6. Pour into the same pot Orange juice. For a more pronounced orange scent in ready dish You can add some crushed orange zest.
  7. Turn on the fire and cook the starch for a few minutes until it begins to thicken. As soon as this begins to happen, the fire should be reduced to the very minimum.
  8. We begin to add syrup to the pan. It is desirable to do so in small portions, after adding each, mix the contents of the pan thoroughly.
  9. Constantly stir the mixture in a saucepan with a mixer and cook it over low heat until it thickens completely. You need to stir the mixture very often, almost constantly, as there is a risk that it may burn or simply stick to the bottom.
  10. Turn off the heat and continue to mix the almost ready Turkish delight. Pour about a hundred grams into the thickened mixture. walnuts, which are immediately mixed in a thick mixture.
  11. It's time to pour the finished Turkish delight into a convenient container, where it will solidify, but first of all, this container needs to be prepared. Its bottom must be covered with cling film in advance.
  12. Pour the mixture from the pan into the prepared container, helping a little with a tablespoon.
  13. The hardest part is behind us, the little things are left to do. In this container, it is necessary to leave our yummy to solidify for 10-15 hours. In principle, you will already understand when the Turkish delight completely hardens, but it is worth noting that a lot depends on the depth of the dish where the mixture will solidify. The deeper it is and the smaller its total area, the longer it will take for this process.
  14. I suggest taking the powder for Turkish delight all the same classic. This is the usual mixture of starch and powdered sugar one to one (in our case, two tablespoons of both will be enough).
  15. Spread the completely frozen Turkish delight on the prepared powder and roll it in it from all sides.
  16. We cut it into cubes of the size you need, which we also roll in powder.

The video below will help you learn in detail the method of making Turkish Delight. Be sure to read it to understand for yourself all the subtleties of this recipe.

On this I say goodbye to you! Remember, there is nothing in cooking that you cannot cook at home. Experiment and cook exclusively with love for the process, and then the end result can not only please you, but lead you to a real delight! In this case, the sugar is completely dissolved, and the resulting syrup will slightly thicken. Ready syrup for Turkish Delight should leave clearly visible streaks on the walls of the saucepan.

While the sugar syrup is being cooked, we have time to prepare fruit or berry puree. For puree, any fruit and berries are suitable. For red Turkish delight, strawberry or cranberry puree is suitable, for green - from kiwi, for yellow - from apricots, peaches or oranges, for purple - from blackcurrant or chokeberry. And it can be used as fresh fruits, and canned.

To prepare orange puree, peel an orange and divide it into slices. Grind the slices with a blender until a homogeneous mass is obtained. Pour the orange puree into the syrup standing on the fire.

After we put the fruit puree into the syrup, mix the resulting mixture well and boil for a few more minutes. Dilute starch in 150 ml. water. Mix thoroughly until completely dissolved. In a thin stream, pour the starch solution into the sugar-orange syrup and continue to cook over low heat.

After 3-5 minutes, the paste will thicken so much that it becomes quite difficult to mix it. This means that our Turkish delight has been cooked and now, after cooling, it will solidify well and will not freeze.

At the end of cooking, the mixture is laid out in a flat culinary form, previously abundantly sprinkled with starch. Let the form with hot Turkish delight cool at room temperature for 10-12 hours.

After cooling, cover the form with a cutting board, and turn the whole structure upside down. A layer of Turkish delight is cut with a sharp knife into square pieces 2.5–3 cm in size. Roll the cubes of Turkish delight in corn starch, shake off the excess, then repeat this operation, but with powdered sugar.

Mix starch with water. Whisking constantly, bring to a boil and heat for 2-3 minutes. Pour sugar syrup into it. Stirring continuously, bring to a uniform consistency. After boiling, boil for 20-30 minutes on low heat. When the mass thickens, add nuts and flavoring.

  • Tangerines 7 pcs.;
  • Water 800 ml;

  • Vanillin 2 g;

When the lokum has hardened, take it out of the mold, cut into sticks or cubes and roll them in powdered sugar. The most important thing in cooking Turkish Delight is the sprinkling. It is needed not so much for beauty, but so that the sweetness does not stick to hands and dishes. For this purpose, powdered sugar is usually chosen, but coconut flakes are also suitable.

Pumpkin Turkish delight with seeds

Ingredients:

  • Sugar 400 g;
  • lemon acid½ tsp;
  • Water 2 ½ cups;
  • powdered sugar 1 pack;
  • starch 2 cups;
  • pumpkin 200 st. l.

Cooking method:

Cut pumpkin in half, remove seeds and peel. Cut into small cubes. Now we are preparing the seeds. To do this, clean them from pumpkin fibers, rinse and put on a towel to dry.

When they dry a little, put them on a baking sheet and put in the oven to dry completely, stirring occasionally. I determined that the seeds were ready when they began to "shoot". Also, the seeds can be dried in a pan or in the microwave (stir every 1-2 minutes).

Seeds cool and peel. Pour into a form for Turkish delight, pre-lubricated with oil (any) or covered with cling film. Now we start preparing Turkish delight itself. To do this, mix 1 cup of water with sugar. We put on fire and heat until the sugar is completely dissolved.

Then add to sugar syrup pumpkin and cook until done. When the pumpkin becomes soft, remove it from the heat, let it cool slightly and use a blender to bring the mass to a homogeneous state. We put it on fire again.

In the meantime, dilute the starch in 1.5 cups of water, the starch should completely dissolve. When the pumpkin syrup begins to boil, pour the starch into it in a thin stream, knead thoroughly so that lumps do not form.

Thoroughly knead the mass, cook over low heat until thickened, stirring constantly. Remove from fire. Allow to cool and pour into a pre-prepared form. If the form is not plastic, you can also fill in the hot mass. Put in the refrigerator to chill.

When the Turkish Delight hardens, turn the form over, cut into small squares and roll them in a mixture of powdered sugar and starch. It's just that powdered sugar can be quickly absorbed.
