Lecho from cucumbers for the winter - without sterilization

That this dish comes only from bell pepper- the opinion is erroneous, albeit a very common one. Although it won't work without pepper delicious lecho, but it's still not the main ingredient. Here, for example, is the recipe for this cucumber dish. Ingredients (for 4 liters of lecho):

Prepare for cooking tomatoes, garlic and hot peppers: wash the tomatoes, peel the garlic, remove the stalks from the pepper. Cut the tomatoes so that they fit in the meat grinder. Skip the prepared vegetables through a meat grinder.

Cut the bell pepper lengthwise, remove the stalks and seeds, rinse again. cut into strips. Peel and grate the carrot. To do this, use a large grater. Combine carrots with bell pepper.

Cucumbers cut across in half or into three parts, depending on the length of the cucumbers. The pieces must be 4–5 centimeters long, then cut the resulting parts lengthwise so that the thickness of the pieces is about 1 centimeter.

Saute a mixture of carrots and bell peppers within 15 minutes remember to stir occasionally. This should take some of the prepared oil. Put sautéed vegetables, minced tomatoes and chopped cucumbers in a saucepan. Add sugar and all the remaining oil to this mixture, salt, mix and put on fire.

Bring to a boil over medium heat, then reduce heat to very low. Add vinegar and stir. Cook under the lid within half an hour.

Even hot lecho decompose into hot dry jars. Fill jars to the very top. At once seal jars with lids. Wrap canned food with a blanket and leave for a day. Then they can be removed until required.

High-quality canning of vegetables and fruits is impossible without preliminary sterilization of jars, which destroys microorganisms that live in glass containers and can damage the workpieces.

Sterilization of jars at home makes it possible to store preservation for a long time. Before sterilization, the jars must be washed well (with soap or soda) and rinsed with running water. Jars volume and sterilization time:

  1. 0.5 and 0.75 liters - sterilize for 10 minutes;
  2. 1 liter - sterilize for 15 minutes;
  3. 2 liters - sterilize for 20 minutes;
  4. 3 liters - sterilize for 30 minutes.

And the first article for a new column is about overgrown cucumbers.

Very often, with a good harvest of cucumbers, housewives do not have time to process them. And they outgrow. The Internet is replete with advice on how to make salads for the winter from such cucumbers. Perhaps someone will need such recipes. I propose to think about beauty and about yourself. Therefore, my recipes will be about preparations for the winter, but not for food, but for beauty. And you'll learn how to use overgrown cucumbers for skin care all year round.

By the way, not only overgrown cucumbers are suitable for such purposes, but also soft ones that were not used in a timely manner and are waiting for their fate to go to waste. What can be done from overgrown cucumbers?

The simplest is cucumber masks. But how many cucumbers can be used for a mask? One two. And if you do something that can be used in the winter?

Making such a lotion is very simple, and the benefits of it are great.

Firstly: the product will not go to the trash, but will go into business. Second: homemade lotion keeps your hands warm. Third: the lotion is universal remedy for skin care.

What you need to make lotion

  3. Cutting board
  4. lotion jar
  5. Strainer for straining
  6. Container for storing lotion, preferably dark or matte.

I prefer to store everything in a glass container. Unlike plastic, it does not absorb odors and does not give them to the product. My lotion will overflow from the can into the dark beer bottle.

How to make lotion

Depending on the condition of the cucumbers, we decide whether to use them with or without the skin. I do it without the skin. I like it that way.

  1. My raw material.
  2. We clear the skin.
  3. Cut into slices 2-3 mm thick.
  4. We put it in layers in a jar, lightly tamping until the jar is completely filled.
  5. Pour vodka down the neck.
  6. We send the jar to a dark place to infuse for two weeks.
  7. After two weeks, we filter our lotion into a clean container.

Such a lotion can be stored at room temperature and used to degrease the skin, treat small wounds, and treat insect bites. Treating the underarm area with this lotion helps to cope with increased sweating.

I have already made my lotion, but have not yet poured it into a bottle.

Overgrown cucumber ice cubes

Making cucumber ice cubes is even easier than making lotion. Overripe and overgrown cucumbers, soft vegetables that have lost their gastronomic appeal, and freaks that are not suitable for conservation are used.

What needed to make cubes

  1. cucumbers
  2. Cutting board
  3. Blender or food processor
  4. Ice molds
  5. Cellophane freezer bags.

As you can see, we do not need anything supernatural.

How to make ice cubes

  1. My cucumbers.
  2. We clear the skin. We don't throw away the skins.
  3. Cut out the seeds if they are very coarse. Until we throw them away.
  4. Cut the cucumbers into small pieces of arbitrary shape.
  5. We send it to a food processor or mixer.
  6. Beat well until smooth.
  7. The resulting cucumber puree is poured into molds for making ice and sent to the freezer.
  8. Shake the frozen cubes into a plastic bag for freezing and send to the freezer.
  9. We repeat all the freezing steps until the prepared raw materials run out.
  10. Use as needed throughout the year.

You can strain the crushed raw materials and freeze pure juice. But I'm satisfied with the option with pulp.

Such cubes can be used to wipe the face and décolleté. Well tones and tightens the skin.

For ease of storage and use, I put the bags of cubes in plastic containers and put them in the freezer. I take out one container at a time and put it in the freezer of the refrigerator so that the cubes are at hand.

After the preparation of the cubes, the cut out coarse seeds with the remnants of the pulp and cucumber skins remained. Let's put them to work - we'll make hydrolate water.

The process of preparing hydrolate water is well described in Irina Lukshits's blog in the article "How to make hydrolate at home".

I did everything as Irina wrote. Only instead of flowers I used the remains of cucumbers, formed during the manufacture of cubes.


What you need to make hydrolat water

  1. Leftover cucumbers. You can also use the cucumbers themselves, cutting them not very finely.
  2. Container for cooking.
  3. Container for collecting hydrolate water.
  4. Strainer or steaming grate.
  5. The lid on which the steam will condense.
  6. Water.
  7. Towel.
  8. Frozen food from the freezer.

How to make hydrolat water

  1. We put a deep bowl in a saucepan to collect hydrolate water.
  2. Pour water into the pan so that it reaches the middle of the cup and does not fall into it when the water boils.
  3. Put the pot on the stove and bring to a boil. Check that no water gets into the bowl.
  4. Grind the cucumbers or use the leftovers from the cubes. It's not worth grinding too hard.
  5. We place the cucumbers on a sieve or a grate for steaming and put on a saucepan.
  6. Cover with upturned lid.
  7. On the inverted lid we put a towel soaked in cold water and well wrung out.
  8. As the towel heats up, cool it under water and return to the lid.
  9. The process continues until the cucumber skins are the color of pickles.

At first I did as Irina writes and put a bag with chicken hearts. But they quickly melted away. Replaced them with wet towels. The process didn't get worse.

I didn't wrap it in foil. The steamer grate fits very tightly into the pot. And the lid is quite heavy and lay flat and well. It was convenient for me to control the process of preparing water. Maybe everything went faster with the foil, but I had nowhere to rush.

I did not take a photo of the boiled cucumbers, so that it was clear to what extent the process should be continued.

The last photo shows the finished hydrolat in a bowl. Yield - about 250 milliliters from three handfuls of waste.

Hydrolate water has a mild smell of cucumbers. It is very soft and very refreshing.

Avid summer residents and gardeners often strive to plant as many cultivated plants as possible in order to get a rich harvest. But very often, due to the wide variety in the garden, people forget to pick ripened fruits on time, and this usually happens with cucumbers. If you are late, then on the table there will be a not quite high-quality crop: often the shoots are deformed, irregularly shaped, and the cucumbers themselves are not very tasty. But that's no reason to throw them away. You can’t just take and get rid of the result of your efforts. We propose to make blanks for the winter from such cucumbers. Salads with overgrown cucumbers are especially delicious. Here are some recipes without sterilization, just a few steps - and delicious snacks ready for the winter!


Overgrown Cucumber Salad

To prepare this salad, you will need the following ingredients:

  • cucumbers - 5 kg
  • onion - 0.5 kg
  • dill - 1 bunch
  • garlic 4 - 5 cloves
  • bay leaf - 5 pieces
  • black peppercorns - 10 pieces
  • vegetable oil - 0.5 l
  • vinegar 9% - 100 ml
  • granulated sugar - 6 tablespoons
  • salt - 3 tablespoons

The first rule is the complete sterilization of containers and closures. From five kilograms of cucumbers, approximately five cans with a volume of one liter are obtained. Chop the cucumbers into a prepared bowl. Chop the onion into cubes. In the basin where the onions and cucumbers lie, add garlic, spices, oil, chopped in a garlic press. Next, put the container with the salad on the stove and boil. If the cucumbers have changed their color, season the vinegar there and wait until the salad is cooked for another 5 minutes. After five minutes, the salad is packaged in steamed jars. Cucumbers at high temperatures release juice, so they will turn out marinated in their own sauce.


Salad with dill

Highly delicious salad obtained from the following ingredients:

  • cucumbers 10 kg
  • hot pepper - 2 tsp
  • horseradish leaves - 5 tsp
  • garlic - 50 grams
  • salt - 700 gr
  • dill florets and dill greens

After you have prepared all the ingredients, you need to chop the garlic, chop the greens and crush the pepper. We divide the available cucumbers into two parts of five kilograms. Grate the first five kilograms and grind with salt. Put the rest of the cucumbers with dill in a deep and large bowl, season with seasonings and salt, then add the grated cucumbers. Next, fill the entire salad with water so that all the vegetables under it disappear. We put the dishes with the salad in heat for about six days. After we lay out the salad in glass vessels and cork with lids. Subsequent storage should be at a low temperature.


And this salad is for lovers of dishes with a light point. If overripe cucumbers are seasoned with vinegar and vegetable oil, the taste will be incomparable. To do this, take:

  • cucumbers 2 kg
  • granulated sugar 100 gr
  • vegetable oil 100 ml
  • 70 gr vinegar (9%)
  • salt 2 tbsp. spoons
  • bunch of dill
  • ground black pepper 1 tbsp. spoon with slide
  • garlic - 2 cloves

The main ingredient in the salad is thoroughly washed, peeled, cut into cubes. Pour chopped cucumbers together with chopped herbs and garlic into a bowl, pour pepper and salt there. Pour all the contents with vinegar and vegetable oil. Leave the salad for four hours to marinate the cucumbers. After the allotted time has elapsed, the cucumbers should already release juice. It is needed so that vegetables are stored in jars in their own juice. So, we pack our salad tightly into jars. If you plan to store the salad for a long time, then you should put the jars to be sterilized. After sterilization, we seal the containers and do not touch them - let them stand in a cold place. If you are preparing a salad for lunch or dinner, then you can serve it almost immediately after the pickled cucumbers.


Delicious caviar from cucumbers

Cucumbers that are overripe and not suitable for eating fresh, as they have become excessively soft and slightly lethargic, they will become an excellent basis for cucumber caviar. For its preparation, the following products are needed:

  • 6 large cucumbers
  • one head of onion
  • 5 ripe tomatoes
  • three carrots
  • 2 sweet peppers
  • salt - 1 teaspoon
  • ground black pepper to taste
  • sunflower oil

First, peel the cucumbers, finely chop them into cubes. We do the same action with onions and peppers. Grate the carrots, turn the tomatoes into porridge. For cooking, you need dishes, the bottom of which is filled with vegetable oil. We spread the chopped cucumbers on the bottom of the dish and simmer until at least half of the juice has evaporated. After that, add the rest of the vegetables, salt and pepper to taste. We keep our caviar on fire until all the water has evaporated. To prevent the vegetables from “sticking” to the bottom, stir occasionally. Remove from heat and pack in containers.


Pickled cucumbers with horseradish

For cooking you need:

  • cucumbers 1 kg
  • garlic 3 cloves
  • small horseradish root
  • salt - 2 tsp
  • For marinade per liter of water:
  • sugar - 100 gr
  • vinegar - 150 gr
  • mustard - 2 tsp

We wash the cucumbers, remove the peel, cut into squares or circles, add salt and do not touch for 12 hours. The separated juice is drained, and the cucumbers are laid out in jars. There we also add the already chopped horseradish root and garlic. The marinade is prepared very simply: mix all the ingredients, put on fire and bring to a boil. Pouring hot marinade in bottles and cork. Cucumbers with horseradish are stored in a cold place.


Cucumber platter

An indispensable decoration of the festive table will be assorted vegetables, and a salad made from unsuitable, at first glance, overripe cucumbers will come in handy at any time. Required for cooking:

  • cucumbers 1 kg
  • 2 large carrots
  • 2 sweet peppers
  • one hot pepper
  • horseradish root
  • 3 garlic cloves

We get rid of the cucumber peel, seeds, then cut the cucumbers, peppers and carrots. We tamp the finely chopped horseradish and garlic to the bottom of the jar, and put the vegetables in a container, excluding the possibility of leaving a hollow space. Fill the jar with boiling water, wait 20 minutes, and drain it. Now add 2 tablespoons of salt, 4 tablespoons of sugar to the brine. Boil again and pour into jars again. Extremely tasty and bright salad ready as soon as it cools down. This is how you can make a salad of overgrown cucumbers for the winter. The recipes without sterilization presented here can be mastered even by a novice hostess.
