  • 50 gr honey
  • 50 ml water
  • 2 egg whites
  • some salt
  • 20 gr peanuts

For glaze:

  • 400 gr milk chocolate
  • 300 ml heavy cream

Cooking:

  1. Sift flour into a bowl, adding baking powder, cocoa.
  2. Beat the softened butter, adding sugar in portions.
  3. We introduce into the oil one egg at a time, continuing to beat, add vanilla sugar, salt.
  4. Carefully mix the dry mixture, pour in the fermented milk product in portions.
  5. We lay out the dough in equal parts in molds, bake at 180 degrees.
  6. Ready cakes should “rest” for about five hours.
  7. Peanuts roasted for about five minutes, peeled, chopped with a knife.
  8. We beat the oil.
  9. While whisking, add condensed milk one tablespoon at a time. The cream is ready.

  • 1 glass of granulated sugar
  • a pinch of salt

For impregnation:

  • 150 ml water
  • 1 st. a spoonful of sugar

For cream:

  • 1 pack soft butter
  • 1 can of condensed milk
  • a few drops of cognac

D for glaze:

  • 3 art. cocoa spoons
  • 30 ml milk
  • half a cup of powdered sugar

Cooking:

  1. Biscuit. Combine all ingredients, beat until tripled in volume.
  2. Mix flour with starch, mix in portions into the mass.
  3. Pour the dough onto a baking sheet covered with paper, bake at a temperature of 180 degrees.
  4. Let the cake cool down and rest.
  5. Meringue. Lightly beat the egg whites.

  • 10 gr gelatin
  • 100 condensed milk
  • 150 gr white chocolate

Cooking:

  1. Beat the eggs, add vanilla, sugar, continuing to beat, add flour, baking powder, butter, boiling water.
  2. Knead the dough, bake in a detachable form at 180 degrees.
  3. Pour gelatin with water, set aside to swell.
  4. Sprinkle the peaches with sugar.
  5. Heat until boiling, pierce with an immersion blender.
  6. Heat gelatin until dissolved, add to peaches.
  7. Mix everything, add citric acid.
  8. We cover the detachable form inside with cling film.
  9. Pour the peach mass, send it to the freezer.
  10. Pour a portion of gelatin with water, leave to swell.
  11. Dissolve gelatin by heating.
  12. Bring milk to a boil with 50 grams of sugar.

Ganache:

  • 200 ml cream
  • 400 gr chocolate

Cooking:

  1. Wash peanuts, dry.
  2. Pour on a baking sheet covered with parchment, roast in the oven at 100 degrees for 5 minutes.
  3. Grease the form with oil, cover with parchment.
  4. Preparing glucose syrup. Take a saucepan with a thick bottom.
  5. We place sugar, water, citric acid.
  6. We heat up to 115 degrees. The temperature is checked with a thermometer.
  7. Set aside, add soda, mix until the foam disappears.
  8. Cooking peanut butter. Take a frying pan with a thick bottom.
  9. Pour the peanuts, put on the stove, fry for ten minutes, stirring occasionally.
  10. Grind the peanuts in a blender, adding one tablespoon of powdered sugar, half a teaspoon of salt.
  11. Beat until peanut butter is obtained (about 15 minutes).
  12. Cooking caramel. Pour sugar into a saucepan, pour in cream, milk, syrup.
  13. Heat until sugar dissolves. The temperature should be 115 degrees.
  14. Pour out the peanuts dried in the oven.
  15. We put it in the form. Place in a sink of cold water until cold.
  16. Cooking nougat. Pour powdered sugar into a bowl, pour a little water, glucose syrup.
  17. Put on medium heat, stir. We cook up to 120 degrees.
  18. Beat 2 proteins in a mixer, pour in a little syrup, pour half a spoonful of salt, add peanut butter

  1. We start with meringue. Beat the chilled egg whites until soft white foam is obtained. Gradually add sugar, without stopping the mixer. We achieve a thickened lush mass. Properly beaten egg whites should remain perfectly still when tilted/turned over.
  2. We draw a circle on parchment - we circle a plate or any shape with a diameter of 22 cm with a pencil. Lubricate the paper with a small piece of butter, and then apply whipped proteins. We distribute the mass in an even layer, without stepping beyond the boundaries of the drawn circle.
  3. We bake the meringue at a temperature of 110-120 degrees for 2-2.5 hours, then cool completely.

  4. Cooking biscuit "chocolate in boiling water." Sift flour with cocoa powder and baking powder, mix with vanilla and regular sugar.
  5. Whisk in another bowl fresh egg until a copious amount of foam is obtained. Pour in to egg mass milk and refined vegetable oil, beat lightly.
  6. Partially (in 3-4 passes), add the dry mixture to the liquid ingredients, each time stirring the mass with a mixer until smooth. As a result, we get a fairly thick chocolate-colored dough.
  7. Pour boiling water and immediately beat the mixture with a mixer. The mass will become quite liquid, and bubbles will appear on its surface.
  8. Pour the dough into a buttered 22 cm diameter mold (biscuit and meringue should be the same size). We send it to the oven heated to 180 degrees for 40-50 minutes.   11. After cooling and peeling, load the roasted peanuts into the blender bowl. It is not necessary to achieve very small pieces - 2-3 turns of the knife will be enough. You can do without a blender altogether by placing the peanuts in a tight bag and tapping the top with a rolling pin.
  12. For cream, beat softened butter until fluffy. We work with a mixer for 1-2 minutes.
  13. Add boiled condensed milk to the butter and beat the mass until smooth.

  20. We heat the heavy cream to a hot state, pour it into the chocolate “shards”.
  21. Immediately begin to actively mix the mass with a whisk. We achieve complete melting of chocolate fragments and obtain a homogeneous composition, cool the finished mixture. If the mass turned out to be liquid, we remove the ganache in the refrigerator until it thickens and has a creamy consistency.
