Aronia wine at home

Wine from chokeberry - useful product However, diabetics are not allowed to drink it

Ingredients:

  • chokeberry - 5 kg,
  • sugar - 1 kg,
  • raisins - 50 g (optional),
  • water - 1 l.
  1. The berries are carefully sorted, removing unripe and spoiled ones. Carefully sterilize and dry the container where the wine will be prepared. Aronia is not washed to ensure natural fermentation.
  2. Each berry is crushed with clean hands and placed in a glass, enameled or plastic wide vessel with a capacity of 10 liters. Pour in the same 0.5 kg of sugar. A handful of unwashed raisins poured into the vessel positively affects the fermentation process. The resulting mass is thoroughly mixed and placed in a room with a temperature of +18°C - +25°C for seven days. Stir the whole mass 3-4 times daily.
  3. During this period, the ascent of berries to the surface is monitored. As soon as they gather in the top layer, they should be collected with your hands and squeeze the juice out of them. The squeezed berries are not thrown away, and all the juice (both remaining in the vessel and obtained during the extraction) is filtered through gauze or a colander and poured into a vessel where it will ferment, filling less than half of it. A water seal is installed on the container or a rubber glove with one pierced finger is put on, the fermentation container is placed in a dark place at room temperature.
  4. Pressed berries are mixed with 0.5 kg of sugar and a liter warm water about 30°C, stir and leave at room temperature in a dark place for five days. This mixture is stirred daily and the floating parts of the berries are drowned in it so that mold does not appear. After the expiration of the fermentation period, the mixture is filtered through a colander. The collected pulp can be thrown away, and the filtered juice is poured into a fermentation vessel and the water seal is put back on.
  5. Young wine is formed in 25–50 days, when the fermentation process ends - gas bubbles will not pass through the water seal for a day or the glove will fall off and will not rise again. By this time, sediment will appear at the bottom of the vessel, and the color of the drink will become lighter. Young wine is carefully poured into another vessel through a tube, without touching the sediment. Sugar can be added to the drink to taste or, for better storage, fix it with vodka or alcohol diluted to 40-45%.
  6. The wine will mature in filled to the top and tightly closed vessels for three to six months in a room with a temperature of 8-16°C. Once a month and a half, the wine must be filtered if sediment has appeared at the bottom. If sugar was added to young wine to improve the taste, then for the first time (up to 10 days) the shutter should be put back on the container.
  7. The finished wine is stored in hermetically closed bottles. In the refrigerator or cellar, it will retain its qualities for 3-5 years. Its strength is 10-12%, if there was no addition of vodka or alcohol.
