Squids are usually sold frozen. I advise you to choose unpeeled squid, as peeled clams are re-frozen, which reduces the quality of any product, and, moreover, such a delicate one as seafood.

It is better to take small squids - their meat is much more tender and softer.

How to properly process squid before cooking

Peeled squid

Defrost squid, like other seafood, should be either in the refrigerator or when room temperature. It is strictly forbidden to defrost the mollusk in the microwave or under hot water.

There are two processing methods:

1. After defrosting, cut off the tentacles, pull out the chord, turn the squid inside out and peel off all the films.

2. Dip the squid in boiling water for 30 seconds, as soon as the protein begins to curl, the film itself will detach from the carcass. Remove immediately and rinse off excess under running cold water. But you must remember that the heat treatment process of the product has been started and the squid has already begun to cook.

How to cook squid on the grill


Grilled squid

Put the squid on the grill for literally 1-2 minutes - the meat will instantly grab, become elastic. Remove from heat, salt, pepper - the product is ready for use.

The main thing is not to overexpose the squid on fire, otherwise you will get a hard rubber sole.

Before frying, peeled squid can be marinated in olive oil with a mixture of spices - salt, pepper, thyme, rosemary, coriander.

For marinade, you can also use kefir, sour cream, mayonnaise - depending on personal taste preferences.

Grilled squids can be served with green butter (thyme, rosemary, garlic, parsley, vegetable oil, olive oil) and baked lemon (cut the lemon in half, put on a preheated pan, leave for a couple of minutes, then bake in the oven for 15 minutes at a temperature of 180 degrees).

Cooking takes approximately 1-3 minutes - depending on the size of the clams. The universal cooking process is as follows: bring water to a boil, salt, pepper, throw in a bay leaf, lower the squid, wait the necessary time and immediately get the squid.

Prepared as classic soup from seafood. Cut shallots, garlic, thyme, fry everything in a frying pan in oil. Add the peeled squid, then a quarter cup of white wine, evaporate, pour over everything with vegetable or fish broth. Peel the tomatoes, grind to a puree consistency and add to the total mass. Bring to a boil, cook for 2 minutes, add butter, salt, pepper, sugar.

Cut the peeled squid into rings, salt and pepper. Separately, prepare the standard ingredients for breading: egg, flour, crackers. Roll the squid in flour, then in a well-beaten egg, again in flour and gently bread in breadcrumbs.

Put the breaded rings in the freezer for 10 minutes - this way the shape will “grab” and it will be easier to fry them. Heat the oil to 160 degrees, lower the squid rings into the oil for 1.5 minutes. Place on paper towel to drain excess oil. Serve with any sauces: tartar, adjika, garlic, sour cream or spicy sauces.

INGREDIENTS:
● 1 can (about 250 g) canned seaweed;
● 100 g of squid;
● 1 pc. carrots;
● 2-3 tablespoons of vegetable oil;
● 1 bulb of onion;

COOKING:

16. Squid salad with mushrooms

Ingredients:
Squids - 200 g
Frozen mushrooms (you can use champignons) - 100 g
Eggs - 2 pcs.
Onion - 1 pc.
pickled cucumber
Lemon juice
Mayonnaise, salt, fresh herbs (dill)

3. Cut the pickled cucumber into small cubes. Grind dill. Mix all the ingredients and season with mayonnaise, which is pre-mixed with a few drops lemon juice. We mix everything well.

INGREDIENTS:
6 eggs (whites only)
4 potatoes
150 gr. cheese,
2 cans of squid
1 jar red caviar.

RECIPE:
We rub the ingredients on a coarse grater and lay out in layers:

500 gr. squid (I got 3 things)

3. Grind the nuts (I use a blender). Add half to mushrooms, leave half for decoration.
4. Rub the cheese on a fine grater, add to the mushrooms.
5. Cut the cooled squid into strips, add to the salad.
6. Rub the garlic on a fine grater or squeeze through a press, mix with mayonnaise. We dress the salad.
7. Sprinkle the finished salad with chopped nuts and decorate with herbs.
I used my portion molds, which I really liked.

22. Salad "Forest secret" with squid and olives

Ingredients:
- Boiled squid fillet - 300g
- Olives - 80-100g
-1 large bell pepper
-Cucumbers - 2 pcs.
-Beans (boiled) - 250g
- Eggs - 5 pcs.
-Smoked suluguni cheese ("pigtail" - 120g
- Mayonnaise, salt, bunch of parsley

Cooking:
1. Boil the eggs until cooked, cool, peel (leave one egg for decoration), grate on a fine grater.
2. Cut the egg in half for decoration, remove the yolk from the “sharp” half (grate the yolk into a salad with the rest of the eggs), prepare a strong tea brew (I take two black tea bags per 300 ml of water), pour the tea leaves into a saucepan, put in tea leaves half an egg without yolk, bring to a boil, reduce the fire and cook for 4-5 minutes, remove the “hat” from the saucepan with a slotted spoon, cool and “dress” the second half of the egg.
3. Wash cucumbers, dry, cut into cubes.

- Cucumbers (a little salt), mayonnaise
- Squids
- Bulgarian pepper (a little salt), mayonnaise
- Olives
- Parsley
- Cheese (lay stripes all over the surface of the salad)
8. Decorate the salad with egg mushroom, whole olives and parsley leaves.
9. Put the salad in the refrigerator for an hour.

23. Salad "New Neptune"

Shrimps - 300 g (boil a little in salted water, dip in boiling water for literally three minutes),
squid (we bought in a bank) cut into cubes, pack crab sticks,
jar of red caviar,
pickle the onion in half rings,
five eggs (we only need the protein, which is cut into cubes. The yolks can be used in the design of the salad at your discretion), combine with mayonnaise.

Decorate beautifully.

24. Salad with CALMAR

Ingredients:
squid - 300-400 g
crab sticks - 200-250 g
eggs - 4 pcs
dill greens - 2 bunches
red caviar - 1 bank

How to choose

When buying frozen squid, pay attention to the color of the meat that is visible under the outer film - it should be whitish. The skin itself can be different - its color varies from pink to purple.

Squid carcasses should be easily separated from each other - stuck together may indicate that the product has already been defrosted.

The smaller the carcass, the sweeter the meat.

How to clean

The frozen squid carcass should be doused with boiling water - the film covering the meat will curl up - and it can be easily removed by hand. If the squids have already melted, fill them with hot, but not boiling (!) Water for 3 minutes. After that, remove the skin with your hands. From the inside we take out and remove the transparent chitin plates.

Now the squid carcass is ready for further cooking.

How to cook

Boil water, add spices to it (bay leaf, peppercorns - to taste). Dip the squid carcasses into boiling water, cover with a lid and ... turn off the stove. After 10 minutes, the squids are ready. They will be soft and tender. Cut squid and add them to salads, sandwiches, sushi, pasta and risotto.

How to stew

Best with vegetables and sour cream! The secret of the dish is to first fry vegetables (onions, carrots, garlic), bring them to readiness and only at the very end add squids (3-5 minutes before the end of cooking) and simmer under a lid over low heat. Otherwise, the squid will turn out rubber. Braised squids are good with rice or pasta.

How to fry

Squids are fried over high heat for one minute, after which the stove is turned off - and squids reach under the lid. Squid rings are dipped in lezon and deep-fried, they can also be cooked in batter or in breadcrumbs.
How to marinate
Squids are marinated for 1-2 hours. As a marinade, mustard, boiling vegetable oil with spices, and soy sauce are most often used.

Salad with squid


Ingredients:
Pearl barley - 250 g
Squid (carcasses) - 1 kg
Zucchini (small) - 4 pcs
Lemon juice - 2 tbsp
Nutmeg - 6 pinches
Pepper (red cayenne) - 6 pinches
Olive oil - 4 tbsp.
Salt
Pepper
Description

Boil pearl barley in boiling salted water for 30 minutes. Cut the squid into rings 1 cm wide. Fry in a saucepan over high heat until all the liquid has evaporated. Add salt, pepper, nutmeg and red cayenne pepper. Fry over low heat for 10 minutes, then add olive oil, stir and remove from heat.

Wash the zucchini, dry and cut into slices. Ready pearl barley rinse under running cold water, transfer to a salad bowl, add squid, zucchini and lemon juice. Stir and serve immediately.

Stuffed squid

Ingredients:
4 servings;
- 8 small whole squids, peeled;
- 30 g butter, plus a little more for frying;
- 1 head of onion, finely chopped;
- 2 cloves of garlic, crushed;
- 60 g fresh bread crumbs;
- 1 tbsp chopped fresh dill;
- 1 tbsp chopped parsley;
- salt and black pepper;
- lemon slices and chopped parsley for serving.

Cooking method:
1. Coarsely chop the squid tentacles and set aside;
2. Prepare the filling: melt the butter in a frying pan, put the onion and garlic, close and fry under the lid on low heat for about 15-20 minutes, until softened.
3. Add the chopped squid tentacles, breadcrumbs, dill and parsley to the onion and garlic and fry on high for 2-3 minutes. Season with salt and pepper and leave to cool.
4. Stuff the squid carcass cold filling and fasten on top (stitching the top of each squid with a stick (toothpick) so that it does not open).
5. Heat a little butter in a clean frying pan and cook the stuffed squid for 4-5 minutes, until the squid is golden brown and firm to the touch on all sides and the filling is heated through.
6. Garnish the squid with lemon slices and parsley and serve immediately.

Beans with mushrooms and squid

Would need:
2 cans of beans in s / s
3 squid
1 onion, 1 chili pepper

Butter - 100 g, squid fillet - 30 g, onion - 50 g, pickled cucumber - 1 pc.

Cooking method
Fillet boiled squid passed through a meat grinder. Pickled cucumber is peeled, seeds, finely chopped and juice is squeezed out. Onions are finely chopped and fried in butter (take half a portion). The prepared products are combined with the rest of the softened butter, mixed thoroughly and cooled.

4 carcasses of squid, one onion, 150 grams of cabbage, one carrot, fish broth, tomato paste, vegetable oil, salt, pepper.

Take two squid carcasses, finely chop, then chop the onion. Heat up a frying pan, add some oil and fry the onion and squid. Then take them out of the pan and leave to cool. In the same pan, adding oil again, fry finely chopped vegetables, cabbage and carrots for 15 minutes.

Having combined the squids and vegetables, fill the two remaining carcasses with the resulting mixture, put them in a saucepan, add half a glass of fish broth and simmer under the lid for 15 minutes.

When serving squid, garnish with chopped fresh tomatoes, cucumbers and herbs.
