Cheese soup for a child. Cheese soup

With melted cheese it turns out very appetizing, beautiful and most importantly - unusually tasty! Your kids will definitely love it.

You will need:

Chicken breast - 300 grams;

Chicken broth - 1 liter;

Soft - 100 grams;

Leek - 100 grams;

Long grain rice - 80 grams;

Butter - 2 tablespoons;

Ground black pepper - on the tip of a knife;

Parsley greens - 4 sprigs;

Salt - to taste.

This soup, seasoned with soft processed cheese, is so nutritious and tasty that it can be the only lunch dish, leaving a feeling of fullness for a long time. In preparation, it is quite simple, and significant costs are not required.

To cook this soup, they take chicken fillet and chicken broth, processed cheese (or other soft varieties), leek, long-grain rice, butter, ground black pepper, fresh parsley sprigs and, of course, salt.

The skin is removed from the chicken breast, and the flesh is cut into several parts, poured with water (cold) and boiled for about 25 minutes after boiling over low heat (to become soft). Cool and cut into small pieces.

Rinse the rice with cold water until it is completely transparent.

Cut off the white part of the leek and cut it into half rings (the thinner the better).

Put on a heated pan butter, then chopped onion in half rings and pieces chicken fillet. Fry everything together until golden (to lightly browned).

Tie the parsley greens into a bundle with a thread.

Pour the broth into a saucepan and bring to a boil. Put the parsley and washed rice into the boiling broth, cook over low heat for 10 minutes (so that it boils slowly).

Put in broth chicken breast, fried with onions, add salt and pepper, cook over low heat at a low boil for another 5 minutes.

At 1 year old, the diet of children, as a rule, consists of ordinary adult food, although still in a form adapted for babies. The child's menu is filled with a variety of products. By the age of one and a half, children can be transferred to 4 meals a day, because the set of products has become more satisfying, and the child’s body needs at least 3-4 hours to digest food.

First meal

Soups for children are not only useful, but necessary. The first dishes contribute to the production of gastric juice, which is necessary for the proper assimilation of the following dishes.

Cook vegetable, meat, fish, milk, cheese soup, puree soup and even fruit soup for children. Using different vegetables, grains and pasta, your chicken broth will be the basis for a huge amount different dishes. But the variety of broths is also great. Thus, soups will not become boring for your child, and you will have the opportunity for culinary experiments and an incentive to create your own recipes.

Meat broths

Meat broth is a universal basis for making soup for a child. The broth recipes are very simple. For cooking, you will need 1 kg of lean meat (beef, rabbit, turkey, chicken), 3 liters of water, salt. Boil the meat over low heat, carefully remove the foam. Remove the cooked meat from the broth. This broth is ready to cook any soup or puree soup: pea, rice, buckwheat, cheese, etc.

Pea soup

Chicken soup with meatballs

  1. Prepare minced chicken as in the previous recipe.

  2. Form portions of minced meatballs.

  3. Add carrots, parsley root to boiling chicken broth.

  4. Cook the meatballs for 5 minutes in the broth.

Soup - mashed rabbit

Rabbit meat is very rich in protein, minerals and vitamins. Therefore, it is useful to cook a rabbit for children. It is sometimes useful to soak rabbit meat for 1-3 hours to get rid of the peculiar smell and make the meat softer.

  1. Rinse 150 g of rabbit meat, add water.

  2. Cook for 35-40 minutes.

  3. Get the meat, chop and send to the broth along with the potatoes cut into strips.

  4. We introduce passivated carrots and onions 7-10 minutes before removing from heat.

  5. Grind the slightly cooled soup in a blender, add sour cream to the soup - puree.

Vegetable soup - puree is one of the first to be introduced into the baby's complementary foods. Therefore, for children, this is one of the favorite dishes. After 1 year, vegetables do not need to be chopped. In recipes, you can gradually introduce those products that were difficult for digestive system up to 1 year.

Vegetable soup - puree

Milk soups

  • Dairy. Their boiled ingredients, for example, vermicelli or cereals, are poured with boiling milk (until the age of two, milk is diluted twice with water). This soup is rich in proteins, starch and vitamins, it is quite satisfying and many children like it.
  • Cereals or pasta. Such a dish is quite satisfying and gives the child a lot of carbohydrates, vegetable proteins and B vitamins. For children, rice or buckwheat soup is most often cooked, adding vegetables to such cereals.
  • From beans. For children under one year old, you can cook soup puree from green peas or green beans. Also, young beans and peas can be added in small quantities to vegetable first courses. Dry pea soup appears in the diet of children from 3 years old.
  • Cheese. Such a dish can be prepared in water, vegetable or chicken broth. Its ingredients are quite often vegetables and boiled chicken, but the main "highlight" is the cheese. A small amount of grated hard cheese add to it at the end of cooking and wait for the cheese to melt. This gives the dish a special taste and delicate texture. Cheese first courses are recommended for children older than a year, but processed cheese should not be added to them until the age of 3.

  • With meat. Pureed boiled meat is added to children's vegetable puree soups since the introduction of meat complementary foods. For children older than 10 months, a little broth can be added to vegetable soups, and it is advised to cook them in meat broth from the age of one. The meat in them for a child of 2 years old can already be small pieces. Such dishes are often boiled from rabbit or beef. Soups with meatballs are also popular for children over 1.5 years old.
  • Chicken. For children under one year old, such a dish is prepared with the addition of lean chicken meat, after which everything is crushed to obtain mashed potatoes. Babies older than a year begin to cook chicken broth soup, for which low-fat chicken is used. From 1.5 years old, children begin to offer first courses with chicken meatballs, and from the age of 3 you can cook them on whole chicken. No less tasty they are obtained from turkey.
  • Fish. This version of the first dish is introduced into the children's diet from 1 year. First it is used river fish carefully pitted. It is boiled separately and then added to a soup with vegetables or cereals at the end of cooking to make a puree soup. A little later, the child can be treated with soup with fish meatballs, cooked separately, and you can also start cooking soup in a weak fish broth.
  • Mushroom. They are quite difficult to digest, so they are not recommended for preschool children. Also, soups that should not be tried at an early age include pickle, hodgepodge and kharcho. Include them in the children's diet should not be earlier than 3 years.

How to cook

In order for the soup to be useful for the child, it is important to take into account the following principles when preparing it:

  1. Cook them for babies only from those products that the child has already tried. If you want to add new ingredient, not yet introduced into complementary foods, it should be the only new component of the dish, presented in a very small amount, for example, 1 spoon of broth.
  2. Use special purified water intended for children (bottled) for cooking. For young children, do not cook soup with tap water, even if it is boiled.
  3. When choosing vegetables, make sure they are fresh. It is unacceptable to use damaged, overripe or rotten vegetables for feeding children. Before cooking, all vegetables should be thoroughly washed, then peeled and cut into not too small pieces (with strong chopping useful material break down faster). It is not worth frying vegetables in the cooking process until the age of 3.
  4. If you are going to cook soup with meat for your child, this product should be with a minimum of fat. When cooking the broth, it is recommended to use the second or third water (drain the first water after boiling and pour the meat with clean water).
  5. Children should only be fed fresh soup so don't boil too much. Don't give little child a dish that has been stored in the refrigerator for more than a day.
  6. For better preservation of valuable compounds in products, do not cook them for too long. Strong fire is permissible only to bring water or broth to a boil, after which heating should be minimal.
  7. Until the age of three, strong meat, fish or chicken broth is advised to be avoided. Also, for a children's first course, you should not use bouillon cubes.
  8. In the finished dish, you can add a little vegetable or butter, yolk. From a year old, soup for a child can be sprinkled with chopped herbs.
  9. If the child does not refuse unsalted soup, salt is not necessary. The less salt there is in dishes for children under 3 years old, the better. However, if the child is categorically unwilling to eat unleavened soup, a small amount of salt is acceptable.

Recipes

From zucchini

Take 100 g of a vegetable, wash it thoroughly, removing the seeds and peel, and then cut into medium-sized pieces. Boil the zucchini until tender and pass it through a sieve while still hot or chop with a blender. Dilute the puree with broth and bring to a boil, and then add a piece of butter or a pounded quail egg yolk to the soup.

From a rabbit

Rinse and then cut into pieces 100 g of rabbit meat, then boil until tender. Next, peel and cut the potatoes and any vegetables to taste (cauliflower, zucchini, Brussels sprouts, green beans, carrots and others in a total volume of about a handful). Boil vegetables in water until soft, add boiled rabbit meat and grind with a blender until a semi-liquid puree.

from fruit

Take one apple, one peach and 3 apricots, peel the fruit and remove the stones. Boil them in a small amount of water until soft, then wipe them with a sieve. After adding a teaspoon of semolina to the fruit puree, boil for 3 minutes, then add the mashed yolk and 100 ml of milk to the soup, stirring the dish continuously. When it boils, immediately remove the dish from the heat. You can give it to your child both warm and chilled.

For children over one year old

Borsch

Such a dish children's version can be cooked only from vegetables, with the addition of boiled meat or meat broth. You can cook borsch both on the stove and in a slow cooker. Take beets, carrots, onions, tomatoes, a few potatoes and 100 g of shredded cabbage for the dish. After washing all the vegetables, peeling them and chopping them, put them in boiling water, taking into account the duration of their heat treatment.

First, boil the potatoes and onions, then the grated carrots and beets, and finally add the cabbage and chopped peeled tomato. Add salt and herbs to the dish to your liking. If the child is already 2 years old, borscht can be seasoned with low-fat sour cream.

With vermicelli and chicken meatballs

For such nutritious soup take onion, carrot and 2 potatoes. Cut the vegetables and boil in lightly salted water for 10-20 minutes. Next, add meatballs from minced chicken mixed with egg and salt. After 5 minutes, add vermicelli to the dish. Boil until all ingredients are ready, and sprinkle with chopped herbs before serving.

Pumpkin with semolina

Peel and grate the pumpkin, and then boil it until half cooked. Add half a glass of milk and a teaspoon of semolina to the soup. Boil the ingredients until tender, remove from heat and pass through a sieve. Dilute everything with boiled water, add a teaspoon of sugar and boil the dish for about 3 minutes. Milk with oatmeal

Semolina porridge "Naughty"

You can serve this cold porridge for breakfast or dinner, as well as for dessert for lunch.

Would need: 150 g semolina, 3 cups milk, 1/3 cup sugar, 2 tbsp. spoons of cocoa, 150 g of jam.

Boil the liquid and immediately pour half in an even layer on a baking sheet moistened with water and sprinkled with sugar.

Add cocoa to the remaining porridge, stir and pour evenly over the first layer of porridge, cool.

You can lay out the porridge in layers in glass vases or molds.

Serve the porridge cold, pouring it with jam. Serve milk with porridge.

Milk soup with dumplings

This soup as a breakfast will be eaten by both small and adult members of the family.

Would need: 2/3 cup flour, 1 egg, 1 tbsp. a spoonful of butter, 1 glass of water, 5 glasses of milk, 1 tbsp. a spoonful of sugar.

Mix flour with egg, ½ tbsp. tablespoon butter and ½ cup water. Knead the dough.

Cut the resulting dough with a spoon into dumplings and cook in boiling milk, adding ½ cup of water and sugar to it.

Serve on the table, seasoning the soup with butter.

Milk soup with potatoes

For 3-4 servings you will need: 1 liter milk, ½ cup water, 3 potatoes, 1-2 tbsp. tablespoons of butter, 4-5 sprigs of parsley or dill, salt to taste.

Peel potatoes, wash, cut into cubes. Pour in water and boil. Then, without draining the water, add milk, salt and bring to a boil.

When serving, season the soup with butter and sprinkle with finely chopped herbs.

Milk soup with biscuits

Would need: 150 g cookies, 5 glasses of milk, 1 tbsp. spoonful of sugar, 1 tbsp. a spoonful of butter, 1 incomplete spoonful of cinnamon.

Grind the cookies in a mortar, sift through a sieve, pour into boiling milk and remove from heat.

Then add sugar, butter, and serve.

Carrot and orange soup

This delicious and healthy soup bright orange color looks very beautiful and will surely please your children.

When the curds are melted, beat the contents of the pan (except carrots) with a blender or mixer into a puree. When serving, sprinkle the soup with chopped herbs.

Omelet with tomatoes and onions

Cut the tomatoes into slices and stew a little in a pan with vegetable or butter, adding onions. Onions can be taken onion or green.

Would need: 2 cups milk, 3 eggs, 1 teaspoon salt, 1 teaspoon dry herb mix (parsley, cilantro and dill), 1.5 cups flour. In addition, 100 g each of carrots, white and cauliflower, oil for frying.

Mix milk with salt, eggs and herbs. Add flour and knead the dough. Leave the dough for 30 minutes in a warm place to rise.

Rinse vegetables, peel and cut into pieces, add a little salt.

Dip the pieces of vegetables first into the dough, and then put them on a preheated pan. Fry on both sides until golden brown.

Serve schnitzels with sour cream or melted butter.

Schnitzels are good and cold, but they can always be warmed up in microwave oven or in the oven.

White cabbage baked in milk sauce

For 1 serving you will need: 180 g white cabbage, 40 g milk sauce, a piece of butter, ground crackers, salt to taste.

Chop the cabbage into strips and simmer until tender in salted water. Pour ¼ of the milk sauce into a frying pan greased with butter, put the cabbage, pour the remaining sauce, sprinkle with breadcrumbs and bake in the oven.

Drizzle with butter before serving.

Cauliflower, baked with minced chicken

Prepare this dish for a second dinner for the whole family.

For 4 servings you will need: 1 cauliflower, 400 g minced chicken, 1 onion, 1 egg, 50 g Dutch cheese, 100 g sour cream, salt and black ground pepper taste.

Cabbage, without dividing into inflorescences, put in a pot of boiling salted water. Cook for about 5 minutes. Add salt, pepper to the minced meat (if you cook for small children, you don’t need to pepper), chopped onion, egg. Mix thoroughly, stuff the cabbage between the inflorescences with it.

Transfer to an oiled dish with a lid in which it will be baked. Top the cabbage with sour cream. Cover and bake at 200 degrees for 40 minutes.

Remove the lid, sprinkle the cabbage with grated cheese and bake until the cheese is melted.

Cauliflower baked with cheese

Casseroles prepared according to this recipe will be enough not only for your kids, but for the whole family.

Would need: 800 g cauliflower, 2 onions, 2 tbsp. tablespoons flour, 150 g milk, 100 g grated cheese, 30 g butter

Cool the cabbage boiled for about 10 minutes in boiling salted water, disassemble it into small inflorescences.

Melt the butter in a frying pan, lightly fry the finely chopped onion and flour on it. Salt, pepper. Whisking constantly, pour in the milk.
