  • vegetable oil - 2 tbsp. spoons in the dough + for frying.

Cooking

We take deep dishes. Beat eggs until smooth, add sugar and salt. Pour milk into the egg mixture, pour the sifted wheat flour. Mix thoroughly. Let the dough rest for 15-20 minutes.

Pour the oil into the same bowl. Stir all the ingredients again. Place a frying pan over medium heat, grease it with a little oil. Scoop out the dough with a ladle and carefully pour it into a hot frying pan. Fry pancakes on both sides until golden brown.

"Zagrysh" - the second day of Maslenitsa

In the evening, young girls guessed at their betrothed, so they served classic pancakes with different fillings. It was believed that with what filling the girl eats a pancake, her future husband will be with such a character. We bake yeast pancakes, and decide how to stuff them yourself.

Pancakes from yeast dough for stuffing


Ingredients:

  • milk - 900 ml;
  • flour - 650 g;
  • eggs - 2 pcs.;
  • granulated sugar - 3 tbsp. spoons;
  • salt - on the tip of a knife,
  • butter - 50 g;
  • dry yeast - 14 g.

Cooking

I'm preparing the steam. In a deep bowl, mix the yeast with a glass of warm milk, sugar and a spoonful of flour. Set aside for 10-15 minutes. During this time, a fluffy "hat" should form in the bowl. In another container, beat the eggs, grind with sugar and salt, pour in the milk.

Melt the butter over low heat or in the microwave, add to the egg-milk mixture. Pour in the broth, stir well. Gradually add the sifted flour. And again, mix everything to avoid the formation of lumps. Fry in a preheated pan on both sides for 1-2 minutes.

"Lakomka" - the third day of Maslenitsa week

On this day, the mother-in-law invited her son-in-law to her home and treated her to sweet pancakes. We bake chocolate pancakes, they will definitely be to the son-in-law's liking.


Ingredients:

  • milk - 800 ml;
  • flour - 360 g;
  • egg - 4 pcs.;
  • cocoa - 80 g;
  • dark chocolate - 100 g;
  • granulated sugar - 100 g;
  • salt - a pinch.

Cooking

Break the chocolate into small pieces. Melt in a water bath, add 400 ml of milk, wait until the chocolate is completely dissolved in milk. It is advisable not to bring this mixture to a boil.

Beat the eggs with sugar and salt, pour out the cocoa powder, pour the remaining milk, mix well with a whisk or mixer.

Pour the milk-chocolate mixture to the eggs, stir, add the pre-sifted flour. Thoroughly mix all the ingredients until a not too liquid consistency is formed. We send the dough to the refrigerator for a couple of hours.

We take out the dough, pour sunflower oil into it, proceed to fry the pancakes.

"Rampant" - the fourth day

Here comes the fun part. Spring was greeted with buns in the form of larks. Comic fistfights were arranged on the streets, they rode a hill, danced and treated pancakes until late in the evening. Let's cook delicious pancakes on kefir.


Ingredients:

  • kefir - 1 liter;
  • boiled water - 1 glass;
  • eggs - 4 pcs.;
  • wheat flour - 2 cups;
  • butter - 1 tbsp. a spoon;
  • sour cream 15% - 1 tbsp. a spoon;
  • granulated sugar - 1⁄2 cups;
  • salt - 1 teaspoon;
  • soda - 1/3 teaspoon.

Cooking

Mix kefir with sugar, salt, sour cream and butter. We put to bask on a slow fire, until the sugar grains are completely dissolved. We make sure that the kefir does not boil. Cool the finished mass a little.

In a separate container, beat the eggs, add the sifted flour and soda, mix well. Pour part of the cooled kefir mass and stir thoroughly to avoid the formation of lumps. Add the remaining kefir and water. Allow the finished liquid dough to “rest” for 5 to 10 minutes.

We fry the pancakes. We spread the finished pancakes on top of each other, smearing with butter.

"Teschiny gatherings" - the fifth day of Maslenitsa

Now the son-in-law must call the mother-in-law to visit, entertain and feed delicious pancakes. Cheese pancakes with greens will be a great treat.


Ingredients:

  • milk - 3 cups;
  • flour - 2 cups;
  • cheese - 300 g;
  • sugar - 2 teaspoons;
  • salt - 2 teaspoons;
  • baking powder - 2 teaspoons;
  • vegetable oil - 4 tbsp. spoons;
  • fresh herbs (dill, onion) - a bunch.

Cooking

In milk at room temperature, stir sugar, eggs and salt. Three cheese on a fine grater, add to the milk mixture, mix thoroughly so that the cheese does not come together in a lump. Sift flour with baking powder (can be replaced with soda), add to a bowl with milk. We stir well. We wash the greens, remove excess moisture, finely chop, pour into the dough. We pour out the oil. We stir everything again. We bake pancakes in a heated pan.

"Zolovkina gatherings" - day six

This Saturday, the daughter-in-law invited the groom's relatives to visit her and tried to demonstrate her talents. On the table were supposed to be chicly decorated dishes and unusual pancakes. And we can bake pancake rolls with salmon.


Dough Ingredients:

  • kefir - 0.5 liters;
  • water - 0.5 liters;
  • flour - 500 g;
  • eggs - 2 pcs.;
  • granulated sugar - 4 teaspoons;
  • salt - 1 teaspoon;
  • soda - 1⁄2 tsp;
  • vegetable oil - 4 tbsp. spoons.

For filling:

  • salmon fillet - 200 g;
  • curd cheese - 300 g;
  • sour cream 15% - 2 tbsp. spoons.

Cooking

Mix in a deep bowl, kefir, boiled water, granulated sugar, salt and eggs. Pour soda into wheat flour and pour the resulting mixture in a thin stream. Mix thoroughly. We leave aside for 30 minutes. Let's start preparing the filling. Mix cheese and sour cream. Cut the fish fillet into strips.

The dough for pancakes "approached". Let's start frying. We cool the finished pancakes, grease with a sour cream-cheese mixture, put strips of fish in the center and wrap them in a roll. We cut into three parts. Decorate with fresh herbs.

Forgiveness Sunday - Day 8

And so the Masleny week came to an end. On this Sunday, everyone asks each other for forgiveness for their misdeeds, they burn an effigy and see off the winter. Let's surprise the guests and cook a pancake cake with cottage cheese.


Dough Ingredients:

  • flour - 350 g;
  • granulated sugar - 40 g;
  • vanillin - 0.5 tsp;
  • eggs - 2 pcs.;
  • milk - 1.5 cups;
  • butter - 20 g;
  • soda - 1⁄2 tsp;
  • rock salt - on the edge of a knife.

For filling:

  • granular cottage cheese - 400 g;
  • cream 35% - 400 g;
  • powdered sugar - 150 g;
  • cherry jam - 6 tbsp. spoons.

Cooking

Add melted butter, eggs, soda, granulated sugar, salt, vanillin and wheat flour to the milk. Knead a slightly thick dough with a whisk. Set aside for an hour.

Let's deal with the filling, for this you need: rub the cottage cheese through a sieve, mix with 1⁄2 part of the powdered sugar. Whip cream until stiff peaks, add remaining powdered sugar, beat again until the sugar grains are completely dissolved. Mix cottage cheese and cream, rub with a fork until smooth.

We fry pancakes.

We connect the cake. We shift one pancake onto a flat dish, grease with a tablespoon of cream, evenly distributing the curd-creamy mass over the entire pancake. Cover with the next pancake and do the same procedure.

We coat the fourth and eighth pancake with 3 tbsp. jam spoons. We coat the pancakes until the cream runs out. pancake cake ready with cottage cheese. We send it to the refrigerator for a couple of hours so that it has time to soak.

  • If you are cooking yeast dough, start kneading it for 5 hours.
  • The flour for pancakes must be sifted, this will loosen it, and your dough will be softer and more fluffy. Remember that you need to sift flour not in advance, but directly during the preparation of pancakes.
  • If you want your pancakes to be tasty and beautiful, use only fresh eggs. It is also recommended that you beat the eggs well before adding them to the dough.
  • Pancakes will turn out tastier if the egg yolks for the dough are cooked separately from the proteins.
  • When kneading the dough for pancakes, it is important to follow the cooking sequence. Remember that sifted flour should never be added to a liquid mixture. First you need to mix all the liquid ingredients, and then in a thin stream, stirring constantly, add the mixture to the flour.
  • Do not beat the pancake dough for too long, otherwise it will become too viscous.
  • If you knead too thick dough, you can dilute it. However, do not add milk to it, otherwise the pancakes may start to burn. It is better to add water to the dough, but do not overdo it! You can also add beer to the dough, then the pancakes will turn out thin, but strong.

  • It is important to start baking pancakes at the right time: the dough should rise, but not settle. No need to mix it, take the dough with a spoon from above.
  • The pan in which you are going to fry the pancakes must be clean. It is better if it is a special frying pan, in which you will cook nothing but pancakes.
  • Before you start baking pancakes, be sure to heat the pan well.
  • Pancake dough is poured into the pan in a thin layer. If you added oil to the dough, then you need to grease the pan with oil only before the first pancake. It is important not to overdo the oil.
  • When pouring the batter into the pan, hold it in one hand and the ladle in the other. The dough should be poured into a hot pan quickly, while tilting it in different directions so that the dough is quickly and evenly distributed over the surface.
  • It is recommended to fry pancakes on moderate heat. You need to turn them over when the edges are already dry, and the middle is covered with "pimples". The pancake should separate well from the surface.

Recipes:

chocolate pancakes

Ingredients:

1 st. flour, 2 eggs, 2/3 tbsp. milk, 1/3 tsp. salt, 3 tbsp. sugar, 20 g butter, 50 g dark chocolate; - vegetable oil for frying pancakes

Cooking method:

In a bowl, mix eggs, milk, sugar and salt. Melt chocolate with butter in a water bath. Shake the egg mixture lightly. Stir the chocolate and butter with a wooden spatula. Add flour and beat until smooth. Add chocolate. Stir well

We heat the pan, grease with oil and bake like ordinary pancakes, but they will be a little thicker. These pancakes are best served with sauce.

Pancakes with meat

Ingredients:

2 eggs, 2 tbsp sugar spoons, salt 1 teaspoon, flour 1 cup; milk 2 cups, minced meat 250g., carrots 1 piece, black pepper to taste.

Cooking method:

Prepare the filling: fry the minced meat, add the carrots grated on a fine grater, season with pepper and salt. Bring to full readiness for 10 minutes, stirring constantly and avoiding the formation of lumps. Beat the eggs, add a little salt and milk. Sift the flour and pour into the mixture, stirring to add the remaining milk. Stir until smooth liquid sour cream. Heat a frying pan over high heat, add oil and pour a small amount of dough. Fry on both sides until golden brown - no more than a minute on each side. Place st. a spoonful of minced meat and wrap it in a tube or envelope.

Pancakes with ham and cheese

Ingredients:

Ham 200 gr.
Cheese 100 gr.
Greens to taste.

Cooking method:
Cook pancakes according to your favorite recipe.
Cut the ham into thin strips. Cheese grate on a coarse grater. Wash greens and finely chop.
Mix ham, cheese and herbs and add a little stuffing to the bottom of the pancake.
Wrap with a tube and cut in the middle at a slight angle.
Reheat before serving in a skillet or in microwave oven until the cheese is melted.

Pancakes stuffed with cottage cheese, raisins and lemon

Ingredients:

for pancakes: flour - 1.5-2 cups, milk or water (or water with milk) - 0.5 liters, eggs - 2-3 pcs, sugar - 1 tablespoon, vegetable oil - 1 tablespoon, salt.

for curd filling: cottage cheese - 250 g, sour cream - 2 tablespoons, raisins - 50 g, lemon - 1/4 pc, sugar - 2-4 tablespoons.

Cooking method:

Bake pancakes. If pancakes are cooked with filling, then they do not need to be fried until golden brown, but only lightly fried on both sides so that the dough is baked. For curd filling: grind cottage cheese with a fork in a bowl, add sour cream and mix well. Pour boiling water over raisins and leave for 15 minutes. Wash the lemon and pass through a meat grinder or grate on a fine grater along with the zest. grated lemon add sugar and mix well. Add steamed and dried raisins and lemon with sugar to cottage cheese with sour cream. Mix the stuffing well. Put the filling on the edge of the pancake and roll the pancake with an envelope (if you want to roll the pancakes with a tube, then you need to spread the filling on the entire surface of the pancake and then roll it into a tube - in this case, you do not need to fry the pancakes). fry on both sides until golden brown.

Pancakes with berry sauce and ice cream

Ingredients:

Pancakes - 4 pcs. (Change the proportions depending on the number of pancakes), butter - 60 gr., Assorted frozen berries - 200 gr., Sugar - 100 gr., Ice cream - 100 gr.

Cooking method:

Bake 4 pancakes according to your favorite recipe. Melt the sugar in a frying pan, dip the pancakes on one side in caramel. Put on a plate. Put the berries and butter in a frying pan with caramel. Simmer the sauce. Put a ball of ice cream on a plate with pancakes, pour over everything with berry sauce. Decorate with a sprig of mint.

Pancakes "Grandma"

Ingredients:

1 liter of milk, 5 eggs, 1/3 teaspoon salt, 2 tablespoons sugar, 0.5 tablespoons of baking soda, citric acid at the tip of a knife, 2-3 tablespoons of vegetable oil, 1.5 cups of boiling water.

Cooking method:

Beat milk with eggs, add sugar and salt to the whipped mixture, beat again. Then add soda and citric acid. Add flour to the mixture until it looks like liquid sour cream. The amount of flour depends on the size of the eggs. As a rule, it takes about 4 glasses. Add vegetable oil to the resulting mixture and bring to the desired consistency with boiling water. Leave the dough for 15 minutes. Then bake pancakes on both sides. The pan should be oiled only once. Pour 1 tablespoon of oil, heat it up and pour it into the dough (in addition to the already added one). Thanks to this trick, pancakes will not stick to the pan.

Pancakes Russian yeast

Ingredients:

600 g wheat flour, 1 tablespoon sugar, 5 teaspoons butter, 1 egg, 25 g yeast, 1 teaspoon salt, 4 cups milk, 3-4 tablespoons olive oil.

Cooking method:

Heat 3 cups of milk, dissolve yeast in it, add 1/2 tablespoon of sugar, salt, egg yolk and melted butter. Mix everything and add 300 g of flour. Knead the dough, cover with a towel or napkin and put in a warm place for fermentation. After about 2 hours, when the volume of the dough has doubled, dilute it with the remaining milk, preheated. Add the remaining flour and sugar and gradually pour in the well-beaten egg white. Knead the dough again and let it rise. In total, the dough should ferment for about 3 hours. Grease a frying pan with a thin layer of vegetable oil and heat until the smoke disappears. Carefully scoop out a portion of the dough with a spoon and pour into the pan. When the bottom side of the pancake is browned, brush the top side with vegetable oil and turn over. When the second side of the pancake is browned, again grease the upper side with vegetable oil and transfer the pancake to a pan wrapped in a towel. Serve pancakes hot or warm with honey, sour cream or jam.

Such pancakes can be baked in the form of hearts for your loved ones and dear ones. In order to create such beauty, you just need to pour the pancake mixture into plastic bottle, cork which to make a hole and draw directly on a hot pan.

Ingredients:

2 eggs, 3 tablespoons of sugar, 1 teaspoon of vanilla sugar, 100 ml of vodka, 0.5 teaspoon of salt, 1 liter of kefir with a fat content of 1%, flour, 1 teaspoon of soda, 3 tablespoons of vegetable oil.

Sift the flour and, stirring, gradually add until the dough acquires the consistency of thick sour cream. Add vegetable oil and soda slaked with vinegar. Stir and let stand for about 20 minutes. Then gradually pour in boiling water, beating the dough until it resembles liquid sour cream. Heat vegetable oil in a frying pan. Pour in a little dough and spread it over the entire pan in a circular motion. Flip the pancake over to the other side and cook for another 30 seconds. When all the pancakes are ready, brush them lightly with butter, sprinkle with sugar, fold them into quarters, put them in a saucepan, sprinkle with 2 tablespoons of sugar on top and put 100 g of butter. Cover with a lid and put in a warm oven for 15 minutes.

Oat pancakes

And for those who are on a diet, but really want to eat pancakes, we offer diet recipe pancakes from oat flour. Such pancakes are not like their counterparts and turn out to be plump.

Ingredients:

1 glass of oatmeal; -125-150 ml of milk (half of the norm of milk can be replaced with water), 1/2 tsp of soda, slaked lemon juice, 1 teaspoon honey (or brown sugar), 1 egg, vanillin, a pinch of salt.

Cooking method:

We grind the eggs, you can immediately with salt, sugar and soda. Then add milk and stir well, you can do this with a hand mixer at low speed so that splashes do not fly. Then add the flour and stirring with the same mixer, we achieve a homogeneous mass. The consistency of the dough is like thin sour cream. Fry pancakes on both sides in a dry frying pan. Pancakes should be pretty thick.

Recipes for making pancakes on kefir

You can cook soft pancakes on kefir, thin, openwork, custard - there are several options.

Recipe for soft pancakes on kefir

You will need:

3 cups of kefir, 2 cups of flour, 2 eggs, 1 tbsp. sugar, ½ tsp salt.

How to cook soft pancakes on kefir:

Grind the egg yolks and sugar until white, pour in 2 cups of kefir, mix until smooth, gradually, stirring, introduce the sifted flour. Beat egg whites with salt until fluffy. Pour the remaining glass of kefir into the dough, mix in the beaten egg whites, bake pancakes in a greased pan in the usual way- fry on both sides until browned over medium heat.

The recipe for making thin pancakes on kefir

You will need:

150g flour, 120ml kefir, 80g sugar, 75ml water, 50g butter, 3 eggs, 1/3 tsp. salt.

How to cook thin pancakes on kefir:

Mix the sifted flour with sugar and salt, mix the water with kefir, gradually add to the flour, kneading the dough, beat in the eggs, beat everything with a whisk, pour in the non-hot melted butter, mix. Pour the dough into a well-heated frying pan greased with vegetable oil and fry the pancakes on both sides until browned.

If the pancakes are not too thin, add a little more plain or soda water or milk to the dough.

The recipe for thin custard pancakes on kefir

You will need:

200 ml of kefir, 1 egg and a glass of flour, ½ cup boiling water, 2 tbsp. sugar, 1 tbsp. vegetable oil, 1/4 tsp. soda, salt.

How to cook thin custard pancakes on kefir:

Mix the flour with salt and sugar, beat the eggs with kefir, combine the mixtures, beat with a whisk until smooth. Pour soda into boiling water, pour it into the dough, mix and leave for 5 minutes. Pour vegetable oil into the dough, mix, cook pancakes in the usual way in a pan with vegetable oil, frying on both sides.

If the dough is too thick, add some warm water.

Recipe for openwork pancakes on kefir with milk

You will need:

500 ml of kefir and milk, 3 eggs, 1.5-2 cups of flour, 1 tbsp. sugar, 2 tbsp. vegetable oil, ½ tsp soda, ½ tsp salt.

How to cook openwork pancakes on kefir:

Kefir and milk should be warm, eggs should be at room temperature. Beat eggs, put soda in kefir, then pour in a little milk, mix. Pour the kefir mixture into the egg mixture, add sugar and salt, beat. Pour flour into the liquid, mix, pour in gently, stirring, the rest of the milk, butter, mix. Cook pancakes in the usual way in a pan with vegetable oil on both sides.
