    Thoroughly beat the egg mass with a mixer or blender. If these devices are not at hand, use a whisk or a regular fork. Beat until a dense, white foam appears on top and the mass has increased in volume several times. In order for this to happen faster, try to use cold eggs, you can even send them to the freezer for 5 minutes, after breaking them.

    If you want to get vanilla or cinnamon flavored starchy pancakes, add these spices, varying their amount at your discretion. And if you like chocolate pastry- put cocoa, just do not overdo it so that the products do not taste bitter.

    Whisking continuously, gradually pour in room temperature milk. By the way, it can be diluted with water, then the pancakes will turn out even more dietary. Beat until the mixture has a uniform consistency.

    At this stage, starch must be added. It is better to sift it through a sieve, then the finished sheets will be more tender, and unpleasant lumps will not form in the dough.

    Potato starch can be replaced with corn starch, but it will need twice as much of the first.

    Thoroughly knead the resulting dough. If lumps still form, break them with a mixer or grind the mass through a sieve. Keep in mind that the dough with starch turns out to be more liquid than with flour, you should not try to thicken it.

    It remains to add sunflower oil. Use a product that does not have a strong odor - this can spoil the taste ready meal. Once again, mix the dough well so that the oil completely “merged” with it, and a homogeneous mixture was obtained.

    You can start frying the pancakes. To do this, use a pancake pan. If there is none, take the usual one, but then you will have to make a little more effort when turning the products over. Grease a frying pan with a thin layer of vegetable oil or lard, and place on medium heat. When it warms up well, pour in a small portion of the dough, using a ladle for this purpose. Then quickly rotate the pan in a circle so that the mass spreads over the entire surface. Bake for about a minute on each side, the resulting golden crust will serve as an indicator of readiness. Try to turn the tender pancake dough over very carefully so as not to damage it. To do this, you can use two shoulder blades, working with one, supporting the edge with the other.

    Pancakes on starch and milk are completely ready! You can wrap stuffing in them: cottage cheese with raisins, an apple with cinnamon, a banana, etc. But these pancakes are great as an independent dish.

    We beat the eggs into the bowl, add salt and sugar - the amount of sugar depends on your desire to cook sweet or savory pancakes.

    Mix everything thoroughly with a whisk, to prepare this dough, you can also use a mixer at medium speed.

    Pour in about half of the milk and pour in all the starch.

    Mix well until all lumps disappear completely.

    Add the remaining milk and, without stopping stirring, bring the mass to a homogeneous state.

    You can use both milk and milk mixed with water in this recipe.

    An important condition for the preparation of starch dough is that milk and eggs should not be cold, but at least at room temperature.

    As soon as the mass becomes homogeneous, pour in the vegetable oil and mix again.

    The dough should turn out to be quite liquid - it is similar in consistency to heavy cream, don’t let that scare you, it differs from the flour-based pancake dough we are used to, which is more viscous.

    Since this dough does not contain gluten, it does not need to be infused, but you can immediately start baking pancakes.

    We put the pan on the stove, heat it well, and then reduce the heat to medium power.

    Lubricate the pan once before baking the first pancake, then it is not necessary to lubricate it.

    Pour the dough into a well-heated pan and spread it quickly, as the starch begins to swell instantly.

    Given that it is liquid and spreads well in the pan, the pancakes are quite thin.

    As soon as one side is browned, turn over to the other, keep in mind that the starch dough cooks very quickly.

    We bake pancakes on both sides, but you don’t need to fry them very much, but to make the finished pancakes even softer and more tender, it is advisable to grease each pancake with melted butter.

    Keep in mind that starch quickly settles to the bottom, so before frying the next pancake, the dough must be mixed well.

    Despite the fact that we pour the dough in a very thin layer and do not lubricate the pan during the baking of pancakes, they are perfectly removed from it.

    Thus we bake all pancakes.

    From this amount of dough comes out 23 pieces, with a diameter of 20 cm.

    Today I want to offer you a recipe for the most simple pancakes that only exist - on starch. Such pancakes are prepared without flour, from eggs, starch, salt and sugar. From two chicken eggs, 6 thin pancakes are obtained, they can be stuffed, although the pancakes are thin, they are quite dense, they do not tear when lightly touched. For one medium-sized chicken egg, you need to take one teaspoon of starch, I use corn starch more often. So, if you have a couple of eggs left in the refrigerator, then you can cook pancakes for dinner in a few minutes. Serve these pancakes with sauce, vegetables, meat, poultry, pates, or jam, fruits or berries.




    - chicken eggs - 2 pcs.,
    - corn starch - 2 tsp,
    - sugar - 0.5 tsp,
    - salt - 1 pinch,
    - vegetable oil - for greasing the pan.

    How to cook with a photo step by step





    So, prepare according to the list of products. Take a deep bowl. Wash chicken eggs, dry, beat into a bowl.




    Add granulated sugar to the eggs and add a pinch of salt. Regular sugar can be replaced with vanilla. If you want to cook chocolate pancakes you can add some cocoa powder.




    Add two teaspoons of cornstarch. If you wish, you can go traditional way cooking pancakes - add milk, increase the amount of starch.






    Prepare the mixer, beat the eggs and starch with a mixer for 15-20 seconds.




    Heat a pancake pan, grease with a very thin layer of vegetable oil. Pour in the egg-starch dough - literally a third of a ladle. Fry the pancake on one side for 3-5 seconds.




    Flip the pancake over and fry. Pancakes are baked instantly, so you should not leave the stove.






    Serve ready-made pancakes with sauce or any fillings - vegetables, fruits, etc.

    I must admit that pancakes, whether on kefir, milk or water, I always bake using flour. But when I saw the recipe for making pancakes without flour, just on starch, I wondered what would come of it.
