Turkey meatballs are a great option for lunch or dinner. They are very satisfying, juicy and tasty, children like them, and the figure will not deteriorate from them.


Products

500-600 g of minced meat (pork or beef, or a combination of them is better)
2 onions
1 medium carrot
7 art. l. raw rice(a little less than a glass)
1 egg
favorite spices (pepper, garlic, suneli hops, paprika, etc.)

Rice for meatballs is better to take round-grain. Ideal for sushi rice. It is exactly what I have in my photo.
Rinse rice to clean water, pour into a saucepan with a thick bottom, pour water, covering it by 3-4 mm. Bring to a boil, boil for about 3 minutes or a little more so that the rice takes all the water. It is this semi-cooked rice that we will use.

Finely chop the onion.

Grate carrots on a medium or fine grater.

Fry the onion in a hot pan. My mom always does it with butter. But if you are used to doing it on vegetable, it will turn out no worse. This moment is not important.

Add carrots, fry a little more with onions.

A little about minced meat. In order for the meat to retain the maximum useful properties, it should be defrosted as quickly as possible. Perfect option- use chilled meat, making minced meat out of it. But if the meat is from the freezer, defrost it in microwave oven. I prepare minced meat for future use, then I take out a portion, partially defrost it in the microwave, and then simply mix it with hot semi-finished rice. So the rice cools down and the meat thaws while we work on the onions and carrots.

Mix minced meat and rice.

Add onions with carrots and greens.

Add egg and spices.

Mix well.

To see if you've seasoned the meatballs well, heat up a frying pan and fry a small "cake". It will be ready very quickly, you can taste it and make changes if you put a little salt or spices.

Meatballs can be made in a pan and in the oven. I usually do two servings and two variations at the same time.

Prepare silicone molds and put rice-meat mass in them.

Food preparation

Although recipes vary in the amount and type of ingredients, it is important to adhere to a few basic principles of food preparation.

  • Meat and fish.

A one-year-old baby is not yet ready to chew coarse minced meat dishes. Veal, turkey should be passed through a meat grinder twice, and only when the child becomes confident with meatballs, you can grind the meat in one go.

Fish and chicken have a more delicate structure, they can not be ground a second time. Please note: it is recommended to use an auger meat grinder and not a blender that turns the product into a pâté.

If you plan to add rice to meatballs or cook it as a side dish, preference should be given to round-grain varieties that are well boiled. Long-grain rice is drier and tougher, it “glues” minced meat worse.

In addition, young children do not chew hard rice well and swallow it whole or refuse to eat it. An unchewed product is practically not absorbed by the body. Therefore, use round-grain rice and cook it with more water than it should be. standard recipe so that the product can be cooked a little longer than usual. If excess water remains in the saucepan, it is drained through a colander.

  • Vegetables.

You can add carrots to minced meat, cauliflower, or other vegetables. They make the dish more tender and juicy, and also more useful due to the presence of vegetable fiber and vitamins.

Please note: for cooking meatballs, use only those vegetables to which the baby's body is already adapted, and they are guaranteed not to provoke an allergic reaction.

Vegetables with a delicate structure are chopped with a sharp knife, peeled carrots can also be finely chopped or grated on a fine or medium grater. You should not use a blender, because your task is to teach your baby to chew pieces of food. When cooking for children up to a year and a half, carrots and onions for meatballs can be ground in a meat grinder along with minced meat - they will be crushed into small pieces.

  • A raw egg.

A standard ingredient that “glues” chopped products together, preventing meatballs from falling apart during cooking. If the child is allergic to egg white, add only the yolk or replace the egg with a small amount raw potatoes, grated on a fine grater.

  • Salt, spices.

A minimum of salt is added to children's dishes. Spices are best avoided as they can cause allergies. Spicy spices are contraindicated for a delicate children's stomach. If you want to add piquancy to meatballs, add chopped parsley to the minced meat or - they are hypoallergenic and useful for the children's body, as they have a beneficial effect on digestion.

Cooking features

Minced meat is mixed with chopped vegetables, rice (depending on the recipe). Balls the size of a small walnut are made from it by hand. So that the minced meat does not stick to your hands, grease them with vegetable oil.

Regular portion meat dish for a baby 1-2 years old is about 100 grams. If you are preparing a dish only for a baby, “unclaimed” meatballs can be frozen for future use by wrapping cling film or foil, or placed in an airtight container to freeze.

  • Double boiler.

In this case, the dish is prepared on its own, without gravy. Steamed meatballs can be supplemented with sour cream or vegetable sauce prepared separately.

  • Microwave.

A little water is added to a glass saucepan with a lid - you get a variant of a steam meat and vegetable cutlet. Sauce can be used instead of water.

  • Oven.

So that the meatballs do not dry out in the oven, do not become tough, it is advisable to cook them in sauce, choosing the right recipes.

  • Multicooker.

Allows you to cook meatballs like in a double boiler, if there is a corresponding function. In a slow cooker without a steaming option, balls of minced meat, rice and vegetables can be stewed in sauce.

Basic Recipes

Veal meatballs

  • finely chopped minced meat - 300 g;
  • boiled rice - 3/4 cup;
  • 1 medium carrot;
  • bulb of medium size;
  • 1 raw egg;
  • salt and finely chopped fresh dill - to taste.

The balls are formed from a mixture of crushed ingredients and steamed for 40-45 minutes.

Fish meatballs for children

  • fillet of white fish (cod, etc.) - 300 g;
  • rice boiled until tender - 6-7 tablespoons;
  • 1 raw egg;
  • the bulb is small;
  • flour - 2 tbsp;
  • salt, fresh dill to taste.

From fish fillet and minced onions, add the rest of the ingredients. Steam for 20-25 minutes. If the child is older than two years old, meatballs can be baked in the oven without sauce (putting on parchment paper), but if they are overexposed, they will become harsh.

Chicken meatballs for children

  • minced chicken - 500 g;
  • 1 medium sized carrot;
  • 1 small onion;
  • 2 tbsp. l semolina;
  • 25 g butter;
  • 1 tbsp flour;
  • 1 glass of milk;
  • 1 raw egg;
  • salt to taste;

Minced meat is mixed with chopped onions and carrots, raw eggs, semolina. Meatballs are formed from the resulting mass. Melt butter in a saucepan, add milk, add flour and simmer, stirring, until thickened.

Put the meatballs in a baking dish (with a lid), pour over the sauce, sprinkle with a small amount grated cheese. Bake covered in the oven for about 35 minutes until done. By this recipe you can also cook turkey meatballs for children.

Meatballs with gravy for children can be prepared from any minced meat (fish, poultry, lean meat).

For gravy you need:

  • 1.5 cups of boiling water;
  • 1 tbsp flour;
  • 1 tbsp low-fat sour cream;
  • 1 tsp tomato paste;
  • lavrushka, salt to taste.

Boiling water is poured into the saucepan, the rest of the ingredients are added, everything is thoroughly mixed. Dip the meatballs lightly fried in vegetable oil into the gravy and bring the dish to readiness.

You don't have to follow the recipe exactly, because cooking is creativity. If for the first time it makes sense to keep the proportions and use the prescribed set of ingredients, then in the future you can safely introduce the vegetables that your baby prefers or vice versa, the foods that you want to accustom the child to.
