Grandma's pies with cranberries. Step by step recipe with photo

Ilya Nikolaevich loves cranberries, so I decided to treat him to pies with her. I really wanted to cook according to a different recipe, but when surfing on Western blogs I saw this miracle. Highly delicious dough, shortbread, but in the end it turns out like a puff, the filling is rich and bright, so I advise. In addition, you can use both fresh and frozen berries. The recipe is simple and easy, but there are a few points that I will explain, they will be useful to novice cooks.

For about 16 pies, if you have a 7.5 cm mold:

Dough:

  • 400 gr flour
  • 2 tsp Sahara
  • 230 gr butter, very cold
  • 1/2 tsp salt
  • 1/2 cup cold water

Filling:

  • 0.5 l cranberries (fresh or frozen)
  • 1/2 cup sugar (with this amount you get sweet and sour taste the filling is even rather sour, I would advise you to take more sugar or add honey to taste)
  • 2 small apples
  • 2 tsp orange peel, finely grated

For lubrication:

  • 1 egg
  • 1 tbsp water
    Shake the egg with water, but not strongly.

For sprinkling

  • sugar, it is desirable that it be large crystals

The dough for these pies can be made in two ways.
1) Place all ingredients except water in the bowl of a food processor or mixer, mix for 30 seconds to make fine crumbs. Then add water and knead the dough.

2) I do not have a food processor, so I made the dough by hand, especially since it is very simple and fast.

In a bowl mix flour, sugar and salt. And we begin to grate the butter on a coarse grater in several passes, after each run, mix the butter with the flour mixture, rubbing a little. After grinding the mass with handles to the state of crumbs. This must be done quickly so that the butter does not start to melt.

Add 1/4 cup cold water, start kneading the dough. Add the rest of the water and knead the dough. But you don’t need to crush it much, collect it into a ball and that’s it. If the dough does not gather into a ball and crumbles, add another 2 tbsp. water. Wrap the dough in cling film and refrigerate for at least 30 minutes.

For filling Put the cranberries in a saucepan and put it on the stove over medium heat. When the berry starts to crackle (sounds like small pops appear), add sugar and zest. cook over medium heat, stirring, for about 15 minutes, until thick.

I cooked cranberries to the state, as in the photo, so that the mass was thick enough. Remove the skin and seeds from the apples. cut into small pieces and add to the cranberries, mix.

Roll out the dough on a floured surface to a thickness of 1.5-2 mm. Use cookie cutters to cut out an even number of circles, two per pie.

Place slices on a lined baking sheet parchment paper. Brush them with the egg mixture around the edge so that there is enough space in the center for the filling.

In those circles that I will make 4 small cuts in the center from above, do not be too zealous, otherwise the whole filling will flow out.

Put the filling, but a little, cover with mugs on top and press quite a bit.
Important! it is enough just to slightly press the mugs together, otherwise you will get pies like mine, similar to flying saucers.

Brush patties with egg mixture and sprinkle with sugar.

Put the pies in the oven, preheated to 210 degrees. Bake 15 minutes until golden brown. if you still get such “flying saucers”, then before sending them to the oven, carefully press the edges with a fork, as for chebureks, then they will be more beautiful. Unfortunately, I remembered this too late.

In theory, the pies should look something like the one below in the photo. These are small pies that I did not press hard. More cute and one bite.

To prepare it, you need to take:

  • 90 g soft butter;
  • 40 g of powdered sugar;
  • 3 eggs (one of them in the dough);
  • 3 g salt;
  • 5 g lemon zest;
  • 200 g flour;
  • 200 g sour cream;
  • 200 g cranberries;
  • 100 g sugar (including 5 g vanilla);
  • 30 g starch.

Pie recipe step by step:

  1. Grind butter with powdered sugar, add salt, egg, zest and flour. From the resulting dough form a ball, which is put in the cold for half an hour.
  2. Line a baking dish with dough, place a load on top (for example, beans or peas) and bake for 10 - 15 minutes at 180 degrees.
  3. Then remove the load, lay the berries in an even layer on the bottom and pour them with cream of sour cream, whipped with sugar, eggs and starch. Now the cake should spend another 40 minutes in the oven until the sour cream thickens.

Shortcake with cranberries

Chopped shortbread dough(it is also false-layered) perfectly copes with the role of the basis for many berry pies.

For such a cranberry pie you need to take:

  • 300 g butter from the freezer;
  • 360 g of sugar (including 200 for the filling);
  • 2 eggs;
  • 1 yolk;
  • 3 g salt;
  • 300 g flour;
  • 500 - 600 g cranberries;
  • breadcrumbs.

Progress:

  1. Grate the butter directly into the sifted flour and quickly mix everything until crumbs are obtained. Beat eggs and yolk with sugar and salt until all crystals are dissolved. Pour the egg mixture into the flour crumbs and quickly gather the dough into a ball. Refrigerate for about an hour.
  2. Boil cranberries with sugar over medium heat until thickened. This can take 10-15 minutes on average.
  3. From the shortcrust pastry stabilized in the cold, form the base of the pie. Send it for 7 - 10 minutes in the oven with a working temperature of 180 degrees, after making several punctures with a fork. This will keep the dough from puffing up or bubbling.
  4. Add a little to the cranberry filling breadcrumbs to absorb excess moisture. Transfer the filling to a slightly golden base, level it and return to the oven for another 10-12 minutes.

From frozen berries

For its implementation, prepare:

  • 190 g butter;
  • 230 g granulated sugar(including 90 g for the filling);
  • 3 eggs;
  • 7 g baking powder;
  • 470 g flour;
  • 270 g cranberries;
  • 90 g raisins;
  • 75 ml of water;
  • 50 g starch.

Bakery products:

  1. Whisk the butter with the sugar, then add the eggs one at a time. After that, add flour, sifted with baking powder, in small parts, and knead a dense dough. Remove the base for 20 - 30 minutes in the cold.
  2. Put the washed raisins and frozen cranberries into a saucepan, cover with sugar and pour in water. Send the bowl to medium heat and cook until the liquid evaporates. Allow the filling to cool slightly, add starch to it and mix. If the recipe requires non-frozen cranberries, then it can be quickly made as such by pouring boiling water for a few minutes.
  3. Divide the dough in a ratio of 2:1. For the most part, form the base of the pie, which is filled with the filling, and the smaller part is grated over the filling through a grater.   • 200 ml of kefir;
  • 50 g of melted butter;

  4. From the dough, form a pie, rolling out a part on parchment into a circle, and making sides from two flagella twisted into a pigtail. Fill the base of the pie with the filling and decorate it on top with a lattice of pastry and grape berries.
  5. In the oven, the egg-buttered pie should spend about 20 to 30 minutes at 180 degrees.

Cooking in a multicooker

Easy to prepare and very beautiful in appearance, it turns out a pie with cranberries caramelized along with nuts and biscuit on sour cream.
