From March 7 to March 13, we celebrate Shrovetide, one of the most fun, bright and delicious holidays in a year. The holiday has a huge number of traditions and beliefs. Today, most people associate Shrovetide with a stormy and cheerful farewell to winter, in anticipation of warm and sunny spring weather. During the festive week, it is customary to visit each other for pancakes, invite loved ones and relatives to their festive gatherings. Round and ruddy pancakes symbolize the Sun, which melts the Earth with its rays, preparing for the awakening of nature after hibernation. According to legend, if it is good and fun to take Shrove Tuesday, then you will live the whole year in joy and happiness. Therefore, we will definitely participate in all the festive festivities, play, have fun, ride the slides, in other words, celebrate to the fullest! Happy Shrovetide my dear friends!

Pancakes with cinnamon

Ingredients

Sugar 2-3 tbsp
milk 1 l
flour 2 tbsp.
eggs 2 pcs.
cinnamon 1-2 tsp
salt
vegetable oil

Cooking

Prepare everything you need. The milk needs to be warmed up a bit.
Then pour the milk into the mixer bowl, pour out the flour, salt, add the eggs, granulated sugar, cinnamon. We combine all the products together and beat thoroughly with a mixer.
Heat the pan well, grease with oil. Next, pour a thin layer of pancake batter on it.
As soon as the pancake is browned on one side, turn it over with a spatula to the other side.
You can pour vegetable oil directly into the dough, then the pan will no longer have to be lubricated.

Put the finished pancakes on a flat plate and grease with butter and sprinkle with sugar on top.

Cheese pancakes

Such pancakes are thin, soft, with a pleasant cheese flavor and rich aroma.

For 0.5 liters of milk we need:

2 chicken eggs,
0.5 teaspoons of salt,
8 tbsp flour
sugar to taste (I have 1.5 tablespoons),
4 tablespoons of vegetable oil (I have sunflower),
100 gr. hard grated cheese,
dry yeast a little more than a tablespoon.

When kneading the dough, it is advisable to warm the milk a little, to a warm (not hot!) State, you can microwave oven. Then add salt, sugar, yeast. Stir everything until evenly dissolved. Then pour half of the prepared flour, stir again and let it rest for 30 minutes in a warm place so that the yeast starts to work.

After a while, a small foam will appear. Now it's time for the eggs. Separate the whites from the yolks. First we put the yolks and beat with a whisk, then comes the grated cheese, sunflower oil. Do not forget to stir everything step by step with a whisk. Now pour out the second part of the flour. Beat with a whisk until no lumps remain. Beat the whites and add the resulting foam to the dough, stirring gently.

Grease a hot frying pan with butter and bake on both sides, as regular pancakes.

Beet pancakes with herring and cream cheese

Beetroot pancakes go well with herring, so it is very important to make rolls out of them. Such pancakes look unusual and very colorful and of course please with their taste.

Ingredients

Boiled beets - 200 g;
.Milk - 300 ml;
.Ryazhenka - 150 ml;
.Egg - 1 pc;
.Sugar - 1 tablespoon;
.Salt - 1 tsp;
.Wheat flour - 300 g;
.Sunflower oil - 50 ml;
.Herring (fillet) - 300 g;
.Cream cheese - 400 g;

Grind boiled beets with a blender, add fermented baked milk, half of the milk, egg, salt and sugar. Beat well. Gradually add flour, stirring all the time and pour in the remaining milk. Mix the mass well - the dough is ready for frying.

Heat a frying pan, grease with oil and pour the dough into the center with a ladle. Since the dough is thick, immediately smooth it with the bottom of the ladle so that the pancakes turn out to be even and beautiful in shape.

Turn the pancake over and fry on the other side. So fry all the pancakes. I got 10 pieces.
Brush each pancake with cream cheese.
Lay the pieces of herring in a row slightly overlapping.

Wrap all the pancakes tightly and let them lie down for a while so that the filling sticks together well.

Ingredients

Milk - 300 ml;
.Eggs - 2 pcs;
.Wheat flour - 0.5 cups;
.Sugar - 2 tbsp. l.;
.Vegetable oil(+ for lubrication) - 4 tbsp. l.;
.Salt (a pinch);
.Banana - 2 pcs;
.Chocolate - 50 g;

Beat eggs with a whisk, add milk.
Then pour in vegetable oil and beat.

Add salt, sugar and sifted flour. Mix well and set aside for 20-30 minutes.
After a while, grease the pan with vegetable oil and pour the first pancake. Distribute the dough evenly.

Flip one side of the pancake and fry the other side.
Cut the banana lengthwise into 4 parts, put one part on the pancake and wrap. Thus wrap all the pancakes.

Yeast pancakes with semolina

Since it's coming to Maslenitsa, I propose to cook unusual yeast pancakes- with semolina! They turn out very tasty, lush and beautiful and can be served with any sweet stuffing, be it honey, condensed milk or jam.

Ingredients

Semolina - 1.5 stacks;
.Wheat flour - 1 stack;
.Milk - 500 ml;
.Water - 150 ml;
.Sugar - 3 tablespoons;
.Eggs - 2 pcs;
.Yeast - 1 tsp;
.Salt - 1 tsp;
.Vegetable oil (+ for frying) - 3 tbsp. l.;

Dissolve yeast in warm milk and add sugar, mix well. Leave for 15 minutes in a warm place until a foam cap appears on top. Add the eggs to the yeast mixture and beat with a whisk.

Separately, in a bowl, mix the sifted flour and semolina. Then add them to the liquid mass and mix well.
Add 3 tbsp here too. vegetable oil and warm water. Mix thoroughly until homogeneous mass.

Pull up the dough bowl cling film and put in a warm place for 1.5-2 hours, then mix the mass again and immediately fry the pancakes.

Heat the pan well and pour the dough into the center evenly distributing it at an angle. Holes will immediately appear on the surface.

.Chocolate - 80 g;
.Cocoa - 1 tablespoon;
.Vegetable oil - 3 tbsp. l.;

Break the chocolate bar and melt in a water bath, adding 50 ml of cold milk. When the chocolate becomes liquid, add cocoa, mix and pour in the mixture of milk and water. Mix everything well with a whisk. Remove the chocolate from the water bath and set aside.

Beat eggs with salt and sugar until tripled in volume. Pour warm liquid chocolate. Mix.
Sift the flour and carefully fold it into the dough, mixing it with a spatula. Pour in vegetable oil. Stir and let the dough stand for 5-6 minutes.

Milk - 125 ml;
.Sugar - 1 tbsp. l.;
.Salt - 1/3 tsp;
.Wheat flour - 140 g;
.Baking powder - 1 tsp;
.Egg - 1 pc.;

Whisk eggs with salt and sugar. Add milk and stir.

Gradually add flour and mix. The dough will be like medium thick sour cream.

Heat oil in a saucepan. Pour the dough into a bag or a pastry syringe and squeeze the dough in a spiral directly into the oil. The spirals will increase in size.

Fry on both sides and put on a napkin to remove excess oil.

Bake the pumpkin in the oven until the liquid evaporates and until soft. I do it in the season, then I put it in bags and there is a preparation of pumpkin puree all winter. Put in milk pumpkin puree, tomato paste, salt, sugar, mix thoroughly and fry pancakes over low heat. Bake the first side well, and the second quite a bit.

Prepare the filling. Rub the cottage cheese through a sieve, salt, add a pinch of paprika, squeeze the garlic through a press and season with mayonnaise. It is very little to add, only so that the cottage cheese does not crumble.

How to bake velvet pancakes?

We offer you a simple, proven recipe for making velvet pancakes - thin and incredibly tasty.

Mix three chicken eggs and three tablespoons Sahara. Add a pinch of salt. Beat the ingredients with a whisk. Once the eggs are mixed with sugar, add one glass of milk. In total, three glasses are used in this recipe, but it is advisable to pour milk in small portions so that it has time to disperse.

Pour one and a half cups of flour, sending it in the same small portions - add a spoonful, without ceasing to stir the dough. After that, send three tablespoons of vegetable oil to the dough and pour in the remaining two glasses of milk. Stir the dough until all the lumps have dispersed.

Three chicken eggs

Next, we heat the pan, send a small part of vegetable oil into it (no more than one teaspoon), distribute it over the entire bottom and, as soon as the oil heats up, pour out half a ladle of dough. Fry the pancake over medium heat, turn over and fry until cooked, then send to a wide dish. Thus, we spend all the available dough, stirring it with a whisk from time to time.
Ready thin pancakes you can wrap meat or sweet curd filling. Or you can just roll them into triangles and serve them with jam or red caviar.

Recipe for pancakes on kefir with boiling water

To prepare the dough you will need:

One glass of boiling water
one glass of kefir,
two chicken eggs
exactly one glass of flour,
a pinch of soda
half a teaspoon of salt and
two tablespoons of granulated sugar,
vegetable oil three tablespoons and
vanilla (optional, if you make pancakes with cottage cheese or any other sweet filling).

Cooking:

Fresh milk half a liter,
two glasses of flour

half a liter of kefir of any fat content,
