Products:
- pork 400 grams;
- pickled cucumbers 2 pcs.;
- red onion 1 pc.;
- mustard grains 2 tbsp. spoons;
- salt pepper;
- flour for breading.

Cooking:
Cut the meat into thin plates, cover with a film and beat well, salt and pepper. Cucumbers and red onion cut into strips. Put grain mustard, pieces of cucumbers and onions on each piece of meat.

Products:

- herring - 1 pc.;
- potatoes - 4 pcs.;
- carrot - 1 pc.;
- beets - 1 pc.;
- mayonnaise - 200 g;
- bow - 1 pc.;
- vinegar for pickling onions.

Cooking:
Pre-cut the onion arbitrarily and marinate in vinegar for 2-3 hours. But you can put raw, at your discretion.

Boil potatoes, carrots and beets, cool, peel and grate on a fine grater or cut into small cubes.

Peel the herring, separate from the bones, cut into small pieces.

Next, put the onion, if you pickled it, then you need to let it drain so that it is not too wet. And the last layer is herring. It is better to lay it not over the entire surface of the roll, but with a long log in the middle. We tamp all layers in the same way with the help of cling film.

Gently roll the roll around the herring log. We tamp the edges well. We wrap in the same film. We put the snack in the refrigerator, until the arrival of guests. Before serving, remove the film and cut into portions.

Products:
- 100-200 gr. ham or any boiled sausage;

chocolate truffles

Cooking:

In a small saucepan, combine the cream, cinnamon, and chili peppers. Heat over low heat and stir, bring to a boil. Add chocolate, broken into small pieces, and butter. Remove from heat and stir until all ingredients are combined into a homogeneous mass. If the mixture cools too quickly and the butter and chocolate do not have time to melt (for example, if you forgot to remove the butter from the refrigerator first to soften it), slightly heat the entire mixture over water bath. Then add cognac and stir until smooth. Cover with cling film and refrigerate for at least 4 hours to completely chill and firm up the mixture.

Pour cocoa powder into a small bowl. Using a scoop or a simple small spoon, scoop up the hardened chocolate mass and roll it into a ball. Truffles don't have to be perfectly round. The less perfect they are in form, the more they justify their name, because truffle mushrooms are just irregular in shape. Roll the truffles in cocoa powder and put on a dish or in a special paper mold. Serve immediately or refrigerate in a tightly sealed container. Chocolate truffles can be made up to a week before the holiday, or up to a month. AT ready-made they will wait in the freezer for their hour. So, in the pre-New Year's fuss, we simply choose a day when it would be nice to cheer up with work with sweet chocolate mass and prepare sweets.

December 30th

Bake chicken breast for salad and quickly mix the sauce. We remove the finished chicken fillet in the refrigerator, the sauce is sent there in a small jar with a tightly screwed lid. Raisins are soaked in cognac, rum or other strong alcohol. It will come in handy for the salad. In the evening we bake the fish, on a holiday we will only need to warm it up, and transfer the truffles from the freezer to the refrigerator. We also prepare a sauce for a cheese snack in advance, which we store up to X hour in the refrigerator.

Dec. 31

We walk, play snowballs and enjoy the upcoming holidays! Before we sit down at the table and spend 2013 with dignity, we quickly prepare a salad and a feta appetizer, season them with pre-prepared sauces. The fish can be heated in the oven under the grill. We pour champagne into glasses and smile at each other.

Cooking:

Wash potatoes and carrots thoroughly, boil in their skins until tender. Cool, peel and cut into small cubes. Peel the hard-boiled eggs and chop them the same way.

my fresh cucumber and finely cut together with pickled gherkins. Grind the apple, trout and red onion. Put the chopped ingredients in a salad bowl. Drizzle with mayonnaise and serve!

Salad with crab sticks and oranges

The salad is prepared as standard: boil the eggs, finely chop all the ingredients, crush the garlic, mix everything.

Hot:

FROM vinina baked with prunes

Cut a piece of pork so that you get a "book" - leaflets on the cover. The thickness of the “leaves” should be at least 1 cm. Make a mass for coating: mix mustard, mayonnaise, salt. Coat the piece of pork with mass on all sides, pouring a little between the “pages” .. Wrap in several layers of foil and marinate in the refrigerator (from 6 hours to 3 days).

Bake in the oven without removing from the foil at t=200°C for about 1 hour. Shortly before the end of baking, open the foil to get a golden crust.
In my oven, it took me 50 minutes to bake in foil, and then another 20 minutes with the foil open. I checked the degree of readiness with a long sharp knife: I pierced the pork in the thickest place. When the red-pink juice flowing from the puncture site became transparent, the pork, baked in a piece, was cooked.

Dessert:

biscuit roll with cherries and chocolate icing


Cooking:

Mix cherries with 2 tbsp. sugar, cognac or rum. Leave to infuse for a couple of hours.

For a biscuit, beat the eggs with 100 grams of sugar and vanilla sugar until the sugar is completely dissolved. Gently fold in the flour mixture with a spatula.

Put the dough on a baking sheet covered with baking paper with a layer of 0.5 cm. Bake for 10-15 minutes at 180, until dry sticks. Cool and soak with cherry juice.

Prepare cream. Beat sour cream with powdered sugar into a fluffy mass and apply on the cake in an even layer. Arrange cherries on top. and roll up.

Prepare frosting. To do this, melt chocolate, butter and honey in a water bath or microwave, mix thoroughly and pour over the roll. Place in the refrigerator for 1 hour.

What is a family New Year without Olivier? The number of recipes for this festive salad probably equals the number of families in the territory of the former Soviet Union. Let's try the fish option this year - this wonderful recipe is quite worthy of your attention. Two days before the holiday, boil potatoes, carrots and eggs for salad. Cool and put in the refrigerator. On the same day, we marinate pork for hot and prepare a dessert. To new year's eve the roll is properly soaked with cream.

Pork - 1.5 kg (shank, ham, tenderloin - the main thing is that it be a meat part)
Garlic - 3 cloves
Ketchup - 2-3 tablespoons (or tomato paste)
Yeast-free puff pastry - 1.5 kg.
Salmon - 300 gr (smoked)
Spinach - 800 gr (frozen)
Champignons - 300 gr
Butter - 60 gr
Curd cheese - 400 gr
Sour cream - 4 tablespoons
Horseradish - 2 tsp (rubbed)
Almonds - 4 tbsp. (in petals)
Eggs - 9 pcs.
Sesame - 1 tbsp
Hard cheese - 100 gr (grated)
Minced turkey - 600 gr
Mustard - 1 tbsp.
Crackers - 50 g (ground)
Cream - 1 tbsp.
Sweet green pepper - 150 gr
Salad - 200 gr (leaf)
Red onion - 2 pcs.
Cucumber - 5 pcs.
Orange juice - 60 grams (freshly squeezed)
Vinegar - 2 tbsp. (balsamic)
Vegetable oil - 5-6 tbsp. (or olive)

Snack:

Mille-feuille with salmon and spinach

Without defrosting, spread the dough layer on a baking sheet lined with baking paper. We send it to a cold oven, turn on the heat to 180 degrees and bake until browned (25-30 minutes). Defrost the spinach. If it is not chopped, finely chop.

Cut mushrooms into thin slices.

Melt the butter in a frying pan over medium heat, fry the spinach in it for two minutes.

Add mushrooms and cook until moisture is completely evaporated. Salt and pepper to taste. Cool completely.

Cottage cheese rubbed with horseradish and sour cream. Carefully separate the baked dough in layers (it crumbles, but it's not scary). You should get 4 layers. Moreover, the convex upper layer will be the base, and the lower flat layer will be the top.

Lubricate the bottom layer with half curd filling, lay out thin slices of smoked salmon.

Cover with a second layer. Top with spinach and mushrooms. On top of the third layer and again a layer of curd cheese(Set aside 2 tablespoons) and salmon. Cover with the remaining dough.

The resulting "cake" is tightly wrapped in a film and put in the refrigerator for at least 1 hour. Then we unfold, grease with the remaining cheese and horseradish, sprinkle with almond petals and cut into 4 cakes with a very sharp knife.

Cheese sticks from puff pastry


Cooking:

Preheat the oven to 220 gr. Line a baking sheet with baking paper.
Egg lightly beat with a fork or small whisk. Lubricate a sheet of puff pastry (previously thawed) with it. Then cut the dough into strips 1 cm thick.

Twist them into spirals and place them on the prepared baking sheet (oiled, lined with baking paper or silicone mat). Sprinkle with grated cheese and sesame seeds. Bake until golden brown for about 10 minutes. Let cool slightly before serving.

Salad with bell pepper, cucumber and cheese

Wash lettuce leaves, dry and tear with your hands. Everything else: cucumbers, cheese, peppers - cut into thin, short straws. bell pepper I like it green, it is in this salad. Its bitterness is in perfect harmony with cheese. We cut the onion into thin half rings. Hard cheese does not really want to be cut into strips, this is possible, but not important).

Next, make the salad dressing. To do this, mix-whisk the juice, vinegar, vegetable or olive oil, sugar and salt until the consistency of the emulsion. Dress the salad, sprinkle lightly with pepper (this is to taste) and serve immediately.

Hot:
Puff pastry roll with turkey

Wash spinach or chard leaves and blanch for a couple of minutes in boiling water. Take out and spread on a towel to blot excess water.

Minced turkey mixed with two raw eggs, ground breadcrumbs(I never use ready-made breadcrumbs, I always grind dry bread myself in a blender), mustard, salt and pepper well. In principle, you can add a little finely chopped and fried onion to the minced meat, if you want. Stir the mince thoroughly.

Line a baking sheet with baking parchment and lay a layer of ready-made, defrosted puff pastry. I usually transfer it from the freezer to the refrigerator in the evening and in the morning the dough is ready to go.
Put the minced meat on the dough in an even layer, stepping back from the edge by one centimeter. Top the mince with a layer of blanched spinach leaves (if using) and 4 hard-boiled, peeled eggs.

Shake one raw yolk with one tablespoon of cream. Brush the edges of the dough with a brush and roll up the roll. Pinch tightly and turn seam side down. Lubricate the entire roll with yolk and bake in an oven preheated to two hundred degrees for 25 minutes. If the top starts to brown too much, cover it with parchment paper. Cool the finished puff pastry roll a little, cut into pieces and serve.

Cooking:

Take the ice cream out of the freezer first and let it thaw. room temperature. You want it to be at least soft.

In the meantime, crush the cookies into small crumbs. All methods are good here. You can put it in a bag and roll it several times with a rolling pin. Or just grind in a blender. Add butter. Then combine it all with condensed milk. You should get a soft sticky mass that easily takes any shape.

And we begin to lay out this mass in a form covered with cling film. The edges of the film must necessarily hang down.

Try to spread the layer of cookies evenly, for this, use a smaller mold. "Tamp" the cookies to the maximum. Next, just whip the cream according to package instructions and combine them with melted ice cream. Also add chocolate syrup to the ice cream and mix everything again. Now you can safely pour the sweet mass into the bowl. Cover it with hanging ends and place in the freezer overnight. In the morning, gently pull the ends of the cling film and invert the cake onto a plate, then remove the cling film. Decorate as desired fresh berries or nuts.

The main secret of preparing a feast for a large number of people is that we do everything in double size. It is not necessary to force the table with thirty types of salads, it is enough to make two or three snacks, but in sufficient volume.
